NI Protestants are famed for their tray bakes but which is the best traybake of all?

I’m thinking something crunchy and chocolatey, a tiffin like thing. But are there unchocolatey traybakes that I just haven’t been exposed to? Are they keeping all the best recipes to themselves, strictly to be eaten behind closed doors?

And does it get a bit competitive? Does Annie cast aspersions on Doris’ traybaking abilities?

Not a traybake and possibly not protestant but does anybody have a recipe for a NI snowball. Not the marshmallow type by the dry sponge with jam between and icing with coconut outside. It is my absolute favourite thing in the whole world and I would love to be able to make my own. I have had no luck over the years searching online for a recipe. My kids are now also addicts so I need a reliable supply.

My dad loved chocolate and used to keep a bar in his bedroom to eat every night before bed but lost all sense of taste after chemo yet loved Johnny's Favourites which had white chocolate. Miss him soo much 😢

Mars bar and apple sandwiches! I live in England now and occasionally make one of these. I made the mistake of taking one to work once. People near had me carted off to an asylum!

Love a good PTB (also shocked it didn't end up on the blackboard). Disclaimer - my parents actually do keep their toaster in a cupboard!!

Fifteens must be the most quintessentially Northern Irish, surely? My favourite is, however, a Malteser bun.

Having been at the in-laws for a wake house last week, I thought I had reached Peak Traybake Knowledge but this thread is amazing
(Mint aero slices or top hats for me. And I would love to know how marshmallow sales per capita compare in NI compared to the rest of the UK. Must be off the chart?)

NI DH wants me to start a ‘what’s the best coalition sandwich’ thread but I think we can all agree it would be mars bar and apple, so I won’t

Fifteens are a Scottish staple too. Our local shop sells them, really hope they’ve got some left by tomorrow or I’m going to have to make them 😂

I hadn’t heard of tray bakes being a Protestant thing. We were fed quite a few of the ones mentioned, despite not being northern Irish nor Protestant. I could just a go a piece of mars bar cake right now. With a big, thick layer of melted chocolate on top, complete with fork pattern for a fancy touch.

Has anyone ever had Chinese chews?
MIL used to make them. Or, equally bizarre (though not a traybake) - Belgian loaf? Belgian loaf is a very light current loaf cross madeira cake and it is divine! Only ever had it at home though, and there's nothing Belgian about it lol.

Just thought of something else that is a N Ireland classic, although not quite a traybake.

Cheesecakes. I have no idea why they are called cheesecakes because there is nothing cheese related about them. They are a little individual tart type thing with a layer of jam on the bottom and a layer of sponge cake. They're outstanding.

My Protestant NI granny, interestingly, didn't make any traybakes. She made soda bread, scones and apple tart though.

Thinking about it yes, Protestants really do love garden centres a lot, we discuss which ones to go to well in advance. creative Gardens owner is on to a good thing.

I never thought I would say this, but I have to send my (lapsed) Presbyterian mother this thread.
She does amazing millionaires, but even better mars bar cake, which I have now introduced to our PTA coffee mornings and am being genuinely accosted for the recipe!

OMG cheesecakes - why on earth were they called that!?
Chinese chews, truly my most hated traybake. My mother made them and loved them. I couldn't see the point as they didn't even have chocolate.

True Lady Gregory - going to garden centres is actually a middle class thing. I do like a garden centre, they're particularly fun at Christmas time with all the massive Christmas decorations.
