Hey!

Starting Keto from tomorrow. Wedding is in 7 months! I lost a bit of weight before Xmas, but in these last two weeks it's piled back on quite drastically :/ saw a photo of myself today and I looked like a balloon!

My cousin started keto in May 2023 and has lost over 2 stone. From 11st 4 to 9st! This gave me the kick up the butt to do this. I'm not only doing this for my wedding, as I genuinely want to feel slimmer but it'll be a bonus if I can lose a stone or 2 to fit nicely into my wedding dress. Currently - 12st 13lb (might as well call it 13st) mummy of two boys (3 and 2) so tough to lose baby weight!

I'm so new to it though and trying to educate myself on what I must do. I'm trying not to put too much pressure on myself though or fixate on numbers because that tends to freak me out and I give up.

Would love to meet anyone else on here who is thinking to do the same this year.

This is a really nice keto chili recipe. I tend to just use a little chili paste rather than fresh chilli and stick a big spoon of full fat cream cheese on the top.

Another regular I make is Chinese lemon chicken. I can't find my exact recipe on line and the chicken method on that one was awful anyway. The lemon sauce is easy enough though.

Some grated lemon rind in a pot, warm it through, add 2/3rds a cup of chicken stock and the equivalent of 2 tables spoons of sugar from your sweetener of choice and when disolved, add in the juice of a lemon. To thicken it, make a wee slurry with half a tablespoon of arrowroot and a little water, add it in and stir through and serve over chicken. Nice with brocolli added in to soak up the sauce or you could use cauli rice.

@lukiebebe is have electrolytes in my water daily so think I'm getting what i need. Don't tend to crave sweet or carbs really. I find it hard at times when my fiancé gets out treats in the evening, but its just after i have had a bug meal so never get that tempted!

I think i was silly not meeting some of my macros. After all i have said in my last few comments i found today really hard! Wasn't able to fast till dinner as i have been doing! Got very hungry around 2.30pm. I have stuck to my macros although it made me realise i do need to keep my fats up. Eating to little caught up with me today! Still managed a walk today and got steps to 15000.

I am starting to get bored of the same old recipes and need quick easy meals to make for dinners if anyone fancy's sharing some of theirs. I do scroll online a lot, but interested to hear your ideas xxx

We aren't quite in countryside mountains, we are in a residential bit but the other side of the house opposite drops away eventually into cliff so we can see the sea and the other side once you go through an urbanisation, enters into the national park. We are outside the main town by less than 10 mins. We are looking at moving though, we'll be going further south and a bit inland where the weather is more consistently around 20, less issues with damp and mosquitoes and its cheaper. It also looks flatter where we want to go, we still need to go down and visit so hopefully will be doing that soon.

Anyway, for the next few days I've got the following planned:
Cabbage & onion hash browns, eggs, homemade burgers - pork so they are like a sausage patty.

Meatzza - pizza with a mince base. I can't be arsed messing about with cauliflower base. Just roll the mince out as thin as possible and bake a bit first.

Courgetti bolognaise, if I can find my spiralizer.

Tortilla, make exactly the same as potato tortilla but use cauliflower.

Maybe a Lasagne with leek as pasta sheets. I slice the leek lengthways then boil a bit then peel apart and layer in the dish. I make a sauce with cream and cheese, I have used a whole block before so its not low calorie.

Sliced leek is also good as replacement spaghetti, i had some left over and had it with left over bolognaise before and it worked well.

Konjac noodles/rice are disgusting, I used to buy slim rice and its a very aquired taste 😂

I'm also planning another trip to a chinese next week too. Its our day we met anniversary, but we will be going to a different one that is a buffet so its easier to stay more on plan, but I am planning on having duck pancakes and hoisin sauce, and sushi. So I will be going off plan. If we go. We might decide to stay on plan and eat at home. I don't know yet. After this I don't think we have any reason to go off plan again, we don't bother too much about valentines day, but we do have DH's birthday at beginning of Feb then nothing after that until June I think.

