Marzipan - your comments in your final paragraph are spoon.
None of them had a hope in hell of producing an attractive and edible "landscape" (oh, puh-leeeze!) in the time available. Kim-Joy played to her strengths, which are impressive.
Sadly for Rahul, there will always be a HUGE proportion of viewers who feel that he shouldn't have won and that it was fixed. If it was me, that would totally take the gloss off my trophy (having said that, I don't think he's the Li'l Cutie that many people believe he is, and I suspect he's one of these who would knife his Granny if he thought he'd benefit from it).
Kim-Joy may not have won, but she's certainly going to sell a lot more books, cakes, cookery classes, whatever than Rahul, because people loved her personal style, her charm, and and her sugar craft, and also know a good, consistent baker when they see one.
Ruby may not have won, but she may well be scooped up by some TV channel because she is gorgeous, fun, quirky and personable and a joy to behold on TV (and I would think in Real Life).
Rahul may produce a book and be touted round a couple of signings, but his book will be remaindered and he will sink without trace. His recipes aren't anything you'd want to replicate (even the good ones) and I for one wouldn't want to see his sneery little face peering out of my TV every week.
Face it Channel 4 - Nadiya is a once in a millennia individual - talented, pretty, confident, charming and just an all round lovely person. To me, a large part of her attractiveness was the huge affection she obviously has for her family - husband, children, parents and siblings. It makes her such a "rounded" individual.
YOU WILL NEVER BE ABLE TO MANUFACTURE ANOTHER NADIYA!
