I'm new at veganing and I'd like ideas and somewhere to record my meals... please let me know what vegan food is on the menu in your house tonight (or eating out too actually) I am really interested 😊

So tonight I am making veggie chilli out of sweet potato/courgette/peppers/carrot/baby corn/kidney beans etc served with guacamole and tortilla chips. I have homemade vegan brownies for dessert.

Don't think I will miss meat/dairy at all Grin

Slight sidetrack but I making vegan pancakes for snack shortly.I first made shrive Tues and hit the spot big time!!
Tea tonight is going to be beany balls with rice and broccoli(and bit ketchup)

thanks re soya cream - is it a bit sweet though? I found that with Oatly.

The flavoured tofu - I hate cooking. I was pondering this and I'm a major budgeting person so I guess it's time I thought about relaxing the purse strings to tackle the "i hate cooking" thing....

Thug kitchen smokey maple tofu with salad for dinner here - I'll be interested to see how baked tofu turns out! Kids can have pizza. Meh.

I'm going on a trip and having a picnic on the train this evening. I had grand plans to make amazing things to take with me, but in fact, it's going to end up being a couple of avocados, a banana and an orange along with olives and whatever else I can find at the train station Blush! I've had a big lunch though, so should be fine hopefully and will have a snack when we get to our destination.

I had Veganomicon mac and cheese with smoked tofu (Taifun brand) last Sat and it was lush - even DH kept nibbling! So there's a place for marinated tofu I reckon.

My lunch today was a salad from Pret (had turmeric cauliflower!) followed by a doughnut and cake from a vegan bakery. OMG Blush

I'm not vegan but try to eat vegan once a week. At the moment I am loving this recipe for black bean tofu scramble from the Guardian. It is called a breakfast dish but we've had it for tea and it is a new favourite. I have substituted tinned pinto beans for the black beans too and that works just fine. Thought I'd share and hope it hasn't already been posted. Highly recommend it.

Thanks Edna! There's a similar recipe to that in the thug kitchen book that I have made but I think that you shared is a bit less involved so will certainly give it a try!

I have to say I put in more smoked paprika than they said (as I am slightly addicted to it) and possibly a bit more heat. But you'll know what you like.

That Thug book looks great - is it worth it?

I am.so excited, I bought the Vegan mozzarella and jus roll pizza bases today so when Dd is in bed were having pizza :) I might do one with and one without cheese. I've bunged an aubergine in the oven too to make baba ganoush with which I haven't tried before.

I've only had the soy cream in porridge so didn't notice sweetness but I would have said it didn't have a great deal of taste, more a nice creamy texture.

Went out for lunch today to Bill's bills-website.co.uk which only had one vegan option - aubergine & lentil dhal - but it was delicious.

I have to say I am surprised some places are only offering one vegan option. i've also been to places where there's one veggie option. I thought these things would improve, not get worse.

sorry if I missed it but where can I buy vegan mozzarella please?

We're having the other half of the aubergine sesame peanut curry I made last weekend from the freezer and I'm making baked onion bhajees to go with it - can't wait!

Has anyone tried vegan marshmallows? You can buy them at Holland & Barrett but I wondered if they toast like normal ones??

I bought the new tesco vegan mozzarella, it comes grated in a bag. I wasn't that impressed buy it but I may have put too much on, or cooked it too long or it could be down to the soggy pizza Base :(

Large salad of cold roasted sweet potatoes, peppers,mushrooms,squash and parsnips on bed salad leaves and roasted chickpeas for crunch in top on menu tonight,veg are radiating now so as get warm later I just have fish it out of fridge and assembleSmile
