Roast chicken with rice and peas on Sundays.

BBQ oven baked chicken... I make my own bbq sauce. Remove the back bone from the chicken... rub with spice and herb mix along with fresh seasoning... cover with foil bake in oven for 1:20 mins at 180c... remove after 40 mins apply bbq sauce put back uncovered. Very yummy!

Homemade flat breads with koftas either lamp or beef. With tomato cucumber salad and steamed green beans. And tzatziki. Tonight's dinner Grin

We do a Korean chicken, with boneless chicken thighs... rice and Korean style courgettes.

Lasagna... husband makes a white sauce and usually filled lentils chick peas vegetables and other leftovers.

Homemade fish and chips or pizza every Friday. Husband makeS Gordon Ramsay style peas... batter made with soda water and oven chips.

If it's pizza we make our own dough... as the premise crusts we've tried are vile. Jamie Oliver pizza dough recipe...45 minute proof... make our own pizza sauce and add cheese and toppings... DD loves pizza as she can help with it all.

Another that goes down well is Mexican night as it's very finger friendly. Guacamole homemade... tomato and corn salsa with garlic red onion lime and coriander also black bean salad. We make our own wraps!

Curries and stir fries also go down well! We also do burgers... veg or meat, we alternate husband also does homemade baps (paul Hollywood recipe)... they're fantastic!

Fortunately no pick eaters here.... but nut allergies.

My daughter & I love anything with pasta as its base, so easy and a favourite with any kid, good value too. We tend to add a tomato and basil sauce, I can spice mine up once served with dried or fresh chilli. Tomato pasta with sausage, tuna pasta, hotdog pasta, pasta with bacon or salami....and very easy to sneak in veggies...sweetcorn, pepper, carrot, peas...one pot cooking with fewer pots too. I tend to chill any left overs for an easy next day lunch for myself.

maclinks · 11/01/2018 18:56

Staples are a bolognaise sauce with pasta, one a month make a large pot then freeze 3 other portions for the two month of meals.
We love salmon fillet painted with curry paste and lemon juice, pan fried served with basmati rice that I cook with turmeric. A good old fashioned roast... Yorkshires served whatever the meat. Carrot and coriander soup with my quick focaccia bread. and a lamb tomato spinach curry with homemade nan. The roast and the pasta dish are the only fortnightly hits most dishes rotate around and only repeat once a month. I am quite a handy cook and invent and modify dishes as I go along.

Meatballs ( if I can get cheap fresh burgers I form them from these and cook in the oven ) brown rice, homemade spicy tomato sauce and green veg medley. We have it about once a week, we had tonight, it aways goes down a treat.

kateandme · 11/01/2018 19:34

lasagne.
frankfurter dolmio pasta
tuna splodge(condensed tom soup, pasta.tin of tuna)
chilli
spag bol.
chillie salmon

Spirael · 11/01/2018 19:35

Tends to be either pasta with either tomato/pesto/cheese/chilli sauce, or a paneer based curry.

DonkeyPunch88 · 11/01/2018 20:12

Can of drained chickpeas
Can of tomatoes
Handful of spinach/kale
Chopped chorizo

Bring to boil and simmer for 10 mins. Serve with crusty bread. The kids love it (surprisingly as they can be pretty fussy). It's a proper warming winter dish too. It only takes 15 mins to prepare and make, I love the fact that you just shove everything in a saucepan and then it gives me a few mins to faff about and sort lunches etc Smile

Salmon pasta - heat oven, add olive oil to an ovenproof dish and add chopped onion and any available veg e.g peppers, leeks, mushrooms. After about 25 mins or when browned add 2 salmon fillets boned and cubed. Cook some spaghetti and mix into the baked salmon and veg. Chuck in some grated parmesan and seasoning.

We live on this dish as its cheap, easy and a great way to get the kids to eat fish!!

Laksaish. Based on Singapore Laksa, I use a good stock, add frozen veg (beans, sweet corn) left over cooked chicken, ginger, garlic, a handful of prawns and a couple of spoons of coconut milk powder. Add dried noodles of some kind. Coriander or spring onion leaves to finish. Loads of variations on this. Takes about 10 mins start to finish, and is healthy and nutritious comfort food.

EvilCleverDog · 11/01/2018 21:06

Lentil and bacon stew. I always make this if we’ve had a gammon joint using the leftovers. Quantities vary depending on how much I want to make.

Leftover gammon (or pack of smoky bacon)
Red lentils
onion
celery
carrots
Tin of tomatoes
Garlic
Vegetable stock
Salt and pepper.

Peel and dice everything then chuck it in the slow cooker on low heat for 5-6 hours. Serve with buttered crusty bread.

Can be served chunky as a stew or blended as a soup.

Everyone in my household which is me, my husband and our 2 year old tend to like spaghetti bolognese, general pasta dishes, lasagne and any dish with chicken on it.
I haven't had to change any old recipes really. I have always made the above even when it was just me and my husband but my little one likes them as they are too so it just works for us. I am aware of things like the salt content, spicyness etc due to my little one so I tone all of that down, well actually I don't add salt to anything I am going to give to her.
I dish up one of the above dishes mainly that everyone likes by making a big batch, then we might have some more for lunch the next day or I will freeze any remaining.
I will usually serve up the with above dishes items such as garlic bread, salad or a few chips.
A nice cheese and tomato pasta is a quick go to meal that I know is fast and will be eaten!

needtogiveitablow · 11/01/2018 21:17

Burger in a bowl - it’s our favourite comfort meal that takes very little effort. Fry off some mince and chopped onion with an oxo cube and seasoning and use this to top either potato wedges, fries or salad if you’re feeling healthy. I then add a small amount of grated cheese and gherkins and usually add mustard and ketchup to the top. If you ditch the cheese and just have the mince and salad it’s actually a fairly low fat meal (provided you use 5% fat mince) but it’s really tasty and hits the spot if you want something that tastes naughty!

emmav6 · 11/01/2018 21:20

Slow cooked lobby - great for using up leftovers from a roast :)
1-2 medium onions
4 large carrots
1 small swede
6 new potatoes
400-500g beef
Bouquet garni - a couple of sprigs of thyme and parsley plus 2 bay leaves
1/4 tsp. ground allspice
Instant gravy granules
Worchester sauce
Salt and pepper
Cold water
All slow cooked together for 6-8 hours and served with fresh warm crusty bread!

