Week 5 - summer low carb bootcamp

Right chaps, while BIWI is drinking prosecco in sunny Italy away being busy and important, I'm your supply teacher for the next couple of days. BIWI has given me temporary responsibility for the Big Stick, so no messing about at the back there!

Well done on getting to week five, it's not easy and despite the fab support on here you've done this yourself, so remember how far you've come.

Please record your weight on the spreadsheet and marvel at your progress!

Temptations will come along, especially over bank holidays and half term treats, but remember that you're doing this for yourself, so be kind to yourself by not giving in to the temptation from things that do you harm and risk derailing you, as every time you look after yourself in this way it get easier. If you have a wobble, post on here - we'll remind you of all the tasty things you can have instead and why.

Hi all, back after a few days away and (like Sybil) bit glum as I have not been bootcamping (my greedy version of bootcamp light) and need a bit of help getting back on track ? haven't eaten any rice, pasta, bread or cake etc but have unleashed my inner guzzler/gobbler and had way too much dark chocolate and white wine. Know it'll show on the scales tomorrow so not looking forward to weighing myself. Went for a longish walk today and ate pretty well (apart from the last three squares of chocolate ? realise I just can't have it in the house as I can't stop at one or two squares)
Today:
B yoghurt with dessert spoon flax seeds and three cut-up strawberries
L roast beef with horseradish wrapped round asparagus
D braised beef meatballs in tomato/onion sauce (went easy on sauce) with courgette/garlic strips
one gin and tonic, those squares of dark chocolate
small handful of pistachio nuts

Can I dip my toe into this thread? I've been doing WW for a few months and my weight loss has slowed right down. I've done low carb before and it worked but I fell off the wagon because I kept cooking the same things Confused and got bored. I'm aiming to learn more recipes etc. I'm 'doing' phase 1 of Atkins. I've lost 4lbs this week!! After weeks of only losing a third of a pound a week!!

What are your fave low carb dishes?

Well dinner was a success, though the IPD chocolate mousse turns out really dense, more like those v thick Gu chocolate pots than actual mousse (which was nice but not what I was after). 2 glasses wine and litres of water, will be up peeing all night I think! Big long walk planned for tomorrow in the sunshine. Night all!

Celeriac Tartiflette

Rough quantities:

500g celeriac, cut into small chunks, boiled in salted water till just tender (15-20 mins)
2 little packs smoked lardons (they are usually linked packs)
2-3 echalion shallots, finely chopped
2 cloves garlic
100ml white wine
sloosh of double cream
a bay leaf or two
25g butter
Reblochon cheese - around 200-250g - cut into dice

While the celeriac is cooking, fry the shallots, lardons, garlic and bayleaves in butter in a frying pan, till all are soft/tender. Add the white wine and the cream and continue to cook gently till all is reduced.

Once the celeriac is cooked, drain it, put it into a casserole dish, add the onion/bacon/wine/cream mixture, stir in and then add the Reblochon. Stir together and season with black pepper.

Bake in the oven with a lid on the dish for around 20 minutes at around 180-200, then take the lid off and continue to cook for another 20 minutes until golden brown on top.

Lovely served with a green salad with a garlicky vinaigrette dressing.

lily if you don't want to trawl the recipe thread, have you gone to the recipe section?

See the blue bar just under the Mumsnet logo at top of page with talk/reviews/blogs etc?
Go along to Food, then choose Recipes, then low carb recipes section, the celeriac tartiflette is the very bottom one of the list (most recently added I guess).

maidofmuss - your best bet is getting back onto Bootcamp. So - jettison the flax, the strawberries, nuts and chocolate.

Seriously. All that they are doing is hampering your weight loss.

you are right BIWI - must re-focus...
This week back to Bootcamp and I will:
Not buy chocolate to remove temptation
Get liquorice tea
Not eat flax seeds/berries (go back to eggs/mushrooms or salmon/cream cheese instead of Total, which I always want to embellish)
Ignore the call of the wine
(think I've got that last line in twice - can't scroll down on phone to check - but bears repeating!)

Morning!

Ignore the call of the wine shall be my mantra too this week! I had too much this week. Back on to bootcamp proper tomorrow. Still bootcamp light here today although won't be having wine tonight.

Heir - sorry to hear you have uti too. It's miserable. Thankfully antibs have kicked in for me and am feeling much better. What I did find useful before I went to doc was dissolving bicarb in some water and drinking it. Definitely took the sting away.

Food yesterday
B - Greek yoghurt with chopped strawberries and a teasp of flaxseeds
S - a cold sausage
L - salad of rocket, cherry toms, red onion, feta and chicken all mixed together with mayonnaise
D - steak, mashed turnip, fried mushrooms and onion and a tablespoon of peas. I also had three French fries.

