The Brassica Growers Association are backing the Love Your Greens campaign and would love to hear your DCs favourite dishes which use a brassica vegetable, which includes: broccoli, kale, swede, Brussels sprouts, turnips, cauliflower, spring greens and cabbages [don’t worry, some of us here at MNHQ didn't know what they were either!]

Here’s what they say, “Greens are great and we want everyone to enjoy them as much as us! As well as tasting great, they’re really versatile and full of goodness. We can’t wait to see the delicious dishes you come up with – it’s time to inspire the nation to love their greens”

So, what’s your DCs favourite dish which includes one (or more!) of the brassica vegetables? Can you share the recipe with us? A vegetable curry perhaps? Maybe a delicious Spanish omelette? Or possibly just a classic bubble and squeak recipe which they particularly like? How about a fab coleslaw using your food processor? The Brassica Growers Association are hoping to launch a recipe book next year and are looking for some inspiration from Mumsnetters and their DCs so feel free to add whatever recipes you may have!

Everyone who posts on the thread will be entered into a prize draw to win a £300 Love2Shop voucher!

Standard Insight T&Cs apply.

Thanks and good luck

Cauliflower cheese

I'm afraid the only way i can get my kids to eat a lot of veg is in a green smoothie. For some reason they love them and find them fun because of the colours. Cabbage, Kale, strawberries and blueberries. Lovely, healthy and a good way to get kids to have something healthy thats also fun. You can mix it up with various fruit for sweetness but try and add blueberries as they are full of anti oxidants. You can also add spinach.

Dice chicken thighs, brown and set aside. Cook broccoli and cauliflower together until almost ready. Shred cabbage and blanch in steamer above the broccoli and set aside. Cook pasta until al dente and mix together with the veg and chicken. Add can of condensed mushroom or chicken soup with a can of milk (semi or full fat for creamier flavour) add some grated Parmesan into the sauce then mix some breadcrumbs with Parmesan and sprinkle on top, then bake for twenty mins. Yum! Can also add mushrooms and courgettes. Makes tons and can be frozen. Grin

Mine both love cauliflower and broccoli cheese

NerrSnerr · 20/07/2015 07:43

We love a vegetable curry. I make it in the slow cooker. The spicier the better.

Ranita · 20/07/2015 10:13

Broccoli done in the oven.A sprinkle of lemon zest, salt and pepper before it goes in then a squeeze of lemon juice and a grating of parmesan when it comes out. Both my boys will eat choose every time they are asked what veg they fancy with their tea.

Cauliflower florets placed in cupcake trays, sprinkled with a little grated cheese and bread crumbs - absolutely lovely! DD adores them, and they are often devoured before we get a chance to dish them up

Also curried cauliflower soup, wish fresh bread in winter so yummy (and you can even use frozen veg for it if you're feeling really lazy)

Ingredients
1 large head of cauliflower, broken into small florets, stems chopped
1 medium onion, diced
2 to 3 tablespoons curry powder – we use mild for DD and DS
1 small lemon, zested (about 1 teaspoon zest)
2 cups vegetable stock
1 can coconut milk
half teaspoon sugar
1 tablespoon white wine vinegar
sea salt and freshly ground black pepper
Olive oil for cooking (4 table spoons)

Instructions
Preheat oven to 400 degrees Fahrenheit. Toss the cauliflower with enough coconut oil to lightly coat it (about 3 tablespoons). Spread the cauliflower in a single layer on a large baking sheet and roast until the tips of the cauliflower are golden brown, about 25 to 30 minutes.
In a large, heavy-bottomed pot over medium heat, sweat the onion with 1 tablespoon oil and a dash of salt until translucent, about 3 minutes. Add the curry powder and lemon zest and stir. Raise the heat to medium-high, add ½ a cup of stock, and cook, stirring frequently, until most of the stock has evaporated.
Add all of the roasted cauliflower stems and half of the florets to the pot. Add the remaining stock, coconut milk and sugar. Cook, stirring occasionally, until the soup is warmed through. Remove from heat and stir in the vinegar. Use a blender to blend until smooth.
Add salt and pepper to taste. Top each bowl with some of the remaining cauliflower florets.