I just thought I'm not doing very well with all these off plan nights but tbh, I seem to have learnt to keep it to those specific nights and get straight back on it the next day, and not let it be a fuck it week, then month etc, and this is what I've really needed to do. Events and occasions kept to those events only. You have to incorporate real life, I know I should be millitant but eventually when I'm at goal and have my BG under control, I will go off plan for birthdays etc, as long as it doesn't creep in the rest of the time.

@Gobolina I think you have the perfect approach tbh and if you can cope with the night off plan then enjoy it as it will make the days on plan much easier. Your food sounds lovely and I love how it's normal foods adapted rather than finding things to fit the plan another way to make it fit you rather than you fitting it.

Nothing exciting to report from me atm. Sticking to it. Coping ok

We threw together some home made chicken nuggets with salsa and avocado. They were amazing.

Chicken mince. Garlic powder. Salt. Pepper. Onion powder. Mozzarella grated. A bit of coconut flour. An egg and sprinkled with some Parmesan.

Maybe add some onion or spring onion next time but yum. Even kids liked them.

Got dry rubbed chicken wings for dinner though.

My bg and weight this morning was the same as yesterday, 10.1mmol and 14st 1lb 0oz last two days.

I'm still around. It has gone quiet hasn't it. Probably having too much chocolate or the protein bar is a chunk of carbs but it's keeping on plan. Def eating less and def not as hungry but like you @MorningWalk missing the sugar and snacking.

I still drink too @Gobolina probably not ideal but if we're staying to plan that's better than drinking and carbing I figure. Steady bloods are good right?

Sticking to food, scales aren't moving which is frustrating but it'll catch up I'm sure. Had some heck sausages last night with celeriac mash which I enjoyed. Not sure on today's food yet, still haven't had fajitas so may throw some of them together with lettuce wraps.

@Gobolina and @swimmingdory i said i would do dry jan so have managed to stay away. Although if it wasn't for that i think i would have cracked! Craving sugar like never before but staying strong!!

Fortunately for me the scales are moving and i am now a stone down! I do really believe the no alcohol is helping. Even if it is acceptable to have low carb x

That's not too far then is it! I've about 2 to lose now to get into a healthy bmi. Did manage to convince myself to get on the peloton earlier for a bit though 👏🏻 just made us a chaffle thing for lunch with bacon spinach avocado and tomatoes. Enjoyed it more than I thought I would tbf.

Bought a celeriac going to make something with it this week I look forward to trying it!

Went out to another Italian last night and did not order pasta. Ordered pork tenderloin coated in pistachios with a lovely sweet jus. I would never usually order something like that but it was delicious!

Making spinach wraps tonight to have with chicken mince, peppers and fajita seasoning.

I'll let you know how the wraps go!

I've done 0 exercise! Hoping to do exercise a few days this week.

I find the days I exercise on this plan I get dizzy and sick because not eaten much.

Any ideas on what to eat before a workout?

If you’re using your celeriac for a main dish, it’s great to par boil, cut into slices, cover with cheeses and put in the oven to roast.

How are you doing spinach wraps? As an omelette? Can’t figure out how that works…

Pre-work out, boiled eggs with a mayo dip and a couple of slices of ham works well.

My fiancé made some tuna fritters yesterday they were yummy! Tuna, egg to combine, mozzarella grated, spring onions and a touch of bread crumbs tiniest bit just to combine them and fried them they were great

Eggs definitely get boring, I do as many different versions as possible. You can make an egg mayo and have it with lettuce wraps, that’s another option.

Re breadcrumbs: a good substitute for things like cheese stick coating and fish cakes is pork ring crumbs. Grate them up and coat on top of egg.

I fancy the tuna fritters @lukiebebe think they'd make a good lunch.

I was going to do fajitas but forgot I've put pulled pork in the slow cooker. Not hungry yet from lunch but no idea what to have that with yet... we'd normally have rice or chips with garlic bread and I'm not sure cauliflower rice would work. Am thinking maybe over cauliflower and broccoli cheese with some gravy? Any ideas anyone?
