Homemade lasagne with wedges and salad here...I also make a lot of "fakeaways". Tonight we are having Chinese - pork chow mien with egg fried rice, prawn crackers and spring rolls. Our favourite dishes but without the price tag. I also do fake KFC, fish and chips etc all made from scratch.

I do have "fend for yourself" nights though - DH and DC have pizzas and I have an omelette!

"I like your meatballs"
The only positive thing ds (15) has ever come out with about my cooking. Hmm
Lidl beef meatballs dry fry while cooking tomato sauce (chopped toms, purse, onion, garlic, Italian herbs and tsp sugar) We have with pasta, grated cheddar on top and garlic bread. A real go-to. We usually have once a week.

If in doubt, we have 'pot luck pasta'. A big bowl of pasta with anything else we can find in the fridge and/or cupboard. Tomatoes, cucumber, olives, cheese, bacon, sausage, tuna, sweetcorn, cook chicken, mayo, soft cheese, chutney, whatever.
It always goes down well, uses up leftovers, and it's super quick.

Roast chicken legs and veg

Just rub some salt and Cajun spice into some chicken legs, roast for 90 minutes (that long? Yes really) so the skin is all crispy and the meat falls off the bones

Service with rice and a tin of sweetcorn mixed in, and a nice big salad or coleslaw

Ticks all the boxes, and so easy to make!

Lasagne: an American recipe of my mum's which uses cottage cheese (or ricotta) mixed with a beaten egg, mozzarella and Parmesan rather than a Bechamel sauce. Have adapted it to be low carb for me by substituting thinly sliced (on the diagonal) courgettes for the pasta lasagne sheets.

Chicken (free range from Lidl of course Wink) roasted in my old Habitat chicken brick.

Two that come quickly to mind.

The absolute family favourite here is Star Wars Stew - a recipe from Blue Peter in the 70s! It’s basically a sausage hot pot: sausages, potatoes, carrots, tinned tomatoes, sweet corn, baked beans, Worcestershire sauce and herbs. Absolutely gorgeous, although not Masterchef worthy!

Other staples are:
Lentil curry
Chicken curry
Lasagne
Enchiladas
Veggie stir fry
Tacos
Pasta bake
Baked potatoes
Egg fried rice

Spaghetti Bolognese Plus (as I call it)
Made in the usual way, but to supplement the meat and tomatoes, I also add (amounts vary depending on what's available): soya mince, lentils, grated courgettes, carrots, peppers and loads of tomatoes.
Made in large amounts to make: lasagne, spag bol and shepherd's pie. Ready meals for the freezer!

Macaroni cheese but made with chicken stock instead of milk and a teaspoon of mustard
Mexican bake - beans peppers and onion fried with fajita spices and some chopped chorizo, layered between tortillas like a lasagne and topped with crepe fraiche and cheese before baking
Toad in the hole with stuffing in the toad too - makes a small pack of sausages more filling
Chicken or fish pie using crepe fraiche instead of a roux based sauce - quicker and one less pan to wash

Paprika pork always goes down well chez Hanna with all the family.

I fry "coins" of chorizo to release the oil, take them out and then brown cubes of pork tenderloin - then remove from the pan.

Then I add sliced onion and red peppers, soften then a tin (or 2 depending on how much I'm cooking - I generally use one tin per tenderloin and half a chorizo ring per tenderloin - so frankly usually batch cook to make 2 portions for 4 people could easily do 5 but DH works out and eats loads).

Season with salt and pepper, the add 2/3 tsp of hot paprika and 2 of smoked paprika. If I want it a bit more spicy I add a tsp of cayenne pepper (or some Tabasco). Basically just add to taste. Add the meat back in.

Simmer for 40 mins (or pop in the oven for an hour) or my my case pop in the pressure cooker for 20 mins. This recipe could also work with a slow cooker.

I serve with rice or couscous with a dollop of sour cream/creme fraiche on the top and another sprinkle of paprika and parsley (if I have any in).

Yummy Grin

Our favourite at the moment is spicy chicken tandoori- I just snip up chicken thigh fillets with scissors, mix into a mixture of Greek yoghurt and tandoori spices, until it's all covered then put in the fridge all day. Then bake in the oven at about 180 for half an hour (ish) until chicken is cooked through and all the yoghurt mixture has dried away. I added cauliflower and peppers today before baking and it was delicious. Kids had it with microwave rice and corn on the cob.

Our other staples are spag Bol, chicken wrapped in bacon, and homemade pizzas.

I make a tomato pasta sauce in bulk - one lot I add Philadelphia to for a creamy sauce, one lot I add basil too, and both those go with pasta. The third lot I cook chicken in, in the oven.
