Week 5 Pre-Christmas Low Carb Bootcamp

Evening/morning all (depending on what time you’re reading this!)

As ever, here’s the link to The Spreadsheet of Fabulousness.

We now enter week 5. Hopefully we’re through the doldrums of weeks 3 & 4, and you should start to see the scales moving for you again. Remember that we’re still doing strict Bootcamp during the week (you are, aren’t you? Hmm), only relaxing things a little at the weekend.

I’m also hopeful that by now this WOE is becoming more of a habit for you – if you’re new to low carbing – and that you’re enjoying it, rather than feeling that you’re on a deprivation diet. (If ever you’re wondering about this, just pop over to any of the low calorie threads in the weight loss section, and see just how different the posts/themes are on those – very rarely are they about enjoying delicious food!).

If you haven’t already done so, please go and check out the recipe threads, which are stickied at the top of the Low Carb Bootcamp topic. There are some fantastic recipes there, and even if you don’t choose any of them, they should give you some inspiration for your own cooking.

For this week’s recipe, I’ve chosen something very comforting. I’ve been reading various weather forecasts which say we’re in for some cold weather over the next couple of weeks, so this seemed appropriate:

Low Carb Shepherd's Pie

serves 6

3 large/5 small leeks (about the number you will get in a pack from Sainsbury) sliced
1/2 head of celery, sliced
500g beef mince (not lean - go for a high fat mince)
1 OXO cube
1 whole celeriac, peeled and chopped into chunks
2 banana/echalion shallots (Sainsbury's sell these - long and thin rather than round - but I guess ordinary shallots would be fine - you need around 75g)
Grated cheese

  • Fry your beef first, in olive oil in a large frying pan, and season with salt, pepper and when browned, crumble in the OXO cube
  • In a large saucepan, fry the leeks and celery in butter with a splash of olive oil (Adding the oil helps to prevent the butter from burning)
  • When softened, add the mince and then cover with water and simmer for 30 minutes, with the pan lid on
  • After 30 minutes, take the lid off and reduce the amount of liquid (it needs to be reasonably dry - but do this to your own taste)
  • While the meat is cooking, boil your celeriac in a large pan of salted water, till tender - this will take 20-25 minutes
  • Drain and mash - either by hand or with a stick blender.
  • Thinly slice the shallots and fry gently till nicely browned, in butter with a splash of oil, then mix into the mash
  • Put the meat into an oven-proof dish and spread the mash on top of it. Top with the grated cheese and bake for around 20 minutes in a hot oven until the cheese is browned.

32g for the whole thing; 5.4g carbs per portion if serving 6 people.

The specific weights of the veg I used, if you want to be really anal about carb counts (!) were:

leeks - 427g
celery 213g
celeriac - 596g
shallots - 78g

and an OXO cube is 1.8g carbs.

One final thing

I always make a plea, at the start of each Bootcamp, that posters read all the posts on the thread. Not only is it poor thread etiquette not to, but it’s also very frustrating when people post or ask about things that have been written about, or linked to, earlier in the thread.

I’m not going to name any names (yet!) but it’s very obvious when this happens. And also, by not reading all the posts you miss out on so much key information!

Hi all, frequent name changer and lurker since June this year - I'm 16lbs down since June 1 and this is just the way I eat now. Hoping to lose another 7lbs, I've stalled for almost 8 weeks and gained and lost the same 1lb but I'm not stressing as I know where I could make changes. I don't weigh myself obsessively any more either. I'm at work today wearing a pair of trousers I couldn't fit into last year and I genuinely now love coffee with unsweetened almond milk Smile

catwithflowers dinner was excellent, couldn’t fault it, it wasn’t Angela’s London restaurant it was the one in Limewood, New Forest. She wasn’t in the kitchen, we did ask Grin.

Back to earth today, lots of veg to use up, going to do a big veg traybake with olives and feta.

So impressed with the socks. I used to do quite a bit of knitting. Probably haven’t held a pair of needles in 20 years. If I can knit a jumper could I knit socks? Delighted the scales are showing 2lbs less this morning. This is how maintenance should work.
Yes indeed! It turns out that socks are much easier than jumpers and unlike jumpers (in my experience) , tend to turn out the right shape :).

I like the 'Regia' patterns (free online and often free with interesting sock wool.

That looks fab! Will definitely try that substituting the peppers for something else

I make "turkey bites" at Christmas ("all the taste of Christmas in a single bite"): essentially flattened turkey steaks topped with (this bit is not Boot Camp compatible) a "stuffing of breadcrumbs, parsley, thyme and a beaten egg and fresh cranberries, rolled up and then wrapped in bacon before baking it and slicing it (also freezes well).

