Chocolate Spice Simnel Cake

It's essentially Dundee cake, but I add cocoa powder, melted chocolate, chocolate drops, chopped fresh ginger, dried ginger, cinnamon and clove. Half the mixture in a lined cake tin, then a thick layer of marzipan followed by the rest of the mixture. (No nuts on top.)

Bake, then cool in the tin.

I then brush the top with diluted jam and put a thin circle of marzipan on it. Then I brush that with diluted jam and decorate with more marzipan- grated, or sausages, or balls, whatever. Then comes the really fun bit: I get my little blowtorch out and caramelise the topping.

I usually make a chocolate cake version of a simnel cake with mini eggs on top, I don't like marzipan and a chocolate version gets eaten up quicker.

Not sure if it counts as a twist but hot cross bun bread and butter pudding

Beeziekn33ze · 02/03/2018 12:31

If anyone's trying to diet over Easter keep plenty of hard boiled eggs in the fridge. They can be coloured the old fashioned way by being boiled with onion skins or drawn on with (non-toxic) pens. Hard boiled quail eggs are great, pretty in a dish, and fiddly to peel, so slow down nibbling! It works for me anyway!

Beeziekn33ze · 02/03/2018 12:33

Even slightly stale hotcross buns make gorgeous bread and butter pudding, especially with marmalade ...

Gazelda · 02/03/2018 12:57

I have no adventurous 'twisted' recipe, but I'm definitely going to give some of these a go! (But not the scotch egg/creme egg thing, soz!).

The only Easter twist I can think of is when I got married a few years ago, on Easter Saturday. We had big bowls full of various sized foil covered chocolate eggs as our table centrepieces. They disappeared very quickly!

baramewe · 02/03/2018 15:15

For some reason trifle has become a family Easter tradition. We do a layer of sponge fingers, topped with fruit like raspberries, strawberries etc, then custard then fresh whipped cream. On top we make a nest out of chocolate flakes and fill it with mini eggs, and put a couple mini chickens around!

limetree11 · 02/03/2018 15:52

roast leg of lamb with a blueberry glaze - unsweetened and added in the last stage of cooking.

CoffeeOrSleep · 02/03/2018 15:56

We have done bread and butter pudding with hot cross buns before, was a big hit!

YorkshireLurker · 02/03/2018 16:50

Toasty hot chocolate using hot milk (or cream) and melting my fave Easter egg choc into it. And stirring until it's all melty and thick.

Also works with vanilla ice cream and milk for a chocolate milkshake!

haikumad · 02/03/2018 17:18

I make boozy hot x buns with a slug of gin added to the wet mixture or by adding cointreau soaked raisins. Hic!

Mini egg cheesecake

Mel0Dram4 · 02/03/2018 18:49

We love scrambled eggs for breakfast. Easter calls for that little bit extra, so I give it a twist by adding different things. Cheese/mushrooms/salmon, just be inventive and add what you fancy. Try topping a bagel instead of the usual toast.

We also like making bread and butter pudding with hot cross buns!

mummymummums · 02/03/2018 21:52

We do variety on the Easter nests - mix raisins in with the cereal and chocolate, or use melted chocolate orange. Always put the mini eggs on top though.
I tried making brownies once with chopped up cadburys creme eggs following a recipe - was a disaster.

Easter party?Hmm
Easter is the most serious religious event in the Christian calendar. I find that odd.

Celebrate the coming of spring, certainly, but "Easter party"??? No

AVT5 · 03/03/2018 11:13

I make hot cross bun bread pudding..ummm

libra101 · 03/03/2018 14:55

A really easy Easter recipe we use is to buy meringue nests from Lidl. Whip up enough double cream to fill them. You could use ice-cream if they're going to be eaten straightaway. Make chocolate curls by using a potato peeler to scrape off long curls from the flat long side of a chocolate block. Add to the whipped cream, also add mini eggs, and sprinkle with caster sugar. They taste really delicious, are so easy to make, and look quite professional.

SandysMam · 03/03/2018 16:04

I love to do curried lamb, big leg rubbed in spices and roasted then served with all the curry trimmings, veg rice, Nan bread, chutney. A lovely alternative to the traditional.

whataconundrum · 03/03/2018 16:27

We make shredded wheat chocolate cakes with mini eggs to look like birds nests

IndianaMoleWoman · 03/03/2018 21:45

Slice a few hot cross buns vertically. Toast lightly then spread with jam to create mini hot cross bun toast slices as a sweet breakfast canapé treat pre-egg hunting. Simple but delicious!

MayMummy · 03/03/2018 22:10

PinkLady: is that the Waitrose one?

Stickladilove · 04/03/2018 07:02

Roast leg of lamb with spices like garam masala and yogurt, served with mix veggies and crisp salad.

Wolfcub · 04/03/2018 12:57

We’ve been making American Resurrection rolls - croissant dough, cover with melted butter cinnamon and sugar, put a marshmallow in the middle and roll the dough around the marshmallow so it’s well sealed in. Bake according to the croissant dough instructions

1moreRep · 04/03/2018 18:02

hotcross bun bread and butter pudding or hotcrossbun blitzed and mixed into ice cream
