I'm new at veganing and I'd like ideas and somewhere to record my meals... please let me know what vegan food is on the menu in your house tonight (or eating out too actually) I am really interested 😊

So tonight I am making veggie chilli out of sweet potato/courgette/peppers/carrot/baby corn/kidney beans etc served with guacamole and tortilla chips. I have homemade vegan brownies for dessert.

Don't think I will miss meat/dairy at all Grin

Lil zoo(my youngest) is dairy free.dd2 veggie so we. eat fair amount veggie/vegan food although ds has anemia and we can't get enough iron in to top him up without a little meat
Vegan cheese is my only complaint. Violife smells like vomit.....
Anyone tried making nut cheeses?
Dd2 obsessed roasted veg(and roasted chickpeas) cous cous (with sun dry tomatoes and basil added) and top whole lot with toasted seeds

You certainly can stillliving! I agree re: Violife - it is horrible! Much prefer the Sainsburys versions. I haven't tried the Tesco ones yet - hopefully this weekend Grin

Ooh I like a violife slice from time to time.
However I am disgusting and when I ate dairy I was partial to that highly processed burger cheese.

Tonight I'm making a vegan cobb salad type thing. I'm griddling aubergine for one row, then chickpeas, mushrooms fried with garlic and rosemary, avocado, courgette ribbons, diced pepper and cucumber.

Just looking back over my posts on here, I sound quite healthy, but you should see the big spoons of peanut butter and jam and dark chocolate I have at other times Blush!

That looks so good twenty - I had to postpone it so i'm doing it tonight instead...got home late and was too hungry to wait so did quorn vegan fishfinger sandwiches instead Grin They were nice too! I will buy again.

Just made this to eat over the next few days. It's bloody tasty. I used to make variations of this for dinners before I became vegan and we never used meat anyway and even my carnivore partner always loved it.

This time it's with rice and masses of veg and it's so bloody good.

That rice dish looks tasty mamma - do you eat that cold too?

Tonight's going to be more chickpeas I think, with tinned tomato and coconut milk I reckon. Maybe some spinach cooked in there too. I shop Sundays so it's always more cupboard item based meals for the latter half of the week - more fresh veg and salad type things Sunday - Wednesday!

Yes I eat it cold the next day. I'm funny with reheating rice and it tastes just as good cold so I don't risk it as I have a wimpy stomach.

Serves 5-6

Put 1 cup of rice on to boil
Fry a handful of cashews in oil
And add 2 crushed garlic gloves and an inch of heated ginger and either fresh chopped chilli of chilli flakes. I used about 1tbsp of chilli flakes and it's nice and hot.
Fry till the cashews are starting to colour.
Add 4 slices spring onions
Add 1/4 cup of soy sauce and then veg. I used a big bag of shredded cabbage, onion, carrot and sweet corn
Stir it all up and let the veg start to soften
Then add 1/2 cup or more of smooth peanut butter and stir it all together then add the rice.

tofu stir fry for me
has anyone bought the preflavoured tofu in Waitrose - there's basil and various others? Seems pricey.

I was thinking about making some kind of mushroom pastry with Jus Rol or similar but I was wondering, is there anything I can use to make the filling seem a bit creamy? Thanks.

Room for a small one?

I don't eat much meat- I just don't like the taste/texture. I eat a lot of cheese, but the vegan lifestyle appeals to me.

Where do you buy your big bags of nuts?

Goldfish - you can buy soya cream which you could use? I think it tastes quite nice! Or coconut cream which you can buy in blocks. I know you can make various creamy sauces with cashews - OP has done this recently but it's not something I've used.

WRT pre flavoured tofu I think it's a bit of a rip off personally. Much cheaper to marinate your own. There's some good marinades in thug kitchen I would really reccomend it.

I found some okra in the cupboard so tonight is chickpea and okra curry which is a recipe I've made up on the spot Grin

There is a smoked tofu that I like for toasted sandwiches - with vegan mayo, tomato and lettuce.

I ran out of inspiration last night so we just had those tubs of olives and sundried tomatos, artichokes, crudites and crusty bread for dinner. Delicious!
