Morning all

So this marks the half way point.

Hopefully by now you're adjusting to a low carb WOE. I hope, very much, that you're enjoying your food and you're not feeling deprived in any way.

Carb flu should be way behind us.

And now, now that we've got past the infamous weeks 3 & 4, weight loss should continue, in a slow and steady way.

This week's challenge

We have four weeks left, and the key to success is not only KOKO but also enjoying our food. So this week's challenge is to post a low carb recipe that you think that others will really enjoy

Those Konjak noodles are cheap in Approved Foods at the moment. I hope I like them because I ordered 8 packs! DH will eat them though, that man eats everything. The sound of fishiness put me off as I dislike fish...
As long as you rinse them well, and then dry fry them, they'll be fine! They work especially well in stir-fries and Asian-style noodle soups.

I have done PCR and that is negative too. so now putting up with symptoms(ignoring it basically). But not very bad anyway.
I have put 2lbs on, no idea why, I have stuck to LC, but had yogurt and cream most days, as cooking twice was not fun. A bit heartbroken now, was not expecting a gain of any sort. I haven't entered on spreadsheet, not sure whether to wait for tomorrow and enter if its the same. My water intake was not good, I wonder if thats the issue.
@Baystard can you please share the keto bread recipe. Mine looks more like Weetabix, though tastes okay.

@RagzRebooted - I've never noticed any fishiness in the taste of the Konjac noodles not even, if I'm honest, the smell but maybe I'm just unobservant Wink

I've never tried them as a spaghetti replacement - I've tended to use them in stir fries, with plentiful Kikkoman soy sauce and sesame oil.

I've just made stick blender aioli to have with the king prawns we're having for a starter tonight. Smile

Main course will be roast pheasant, with a cranberry and Sherry jus, Savoy cabbage and crispy bacon bits and celeriac rösti. I've still to decide dessert: it will either be chocolate dipped strawberries or a sort of blueberry ice cream made by blitzing some frozen blueberries with cream.

Plus too much wine Blush

Another loss for me last week bringing the total to just under 9lbs.
I forgot how low my tolerance to wine is when low carbing and suffered for it Sunday morning. My appetite has decreased massively.

It's the diet doctor keto bread recipe slightly adapted with a bit of linseed meal and seeds.

140g almond flour
50g psyllium husk powder
3 egg whites
2 tsp cider vinegar
2tsp baking powder
1/2 tsp salt
30g ground linseed*
20g sunflower seeds*
240ml boiling water

*things I add, not in original recipe. Recipe also says 1 tsp salt but that makes it a bit too salty so I've halved it.

Mix dry ingredients, add vinegar, add the three eggs egg whites and mix. Then beat in the boiling water until smooth. Recipe says shape into 6 rolls and bake for 1 hour, but I did it in a load tin for or 2.5 hours at 170C, it takes a long time to bake.

I sliced it into 10 and put in the freezer. Had a couple today, toasted from frozen with lots of butter, was lovely. In future I might half the loaf and then slice side-to-side as it would give better sized slices for sandwiches.

@Batshittery that's kind thank you. I'm still feeling knacked but will drill down and hang on. It's a really good thing all this, and I'm convinced it's potentially life-changing. Your bloody right about alcohol on keto though, it's a killer. Sad
I might give the doc a call and run through my low mood with them-see if it sounds depressive. I've been there before and don't want to go there again.

I should try this soon, I actually read this on diet doctor and ordered Psyllium husk to make this, then decided to look for another recipes as I didn't want to make it into burger buns.. sod's law lol. I will try this soon. getting bored of what I am eating and the pork roast I made is a lot chewier than I like, my son is eating it al instead of me.

Checking in, I haven't weighed today because I had a really early start so I'll weigh tomorrow. Not expecting much as I have the period from hell and still not pooping regularly enough (sorry for all the TMI).

Stayed the same this week, which i am finding really annoying as I have been really careful to stick to an LC WOE. But, I'm going to KOKO as the boost of energy has got to be worth it - haven't had a rotten headache since I started and am sleeping better too...