NewMama12 · 11/01/2018 21:23

Husband and I have a 6 month old baby and have just started weaning. Before now favourites have been homemade curry, chilli, fajitas and stir fry...we like spicy food in this house!

Trying to start thinking of meals I can do for all of us from in a few weeks time - thinking bolognese, macaroni cheese, fish pie and shepherds pie will be staples. Will cook without salt and just as afterwards for my husband and I.

Anj123 · 11/01/2018 21:51

I regularly cook salmon in greaseproof paper parcels with soy sauce and honey (and green leafy vegetables if I have them) in the microwave. I serve it with sliced potatoes and whatever vegetables I have in the fridge. Very easy, healthy and delicious. My daughter loves to eat hers served in the parcel.

chibsortig · 11/01/2018 22:07

Cottage pie is one of our family staples as i can get a good serving of vegetables in each portion. I add carrots, peas and onions to beef mince and stock. Then top with mashed potatoes which is either a mix of potato and sweet potatoes or swede and potato mash.

Then theres Turkey cobbler. turkey mince dry fried with onions, chicken, thyme and garlic stock pot, a cup of frozen carrots pop in the oven top with dumplings.

InvisibleToEveryone · 11/01/2018 22:19

Kids favourite is cauliflower/macaroni cheese combo with bacon.

My favourite is DH chicken, leek and bacon pie, yum.

Lamb stew in the slow cooker with dumplings.

RichardOfYorkGaveBattleInVain · 11/01/2018 23:18

Peppered mackerel stir-fry (sounds weird but it works):

Stir-fry veg mix, peppered smoked mackerel, and any reasonably full-flavoured stir-fry sauce (so it doesn't get drowned out by the mackerel). Teriyaki or gingery ones work well for example. Serve with rice or noodles. It's very quick, and gets both veg and oily fish into them!

Skinandbones · 12/01/2018 00:04

Ok, there are a few, jambalaya a one pot meal and hardly any washing up, always a good thing. My minestrone soup with gnooch thrown in or just with garlic bread. Lasagna, my son's favourite. Desert, rice pudding made with milk and coconut cream. An upside down ginger cake with tinned pears on the bottom, can eat it cold or microwave it and have it hot.

Mamma2010 · 12/01/2018 10:22

We are huge pasta lovers, we have a specific favourite which is:

Red onion
Mushroom
Sausage
Bacon
Cheese

We call it student special as I basically lived on this in uni and now my kids and husband love it :)

Simple yet delicious! (Very unfriendly to the waistline)

cathisherwood · 12/01/2018 12:07

sausage sandwiches and baked beans - an unchanged favourite for decades in our house

Didiusfalco · 12/01/2018 13:11

The only thing I can guarantee mine will eat every time is a roast dinner. Chicken is the particular favourite and has to have carrots, peas, roast potatoes and Yorkshire’s with it.

lolly2011 · 12/01/2018 13:20

For us its Lasagne, Spaghetti Bolognese and the old favourite roast dinner, my eldest will try / eat more the younger one is a bit harder to feed.

daniel1996 · 12/01/2018 17:27

at this time of year - anything in my slowcooker, shin beef, lamb chops, braising steak and mince, so we have hearty stews, just roughly chopping loads of carrots, swede and onions, a stock cube tomato puree some herbs and meat, after 7 hours it is melt in the mouth - especially for little chewers. I am confident they are getting their 5 a day. A kilo of mince slow cooked with chopped peppers onions and courgettes makes a great staple of pasta bolognaise, shepherds pie and lasagne all of which my children love, and again by adding lots of vegetables keeps them healthy, and not hungry.

OhThisbloodyComputer · 12/01/2018 18:28

As a kid I had a terrible diet. I was from a one parent family, so got my own food.

We always had plenty of frozen chips and burgers in the fridge.

So I was always deep frying vast quantities of chips (once you've heated all that cooking oil up, it's a shame to just use it just once, after all).

It got worse. I used to like tubs of Ice Cream from Bejam, which I'd mixed up with evaporated milk, then stir until it was semi melted.

God knows how many calories were in that!

These days I've seen the light, so I try to eat plenty of fresh fruit and vegetables.

The good thing about Aldi is that its really affordable and not that far from home, so I can pop in regularly.

I'm afraid I don't have any sophisticated recipes. Avocado on toast is nice. Like getting into a warm bath. Much more healthy that my youthful diet.

Also, cut an avocado in half. Take out the stone. Get a sharp knife and create multiple cuts in the avocado flesh. Pour in some balsamic vinegar, so it gets worked into the grooves. Now bung in loads of mayonaise.

Mash it all up. Now you can eat it out of the skin.

Glorious.

Serve with a slice of Presciutto ham. (Sometimes Aldi sells these giant joints of ham. When they do, snap them up! They are glorious)

Yes, I realise my recipes are a bit simplistic.

But at least I'm not eating burgers and chips followed by cream in evaporated milk. (What was I thinking! It takes years to get rid of that flab!)
