I'm new at veganing and I'd like ideas and somewhere to record my meals... please let me know what vegan food is on the menu in your house tonight (or eating out too actually) I am really interested 😊

So tonight I am making veggie chilli out of sweet potato/courgette/peppers/carrot/baby corn/kidney beans etc served with guacamole and tortilla chips. I have homemade vegan brownies for dessert.

Don't think I will miss meat/dairy at all Grin

We had a curry with garlic, ginger, spices, onion, butternut squash, cauliflower, courgette, kale, broccoli, chick peas, tinned tomatoes, coconut cream (I grate in a pack of Barts Spices creamed coconut as it's 100% coconut with no nasties, unlike tinned coconut milk).

Mmm! It's delicious... I cook it in the Instant Pot, which is an electrical pressure cooker that lets you sauté, cook rice and grains (use as a rice cooker), cook beans from dried and also has a delay cooking / keep warm function. I found out about it from a few online forums and it has a huge following.

Best thing is (e.g. For this recipe) you just chuck in your onions and spices, sauté, then chick everything else in, put lid on and forget about it. 20 minutes later amazing curry!

Really crap day today, I went to a pub for my Mum's birthday and ordered the nut roast but when it came it was actually a kind of frittata with goat's cheese and some veg. I don't think it had ever seen a nut. It was only classified as v not vegan but I had thought it was the best option on the menu when I'd checked in advance. I bloody hate cheese and goat's cheese is the worst so it was a complete waste.

Then I got pressured into a pudding which obviously had a dairy aspect. We are not trying to be 100% rigid and making occasional allowances but I definitely didn't need the pud. Just felt really annoyed with myself.

I've got TK Eat like you give a fuck and also a party food TK book, (which I got for a song, second hand on Amazon).

Tonight I'm going to make that aubergine, chickpea and tomato river cottage thing one of you very kindly posted up thread! Going to have it with rosemary and garlic sautéed mushrooms and maybe some salad.

I had a weekend away and managed to eat mainly vegan, (though not completely - I'm not actually vegan, just working my way towards it).

I am thinking about also doing something called 'raw before 4'. Has anyone done this, or had any experience with a raw vegan diet? Is it horribly restrictive?

Thug kitchen Caesar salad for dinner here - really nice but next time I will add avocado and toasted nuts too.
Alpro hazelnut dessert from the fridge section too - tasted like Nutella blamange (in a good way Grin)

I'm possibly going out for dinner tonight. We have a Zizzi nearby, which does really nice (imho) vegan options, so will probably try there. I had their vegan margarita pizza last time and it was yummy. I ate the entire thing (it was pretty big). I'd like to say I'll choose a healthy salad this time, but we shall see!

fauxfox, I haven't tried that TK Caesar salad recipe yet. Does it involve a lot of ingredients? Will have to give it a go some day.

I also wanted to ask if anyone has any ideas for vegan Easter lunch alternatives and also any vegan Easter egg recommendations?

rockaby lil zoo has a dairy free from sainsbo.comes with large choc bar.its best in terms of volume of choc that's not totally vile

Black eye bean casserole with rice tonight here and a coconut milk and cocoa powder blancmange for kids pud with fresh berries

Hey folks! We're currently road tripping through Texas so I'm eating a lot of fried okra and a lot of chips Hmm

Tonight though we went to an Italian with some friends and all the side dishes were delicious veggies so I just ordered a bunch of them and had a delicious dinner of: green beans with mustard seeds, couscous with aubergine and sundries tomatoes, grilled asaparagus, and spinach sautéed in garlic. Frankly I was more pleased than having one of the massive pizzas everyone else had! AND they confirmed the amazing roasted garlic focaccia was vegan SCORE

back to tex mex food and basically eating my own body weight in guacamole and tortilla chips tomorrow

So tonight I'm just making it up as a go along with fingers crossed!

I've made guacamole and mild tomato salsa (thank you food processor) to go with fajitas. The fajita filling is black beans, courgette chopped into little chunks, and red chilli. All covered in cumin, paprika, oregano, peri peri salt and a bit of Hendersons relish.

If it looks good I'll post a pic!

Recipes from Meera Sodha "Made in India" (see website). Aubergine and cherry tomato curry (also added peas), chargrilled chilli, garlic and lime corn, spinach with garlic, salt and black pepper and lemon, rice, chappati, chutneys. Some of the recipes use butter/ghee but they are fine without.
