I think some of it is AI these days. Transcription software often comes up with weird attempts at sentences.

Do you think the 'of' in the middle of 'Corn of Copia' is something to do with the fact that it means 'Horn of Plenty' and the writer knows there should be an 'of' in there somewhere?

Yes I always associate cornucopia with horn of plenty for some reason, its the first thing that came to mind when I read the OP!

TBF the development and transmission of languages wouldn’t have got very far if people didn’t copy words and phrases they’d heard but not read!
