I'm new at veganing and I'd like ideas and somewhere to record my meals... please let me know what vegan food is on the menu in your house tonight (or eating out too actually) I am really interested 😊

So tonight I am making veggie chilli out of sweet potato/courgette/peppers/carrot/baby corn/kidney beans etc served with guacamole and tortilla chips. I have homemade vegan brownies for dessert.

Don't think I will miss meat/dairy at all Grin

Aha thank you Alice, I thought of some kind of tart after seeing a recipe on a vegan recipe site which had puff pastry in the recipe. When I checked though it had butter in it must have been a different brand.
That would be perfect thank you.

One more question are the dairy free/vegan cheeses nice? I don't eat cheese so can't taste!

I don't like dairy free cheese personally. I would go without because as a new vegan there's a very good chance your BIL won't like them either!

He is so lovely and did say he would just have the veg and potatoes but I would feel awful, What kind of Easter lunch is that?!

I'm thinking of a roasted Mediterranean veg tart with some chilli, tomato and basil sauce on it so not too dry.

Tonight we're having butternut squash dhaal and for pudding we're having oreo brownies. Dh bought them for the last night of his writers group but 3 people didn't turn up and it would be a shame to waste them Grin

Shamoffour - I personally would do a nut roast, it goes really well with a roast dinner especially with veggie gravy... I haven't found many I like but this one is amazing, so easy to make and my meat eating friends always end up digging in! I once years ago for a very long term vegan did a cheesy broccoli and cauliflower wellington- I used dairy free cheese sauce mix (it came dry an you added soy milk from memory) I got from Holland and Barratt. It got a good review (or my guest may have been polite) but to my taste used to dairy cheese sauce it tasted a bit odd.

The sacla dairy free pesto is delicious.

I'm not vegan, but did veganuary this year and loved it! I have just started eating vegan during the week. I'd like to eventually be totally vegan. I see this as a stepping stone along the way.

Last night was chickpea and sweet potato curry with rice.

Tonight will be this (below) recipe for briam, maybe with some ciabatta, (if the one they stock in my local supermarket is vegan)!:

Twenty great will look at that, it would be lovely it might also be good for me as I love pesto but don't eat cheese.
Blue I did think about a nut roast but I have done that quite a few times (although it has been shop bought from m and sBlush) maybe I will try that recipe though it looks really good and my children are obsessed with nuts at the moment so would probably love it.
Alice it is I looked at in, I'm not sure which brand I looked at but it had butter in.

Tesco has a new range of vegan cheese out! They are made by Bute Foods who do really good cheese.

The have melting cheese, italian hard cheese, blue cheese, crumbly cheese with fruit, red Leicester and chilli cheese!

I've just ordered some in my big shop.

Tomato tart last night was lovely (and Jusroll puff is still vegan)

Tonight I am thinking of doing pasta with butternut squash sauce - looks a bit like mac and cheese from the recipe.

DCs are eating out because we are going swimming.

Last night I fried portobello mushroom, courgette, onion and yellow pepper in smidge of oil. Then added fajita seasoning. And had it on a white rice (couldn't be bothered to wait for brown to cook) and mashed avocado with lemon juice and salt and pepper on top. It was bloody amazing. I've always loved fajitas and this was better than the chicken and veg with sour cream in a wrap that I used to eat.

Tonight I am making katsu curry with aubergine breaded in cornflakes instead of chicken in panko, as I am gluten free too.

Please update as soon as you can on the cheese maxwell. I've never found one I like and pizza just isn't the same without cheese. I use nutritional yeast in other stuff as that oddly has a cheesy taste I think.

Tonight I'm having cannelloni bean stew with pesto and my student brought me chocolate and raspberry scones and lemon drizzle cake for my pudding. She owns a vegan cafe and regularly brings me treats Grin

Hello! Joining this thread as we've been "almost vegan" for a long time now and are stumbling at the final post - the goddamn cheese! Grin

I'm a big minimalist baker fan friends are coming tomorrow to cook proper southern US biscuits and gravy, which is the most non vegan food you can eat. So I've dug up her version and will cook my own alongside them!

Morning all- our tomato tarts were lovely. I used jus roll, smeared it with sacla dairy free basil pesto, sliced tomato and baked. So good.

mmmm........ DS loved it too, and this morning I am making him raspberry jam tarts for a nice little vegan breakfast. :)

i like this thread! made a soup from yellow split and green peas, onion, carrot, whole broccoli, mix of fresh thyme,mint,parsley,oregano. at the end added a bit nutritional yeast too. once cooked can add olive oil or coconut oil. i ate it with plenty of homemade rye sourdough bread.

Tonight kids are having soya mince spag bol from the freezer and DH and I are having Twenty's aubergine and chickpea River Cottage recipe with flat breads.