Got to be broccoli pasta. Penne or fusilli, cook broccoli in with it, drain. Use fork to break up broccoli, add cream cheese and either pesto or a teeny bit of crushed garlic. Delicious and tea on the table in 10 mins!

My two (3 and 6) were complete greenophobes until recently. We went on a trip to the garden centre in March where we all chose some seeds together, planted them as a family and they got involved in the watering and care. Now summer has arrived we have a cracking crop of brassica - Kale, purple sprouting and spring greens among others.

Now they'll eat all sorts of greens - wholewheat pasta with spring green ribbons, coconut-braised purple sprouting and especially crispy kale:

pre-heat oven to 180
shred a bunch of kale (de-stem if particularly large)
place kale in baking tray with glug of cold-pressed rapeseed oil and mix
bake for 10-15 mins until crispy

Lovely with fishcakes and a poached egg on top

cauli and broccoli cheese is a favourite

alsproject · 20/07/2015 18:16

Cauliflower and broccoli cheese seems to be a favourite in our household

CointreauVersial · 20/07/2015 18:20

Cut broccoli into small florets and parboil for 2-3 minutes. Drain well.

Then saute in sesame oil until cooked though, and add a good slosh of soy sauce.

missorinoco · 20/07/2015 19:55

Loads of ideas here. I will poach some.

We are quite dull. Broccoli is a favourite in our house, but just steamed, boiled or in stir fries.
I introduced it when they were weaned, and the fact tehy could hold onto the stalk to gum it has left them with a soft spot for it.

Cauliflower cheese is the work of the devil!

MissBEverdene · 20/07/2015 20:17

Mine love Bubble & Squeak cakes with spring greens or kale plus any other leftover veg. I always make extra mash when having a meal with it and the next night is Sausages and bubble & squeak Grin

clarem100 · 20/07/2015 20:39

cottage pie - a great way to get loads of vegetables in. Saying that, my dd steals veg from my plate so we have no problems with getting her to eat it

penny13610 · 20/07/2015 21:37

Purple sprouting with bread sauce. DTS1 has even learnt to cook proper bread sauce so they can have it when I am away.

LaceyLee · 20/07/2015 22:27

Broccoli roasted in the oven for about 20 mins but with rapeseed and sesame oil over it and sesame seeds if I have some.

BlackeyedSusan · 20/07/2015 22:52

I do a broccoli and cauli cheese with home made white sauce poured over lightly cooked veg, topped with mushrooms and cheese and occassionally breadcrumbs.

BlackeyedSusan · 20/07/2015 22:56

forgot to add that it goes in the oven until golden brown on top.. and delicious.

ds used to eat broccoli, cabbage and cauli raw in his school lunches. I think he was nobbled by someone saying yuk as he will not now.

we have tears and proper autistic melt downs over brussel sprouts. tears if there are not enough and a complete utter meltdown if there are no brussel sprouts at all.

BlackeyedSusan · 20/07/2015 22:59

we have broccoli and other veggies in white sauce with wholemeal pasta.

we have broccoli in stir fries with sesame oil.

we have broccoli and cauli and other veggies in red sauce. (chopped tomatoes and garlic)

twilightteaser1 · 21/07/2015 07:18

pixelwife · 21/07/2015 09:07

My son loves macaroni and cheese with broccoli trees as he calls it.

badgermum · 21/07/2015 10:40

kohlrabi fritters
Shred a kohlrabi and mix with an egg and a few tablespoons of flour or breadcrumbs. Heat oil or butter in a flat pan, drop on small mounds, and flatten slightly with the back of your spatula. Turn after a few minutes, and serve when both sides are crispy.
