Ingredients-: Choc. \Ginger cake
I and a half cup of gluten free or wheat free flour (I use Kamut or spelt)
Large tspoon of GF baking powder
3 tblsps. of almond butter
2 tblsp. molasses and 2 tablsp. maple syrup (or 4 of the one you like or have in the cupboard!)
4 tblsp. olive oil or what ever oil you like
Ground ginger\cinnamon cardamom whatever you like to taste (You need quite a bit to get a good flavour). Walnuts and or ginger pieces.
half a bar of very dark chocolate
Rice milk or almond milk
Method: Using a large cast iron saucepan on a very low temp. (I use a diffuser) put in spices, ginger pieces and nuts for a short time on their own then add the oil, almond butter, molasses and syrup, and choc. if you want it. Melt very gently hardly stirring. Remove from heat to cool. Don't let it get too cold then sieve in the flour and baking powder, if it gets too sticky add some of the milk and or water (this is a rich cake !). Put in an oiled non stick tart tin and bake at 180 in the mid. of the oven I don't use the fan.
Look at it after half n hour if it's coming away from the edges and is soft ish in the middle it's ready. If not leave in but stay by it!
Let it cool in the tin completely . Enjoy ! It improves with keeping a bit.
