Week 7 - May '24 Low Carb Bootcamp - final fortnight

Morning all.

Finally we're having some summertime! It seems like it's much easier to stay low carbing when the weather is nice, for some reason.

Tonight we're going to have fritatta (without the potatoes, obvs) as I'm using up veg in the fridge before I go shopping tomorrow. So it will be shallots, peppers, leek, courgette (all gently softened in plenty of butter) and a load of cheese. Will serve it with a green salad, with an oily dressing, as I have a lettuce that needs to be used. For lunch, I'm finishing up stuff we had at our barbecue on Saturday night - a beefburger, some marinated chicken and coleslaw.

Here's the spreadsheet some really good results so far, and still scope for losing a couple more pounds before we finish this Bootcamp. I'm hoping that when I next weigh (this time around my 'official' weigh-in is Thursday) that the scales might actually start with a 9. I'm so close to that it's tantalising!

However, although next week is our final week, I'm not going to be around for a lot of it, as DH and I are off to Vienna for a few days - my Christmas present! - so I really want to achieve this next target before we leave early next week.

@MissBeck everything is so blinking far away! We are flying Heathrow to Perth, Perth to broome, broome to Melbourne, Melbourne to Adelaide. Then bc Qantas has annoyingly cancelled the flight from Adelaide to Perth we have to go via Melbourne, which is wrong direction)!! So 7 flights in 3 weeks! You can blame us for the climate change.

@NotDonna I can't remember who it was, but I watched a documentary about some celebrity who travelled from one side to another on train! It was fascinating to watch, but the travel times were 😲

There’s a famous train from Sydney (I think) up to Darwin - takes a few days. That’s another area we’ve never visited! It’s too blooming big!

I've just succumbed to a square of Lindt Intense Dark Chocolate. It was either that or a strawberry quality street!! 😂I did consider both! 😂Bloody hell, no wonder I've stalled. 😅

@MissBeck you sound like the
complete opposite of me but I do like chatting on here with you, despite the differences we seem to have a fair amount in common. Lockdown was not fun for me, I managed 6 weeks of WFH and it drove me nuts, thank goodness I had the teens at home for company, before managing to gradually get back fully on site and have no wish to ever WFH again.

Having said that everyone else is out this evening and I have been home for an hour sitting in the garden very much enjoying the peace. Just couldn't do too much of it.

We are NHS supply chain so we stayed open too, we rejigged workloads so some were able to WFH for a bit but it didn't really work so we went to shift working to avoid all being in at the same time and lots of other precautions and went back in. Luckily we have a lot of space in our building so social distancing was possible, it was weird having zoom meetings with people in the same building instead of sitting round a table though.

TGIF! I'm so excited for my dinner tonight! DD has been picked up and going to Boyfriends house for the night so I can cook what I want!! I saw a dish in another thread but can't find it, but it was pork fillet in a mushroom sauce which sounded delicious, so I'm doing that with Cheesy Brocolli and Cauliflower! 😛

That was my meal @MissBeck! The secret with the pork is to flash fry it initially - keep it on the pink side as much as you can (you can eat pork fillet slightly pink, so no need to worry about that), and then you're really just heating it through the mushroom sauce. Otherwise it goes tough pretty quickly.

@BIWI Is that with oil? Or butter? or just dry? And how much cream did you use?There's only me so 150ml? 200?

Very hot pan, sloosh (technical term!) of olive oil.

Quick, flash fry of the meat (thinly sliced), season with salt/pepper and a bit of oregano (or any other herb of your choice). Tip meat out on to a dish, and in the same pan add thinly sliced onions and mushrooms, and some garlic, and sauté till softened. A bit of white wine if you have some (or red), a little tomato purée and then enough cream to make a sauce - if it's just a quantity of meat/veg for you, then probably around 150ml? (i.e. half a small pot). Bring to the boil, stir, and then add the pork back in. Stir it through, making sure it's hot, and then serve straight away.

YAY!! I did it!! I cooked like a grown up!! 😂😂I decided against the cheesy veg and just tossed them in the pan with everything else at the end. 😂Looks like the cat threw up on my plate but it was really nice @BIWI !! But made way too much! Where do we stand on re-heating it? Or is it a no-no because of the pork?

Just catching up on keeping on post bootcamp. There's a lot to like about this way of eating and I've got really used to not having things like pasta , potatoes and bread. Weirdly what I miss are the more healthy carbs - fruit and things like lentils and complex grains.

I think I may do a mix and allow a few of those back in as I can't really imagine a long term life without Dal or pears!

I'd do it gently in a pan. You need to make sure it's piping hot when it's re-heated, but don't boil it or cook it for too long. Pork fillet is a delicate meat, and will go tough if heated too much/too quickly
