Which is the tastiest Protestant traybake?

1000 replies

FiddleFaddleDingDong · 08/03/2019 17:35

NI Protestants are famed for their tray bakes but which is the best traybake of all?

I’m thinking something crunchy and chocolatey, a tiffin like thing. But are there unchocolatey traybakes that I just haven’t been exposed to? Are they keeping all the best recipes to themselves, strictly to be eaten behind closed doors?

And does it get a bit competitive? Does Annie cast aspersions on Doris’ traybaking abilities?

Think of it as, baking across the divide flowergrrl77.
The next Nobel Peace prize is surely going to this thread.

FiddleFaddleDingDong · 11/03/2019 15:54

@F1y1ng I am definitely going to try that recipe. 340g sugar and 400g of chocolate. No feckin' about with those bad boys! Grin

I am an atheist who was brought up CofE, so I'm not sure where I fit in to this but I make an excellent rocky road-type thing (no dried fruit or disgusting digestive biscuit bastard bits) and I have a recipe book of refrigerator cakes.

I'm also a lazy baker so I do love traybake-type cakes too. But things that don't require cooking are even better.

If I were religious though, I'd say dessicated coconut is the work of the devil. Like nail clippings.

MaidofEyes · 11/03/2019 16:08

oh, desiccated, not dessicated.

isabellerossignol · 11/03/2019 16:09

Maple syrup sounds very fancy for a PWA cookbook.

ChristmasSeacow · 11/03/2019 16:20

That looks awesome F1y1ng. Count me in this very weekend!

I have just seen that Ocado sells condensed milk in 1kg tins Shock. Think of the massive coffee mornibg fun you could have with that!

ChristmasSeacow · 11/03/2019 16:21

MaidofEyes if not fruit or biscuit what do you actually put in Rocky Road? Is it all marshmallow?

F1y1ng · 11/03/2019 16:31

I added that flourish myself as I accidentally lifted the wrong bottle out of the larder on one occasion and found the change to be very tasty 😋

MaidofEyes · 11/03/2019 16:48

@ChristmasSeacow - it's a fairly bastardised rocky road recipe that I adapted because I can't eat wheat and family aren't keen on the dried fruit element.

So I use lots of dark chocolate, marshmallows and I also add a tablespoon or so of oats and don't include the biscuits. Instead of 100g (or whatever of dried fruit) I use Maltesers, sometimes bits of fudge, crushed Crunchies, maybe choc M&Ms. I have used dried cherries in the past, that was quite nice and no-one seemed to notice them...

Dark chocolate also means they aren't too sweet. Well, relatively speaking.

ChristmasSeacow · 11/03/2019 17:01

Ah. Cherries are good. Much better than raisins.

Fudge also good. I reckon smushed up flapjack would also be good but I’ve never tried it.

We got to 764 posts until someone made a snide comment about N Ireland Protestants. That must be a record.

ConfusionIsNothingNew · 11/03/2019 20:37

Currently on Mat Leave and very willing to road trip around NI to sample/rate/photograph the traybake selections suggested!!

FlaviaAlbia · 11/03/2019 20:41

@F1y1ng they sound amazing! I'm pretty sure condensed milk and digestives will fall into my shopping basket tomorrow.

I'm going to be totally bereft when I stop feeding DS and have to go back to a normal calorie intake.

@SDTGisAnEvilWolefGenius in an attempt to help my waistline expand and arteries clog, did you manage to persuade your mum to part with her recipe? Grin

beanaseireann · 11/03/2019 20:43

My great aunt made a ( Catholic) traybake - it had shortcake base and apricot jam and a meringue topping scattered with chopped almonds. What is it called does anyone know. Sadly dgaunt is incapable now of telling me. Sad

Eve · 11/03/2019 20:45

@S1naidSucks. Where is that cafe?

I have a trip soon to the linen green, good selection of coffee shops and bakes to be had there!

FlaviaAlbia · 11/03/2019 20:54

beanaseireann I'm sorry about your great aunt Flowers I don't know of that one but I'd love to, it sounds lovely.

Happyspud · 11/03/2019 21:12

Ok, I’ve been withholding this. It’s a trendy traybake rather than a churchy home baked one.

The caramelitas at General Merchants Ormeau road.

TheLongRider · 11/03/2019 21:34

I've used pieces of broken meringue nest to give crunch to a nut-free Rocky Road traybake. It works really well.

PierreBezukov · 11/03/2019 21:48

What I've realised from reading this thread is that global chains have 'gone native' here - I mean both Costa and Starbucks sell half decent traybakes as well as croissants and all the other stuff.

Duggeeandthesquirrels · 11/03/2019 21:58

This thread is amazing. I need to steal my mum's old WI recipe book next time I visit home.
Malteaser buns, caramel squares, rice crispie squares with marshmallow and Highland toffee bars melted in. Cake

Someone mentioned top hats upthread and I had a flashback to kids birthday parties, which just continued when people mentioned mars bar and apple sandwiches! I remember them being quite nice, but it must be 30years since I last had one... Not sure I fancy trying them again Envy

EdtheBear · 11/03/2019 22:12

Highland Toffee where do you buy it?

Not seen it in years.

F1y1ng · 11/03/2019 22:14

My dh (from the south brought up Catholic) was amazed and disgusted when I described mars bar and apple sandwiches to him. They were the staple of Sunday school socials when I was growing up. I haven’t tried them in a long time - maybe it’s time for a revival.
