Morning all

So this marks the half way point.

Hopefully by now you're adjusting to a low carb WOE. I hope, very much, that you're enjoying your food and you're not feeling deprived in any way.

Carb flu should be way behind us.

And now, now that we've got past the infamous weeks 3 & 4, weight loss should continue, in a slow and steady way.

This week's challenge

We have four weeks left, and the key to success is not only KOKO but also enjoying our food. So this week's challenge is to post a low carb recipe that you think that others will really enjoy

Very pretty blossom @Wilkolampshade, it’s looking a bit more grey and wet near me today.

Daily weighing this week and had a big drop on the scales this morning, but it has been coupled with some toilet trouble so I expect to go back up a little as I get my hydration back to where it should be.

Today’s food:

B: none / fasting
L: chicken, halloumi and spinach salad followed by strawberries and double cream.

I think tea tonight might be mousaka as we’ve got a few aubergines that need using up.

My recipe suggestion:

Sautée shallots and garlic until soft.
Add prawns and heat through.
Add passata and a touch of paprika.
Add ground almonds to thicken.
Heat to simmering.
Add cubed feta and leave on heat until it starts to melt.

Serve with courgetti or konjac noodles and a sprinkle of Parmesan.

No idea of quantities. Sorry Grin

I’m just pondering about life post bootcamp, I’m hoping to stay on this woe, but if on occasion I would like something sweet (maybe dessert at a special occasion) Is there a better time to eat it, I mean would it be better to eat a small treat alongside a meal rather than on its own or does it not make any difference?

Post boot camp I tend to have treat meals like a meal and pudding but stick to this woe the rest of the time,may be once a week.
I have a bit of a problem, my fridge freezer may have died, it is not currently working. So I have nothing to take to work tomorrow and there is not anything you can get at work that would be boot camp friendly. The bright idea I had was to cook all the pigs in blankets left over from Christmas and have those, not very healthy but best I can manage I think.

@ditavonteesed i think you're in survival mode and need to cook those piggies!! And then have some veggies for dinner?

@AThroneOfLies today i melted a square of 92% chocolate in the microwave with cream and it made a nice little treat. i think 85% would be significantly better though and maybe with a few raspberries.

I just made the famous cheeseburger pie! it was so good i had to stop myself another quarter out of pure greed. I'm delighted and plan to make it many more times in the future.

Stay put BIWI . My DD is also in Cardiff and meant to be coming home ( SW Wales) tomorrow but I’ve told her to stay indoors. We have 93 mph winds forecast for 9am.

Morning everyone, hope you are all safe. Eunice is here and it's so tempting to go down to the sea to storm water but safety first!

Another lb off here so Tuesday's shocker on the scales seems TOTM/bunged up digestive system related, a good lesson not to panic!

Today:

B: cheese and mushroom omelette
L: salad with avocado and pancetta
D: the prawns with passata and feta I posted upthread.

Good morning all, hope people are safe and able to stay in doors. Though @UnexpectedItemInShaggingArea i understand the desire to see the storm in action (like the last scene in Point Break!) but best steer clear I suppose. I'm in Gloucestershire which I think is going to be pretty breezy.

I've woken up feeling ill, prob some lurgey picked up from my toddler who has graduated from 6 days of raised temp last week and kept off nursery to now having a hacking cough. But by god we're going to battle our way in to nursery today! (he's fine in himself and the nursery said it was ok)

We've got more guests this weekend and I'm going to premake some LC treats and maybe even a dessert to try and avoid temptation. Someone mentioned Barbados Creams weeks ago and I can't stop thinking about them! I'll skip the sugar though I have been googling how many carbs in a tsp of brown sugar lol. I reckon whipped cream and Greek yogurt will be delicious.

L chicken cauliflower rice and mushrooms
D leftover cheeseburger pie with broccoli
S i have budgeted for two little overpriced Keto cookie 'morsels' i purchased for mid afternoon.

@Jezzballs2000 - when I made Barbados Mousse (as my mum used to call it, who made it regularly) a few weeks ago, I put muscovado sugar on dh's and my dad's portions but just put a sprinkling of cinnamon on mine. It was lush Smile I didn't feel deprived at all Smile

I made sure not to overwhip the cream and yoghurt, so it was a lovely velvety texture.

Hope you're all OK today. Eldest has just sent me a video on the way to work from the top deck of a bus crossing the Thames along the lines of 'ha ha, probs be a bit blowy on the way home, lol.' What are they like.... Hmm

One of our directors helpfully emailed our work email addresses at 7.55 to say WFH if you want (we're on a red warning zone). Well for starters I was already on my way by then and secondly mot everyone has a work mobile to read emails so there are 4 plebs in the office, stuck until the afternoon now when I should die down. Great, thanks for that.

NSV - I've started yoga and my teacher says I should be in the mixed ability group instead of with the total beginners as I'll get more out of it and be able to progress. Woop

I'm off work today with my two young boys, one of whom has been very sick the past few days so I think we're settling in for a day indoors to give him a chance to recover and stay out of the storm!

I've been up and down with 1.5 pounds this week so I've decided I'm better to stop weighing myself in the mornings if varied results are going to impact my mental focus. I do find it fine sticking to this woe when I've been prepared and have the right food in the house. I have really stuck to the rules throughout apart from a couple of glasses of wine last weekend and I 'treated' myself to a handful of raspberries with yoghurt and cream last night which were delicious.

I have just about lost a stone (hopefully the scales will confirm this next time I weigh!) over the last 4 weeks. I have a black tie event in 3 weeks that I'd like to feel great for but I think I'll have to buy something to wear because I can't fit into my old dresses etc.

This thread is really keeping me on the straight and narrow, thanks everyone for sharing your experiences whether they're highs or lows - it really helps me feel less alone in doing this.

Made a lovely dinner last night...I had a bag of frozen seafood (prawns, mussels, squid etc) and sautéed it in butter, shallots, garlic, cream, chilli flakes and smoked paprika. Took less than 5 minutes! Steamed some broccoli and leeks and put the lot in a pasta bowl. Squeeze of lemon, few snips of fresh parsley and ready to eat!

Looked, smelt and tasted divine!!

This is now my favourite meal so far...and SO quick to make on a busy work day!!
