I am so fed up with this constant, they need to speed up, they need to work faster, they are falling behind. Etc . These are home cooks, they haven’t been taught butchery skills, they haven’t been taught how to prep complicated seafood, how to temper chocolate, make fancy garnishes. They are doing their best, so give them some extra time, an extra hour of prep, maybe a commis to do some of the more complicated prep with them. It really spoils the enjoyment of watching these talented people learning new skills.
