May I say that, as a vegetarian, most of what the cooks produce is most unappetising to me. I'm here mainly for the skill and the drama (and the bants).

I am lucky. I've met Adam a few times now and he is not an arse at all, he just really cares about the food his diners receive. To deliver that level of food, you have to demand perfection.

JJ I loved him on the Professionals. I think it's hard for a chef to come across well in these rounds on the show. They're letting amateurs into their kitchens.

Agree. I have always assumed that the diners (apart from John and Greg) are all paying customers so the standard has to be as high as normal.

Ah! That would make a big difference.
I'd assumed that - because of the cameras bring there filming the diners - that they'd possibly been regular customers invited for a free/cheaper meal (and the chance to be on television, if that's something they'd like) or at least new customers offered the same and that the BBC would make up the difference in price for the inconvenience of the restaurant being filmed. And having to have Gregg there
I'm sure the chef in charge would still want the food to be as good as possible and it would be a very good (and cheap) commercial on national television for his standards and food. Hence he/she would still come over quite exacting.
