Chicken is a really good starter meat chasing if you roast it to keep it from drying out and going chalky (not sure if that's a good word but anyway). Or you can casserole it. Something simple to try:
A quarter of an onion, chopped, fried. Add one or two chicken breasts, cubed, fry til just cooked through. I of course use butter but you can use oil. Add cubes of carrot, and/ or sweet potato, and/or some sweetcorn (canned and rinsed in a sieve) and /whatever other vegetable you fancy. Maybe some apple. Pour in hot water, either on its own or with a baby stock cube. Simmer for a good 20minutes to half an hour. Puree, or chop into tiny pieces and serve. The rest can be divided into portions and frozen.
Repeat with beef, lamb or whatever. Just don't add salt. Some pepper is fine though, as are herbs.
For finger foods it is easy to make chicken nuggets from scratch:
Chop chicken into strips. Lay out a bowl of flour, a bowl of whisked egg and a bowl of breadcrumbs (mixed with a little grated cheese if you like), and an oven sheet with greaseproof paper. Dip the chicken strips into the flour, then the egg, then the crumbs, onto the paper and into the preheated oven at 200 for about 25minutes.
You can do exactly the same thing with white fish such as cod too.