Welcome Heinz - I came to low carb from WW too. I did lose almost 2.5 stone last year on WW but found the WW mantra of you can have anything once you count the points meant I fudged points a lot and being able to drink wine meant I drank far too much which would hen lead to me eating too much. I was gaining and losing the same half stone for the last 6/7 months so decided I needed a complete change. I did Atkins years ago too. I'd forgotten how good I feel eating low carb.

BIWI - what does ketogenically-adapted mean? How do you know?

Hi all! I am a casual (ie undisciplined) Low Carber but have been lurking on here and am feeling inspired so am going to Boot Camp as of tomorrow.
Haven't got much to lose, about half a stone that has crept on since wedding, but I'm short so it shows!
Am on final day of week spent with inlaws. They are Indian so it has been breads and rice and fruit and sweets all the way. Delicious but ruinous. We fly home tonight so landing at Heathrow tomorrow will mark the start of Boot Camp for me! Have made a shopping list as per the Rules.

Afternoon all and welcome Esker.

Glorious day here on the West Coast of Scotland. Dd and I have been out for a lovely cycle along the coast.

B - Scrambled eggs with parma ham and duck fat
S - Greek yoghurt
L - Salad with coleslaw, chicken and pate
S - Just polished off the egg mayo I made for the kids' lunch
D - Will be roast chicken leg with salad and nibbley things like olives, cheeses and pate.

Right, back off out to sit outside. Dh and the dc are weeding the back garden.

Hello all, not been here since Friday. Doing ok, particularly in eating out.
I made some oopsie rolls on Friday, then when dd and I called into McDonald's I transferred my cheeseburger into one of my own rolls. It was yummy. Then we went for a mammoth three hour swim at coral reef in Bracknell, and afterwards went to the cafe. I had a chilli and salad, which was the only option that late in the day. DH brought a takeaway home and he'd brought me a lamb shush kebab without the pitta- he's learning :)
Sine then things have been ok. Enjoyed my bacon (oopsie) roll yesterday morning. Had a little slip last night with a couple of drinks but otherwise things going well. DH is off at the supermarket armed with a long list of meats and fats, and I've a food plan done so this week should be ok.

Just popped in quickly, will catch up on the thread in a minute. Just wanted to see if anyone is following this guy, who is doing an experiment? He is eating low carb for 21 days, but also eating over 5,000 cals a day, to prove that cals in/cals out is not true. He updates youtube everyday with his weight & measurements .

I need to share this brilliant breakfast recipe - DP fround it and we have it every weekend now. It's basically nicked from a Thomasina Miers's recipe. You can make it more or less bootcampy by leaving out or substituting the onion/tomatoes (though it may be slightly less scrummy). It's a great option of a breakfast with a kick as you can obviously up the chilli if you like it hot. If you have family who are not low carbing, serve it with warmed/toasted flour tortillas.

Mexican Eggs (Huevos a la Mexicana). Serves 4
(We halve the mixture & there's no problems)
2-3 tblsp olive oil or lard
1 white onion, chopped
1 fresh red chilli, chopped
2 cloves garlic, crushed/chopped
3 plum tomatoes, deseeded and chopped
10 eggs
1 tablespoon milk (we omit this)
salt & pepper
handful of chopped fresh coriander

Heat oil, add onion and chilli. Cook for about 5 mins so the onion softens. Add the garlic & continue to cook on a low heat. Add the chopped, deseeded tomatoes.

Whisk the eggs (with milk if you are using it), season with salt and pepper, then pour into the onion mixture, stirring and gently heating through until they begin to scramble.
Cook to your taste - as runny or set as you like, and serve with a handful of corainder over the top. And as much chilli sauce as you can handle.

DP stirs in a good couple of spoonfuls of chipotle sauce during cooking, which gives it a really lovely smokey taste.
In another one of her recipes, Thomasina also adds chorizo, which also sounds good.
The prep time can be greatly reduced if you have bags of frozen chopped onions, garlic and chilli in the freezer and can just grab out what you need. The only prep then is chopping tomato and whisking the eggs. It is YUMMY, and I am normally no fan of scrambled eggs.

Buda - it means that you are fat-burning rather than carb-burning.

I would guess that anyone who has been low-carbing seriously for over a month is likely to be ketogenically-adapted. Not sure how you know though!

I need a thrashing with your big stick BIWI - I'm finding it really hard to stay on the wagon at the mo. Drank too much white wine and red last night and have been craving craving craving carbs all day. I had a tiny taste of chocolate earlier, which only made things worse. Blush I feel like I'm eating too much meat, dairy and fatty food.

B - smoked salmon with creme fraiche
L - asparagus fried in butter with leftover hollandaise sauce
S - gouda cheese with little tomatoes
D - will be calves liver with bacon, celeriac and veg.