Bread recipe sounds interesting, though I did baulk at the oven time given the cost of electricity but I imagine it's still cheaper than the SLC loaf and I'm not hugely keen on them, they're too spongey.

Dinner tonight was roasted Mediterranean veg on a bed of salad with a little grated red Leicester and dressing made from mayo, olive oil, dijon mustard and a small splash of red wine vinegar. Was surprisingly filling. Lunch was ham and cheese toasties fried in butter (trying to use up the SLC sliced bread as I'm not keen on it). I had two as the bread is so small, then I felt sick so won't be doing that again, hence the veggie mountain dinner.

I weighed Friday and was 2lbs down, but I had been half a pound up the week before. 8lbs ish off so far (I started a week early) so hopefully I can really up my game (more water, less fake bread) and hit a stone by the end of bootcamp. Measured myself this evening and not a single cm lost, which is annoying but I am sure I feel slimmer and my colleague said she'd noticed it.

Thanks for the reassurance regarding the noodles. I will try a strong flavour with them first! Need some lower carb soy sauce.

@RagzRebooted the Diet Doctor bread recipe Is good but I also find the fuel cost daunting. For this reason I have a baking sesh once a week and fill the oven with other bits too - some low carb seed crackers and a tray of roast veg to eat over the week.

Had pan fried cod tonight on a bed of peeler slices of courgette cooked in butter with cream, salt & pepper, squeeze of lemon and fresh parsley. Took about 10 mins all in and was delicious 😋.

Making cream of chicken soup tomorrow for lunch and tomorrow will be something from the leftover chicken - may try the Parmesan crusted chicken with celeriac chips. Weds is stuffed peppers. I need to bulk out the stuffed mushroom recipe I did from here last week as the spinach goes to nothing! Think I'll use finely chopped courgette should have bought an aubergine. Thursday is salmon something (maybe ramen with bare naked noodles)

I've found I can't do Salad in cold weather although I adore it in the summer with loads of fresh herbs

I knew that the strawberries would be turnip-like when I bought them (a description my mum had used to use Wink) but I'd had vague ideas of chocolate coating them. I only put them in with the blueberry ice cream for the contrast in colour. Should have just stayed with raspberries Grin

Morning all.

After yesterday’s sulk about putting in half a pound I thought I’d try daily weighing to see what my fluctuations are like. 2.2lbs on this morning so feeling even more annoyed, although I had terrible stomach ache last night and couldn’t work out if it was digestive or period pain.

Will KOKO, but only because we’ve spent a fortune on this WOE so far and DP is still going.

Genuinely gutted that this isn’t working better for me. My diet before this was terrible (high carb, high sugar, large meals and constant grazing snacks, daily dessert, hardly any veg etc). To have switched from that to IF 16:8, two low carb meals a day with plenty of veg. No snacks, rarely any dessert (always LC if I do), and seen so little improvement I’m really disappointed. I’d expect a slow start if I had a pretty good diet before and started out quite slim, but being a larger lady with a significant change in eating I really thought I’d see bigger losses. 😞

Well done to all of those who are having more success.

@BaconOmelette how much have you lost since the start of Bootcamp? It can take longer for weight loss to get going in some people than others. Have you taken any measurements to see whether you've lost inches, or have you noticed your clothes fitting better?

@BaconOmelette sorry to hear you getting despondent. Hopefully the knowledge here will help you find a few tweaks. Also one day of daily weighing will not show a trend just a possible one off increase.

I’ve taken the plunge since weighed this morning. Fell off the wagon last week big time. Up 6lbs in a week. Heavier than I have ever been. Not sure if I can do this with BC or if I need to address other issues. Today’s weight certainly provides a wake up call.

Some of you are doing great. Well done.

I did make a lovely meal for DH last night. Mainly low carb except had a bit of beetroot in the starter. It was beetroot and feta salad, smoked haddock, celeriac purée, spinach snd green beans and 90% chocolate mousse with no sugar or sweetener. I failed to photograph DH like pretty bird and Venus did but he was appreciative. And all made in the hob and the microwave.
