Do you think John's tastebuds are going? He seems to be mistaking heat for flavour. Did so in Mexico; the Mexicans were happy with the heat in the food but he wanted more.

there was a bit of a sous vide flurry at the start of the series but it seems to have died away. Thankfully.

Everything that's cooked sous vide looks pale and flobbery.

I went to a friend's for dinner and she cooked lamb sous vide with some peculiar contraption that wasn't a water bath, but looked like a stick blender that heated water, it was very weird and flabby yes