I'm inspired to adapt this recipe along those lines. Maybe add some fresh cranberries rather than the peppers.

BIWI that bacon lattice (Bacon bomb stuffed with mozzarella and pepper ) looks wonderful!

@Prettybird I love the sound of your Christmas in a bite too.

I have adapted my Grandma's breadcrumb (war-time) 'stuffing'- to make it more bootcamp-friendly. (Funny really, I guess she was adapting the sausage-meat stuffing to make it ration-book friendly.)

Her recipe looks like the basis for the one you have above.
We now include ground almonds and melted butter (or suet) rather than breadcrumbs.

My family much prefer it to the original but other people (distracted by our sparkling dinner-time converstation) haven't always realised that it has been changed.

A big thank you to BIWI for really helping me and so many others,it's so appreciated. I'm a few weeks ahead,I think week ten this weekend and have now lost a stone.
I'm reading all the old,week nine threads to keep me on track and to motivate me when I see others losing and its spurs me on.
I still have wobbly hips and a belly but fitting in all my old clothes size 12 and not sure how much I need to lose now or start introducing a few lentils/ryvita etc.I have had a sneaky nature valley sweet and salty bar yesterday and the day before as I had a big whoosh and my face has got quite long and two people have mentioned to me not to lose anymore,but I'm enjoying this way of eating and quite intrigued to see if my body wants to lose a few more pounds? In my late teens I was a stone lighter,but obviously bodies change with pregnancy etc.
So,when do people know when to stop I suppose I'm asking.Thanks

How much do you weigh now and how tall are you? Do you know what your BMI is now? (I understand that BMI is controversial, but for most of us, on average, it's a good marker of where our weight 'should' be)

I'm 5 foot 10.5 and weigh 10 stone 8 now,so right in the middle for BMI.

Brekfast is a babybel and then I take some cold omelette(spinach,mushroom) to work to eat around 11 when I get hungry.
Something like a home made soup around 2pm then a good meal around 5pm,like fish/chicken with loads of veg or a home made curry with loads of coconut milk.
Then snacks around 8pm like peanut butter or a bit of dark choc or lately some pork scratching!

BMI around 21? I look fine in clothes but not bikini ready,maybe I just need to do more exercise to tone up!

I think it's possible that you might lose a bit more weight, but certainly not essential - and any weight loss from now will be very slow and you'd have to be super strict! But definitely if you think you're not bikini-ready, probably time for some working out Grin

Is it normal in the first week or so to be hungry all the time as you work out how much protein it takes to fill you up? For example yesterday I had turkey and vegetable soup for lunch, plus a big bowl of shoogled cabbage. I was stuffed at the time (all the liquid, I suppose) but starving two hours later. I had to stop and buy an egg McMuffin (but didn't eat the muffin). I think I'm going to have to start carrying boiled eggs around with me Grin

Will keep going as I feel good and healthy and will listen to my body. I think the adjustment of getting used to being slimmer has just hit home,yet I have belly rolls to grab hold of still so will keep going.

Will just mention how some days I have to remind myself to drink(I do) yet other days I am fine one minute and the next my mouth suddenly goes so dry and I'm madly searching for the water bottle,it comes out of nowhere!

@JunieSpoony yes it can take a couple of weeks for your body to get used to it. However, looking at what you've eaten, it would suggest to me that you're not eating enough fat. Turkey is pretty lean and then your veg won't have had much fat.

Did you have any breakfast? Don't forget that in the first couple of weeks, and during the week of weeks 3-6, (i.e. when we're on strict Bootcamp), you should also be eating breakfast.

I did have breakfast, @BIWI, a large enough portion of the fattiest kind of Greek yoghurt to keep me full until lunch (about double the amount I started off with! I learnt quickly on that front). There was rather a lot of butter in the shoogled cabbage, but yes, there wouldn't have been much in the soup. Or indeed a huge amount of turkey.

Cooking the cardamon chicken dish tonight - what did you serve with @BIWI - cauli rice? Can’t remember.

Had Greek yog, berries and flax for brekkie for the first time in ages. Then big salad for lunch.
@kerkyra I’m at the same place as you- started in June, lost over a stone and now at ideal weight. A loose rum so started on the kettlebells to start toning. I still need this board for inspiration and motivation of the lovely group.

@Dellabob123 I served it with cauliflower rice, which I'd fried with some chopped shallots, and also some broccoli that I seared (after par boiling) and then seasoned with Ponzu.

Loving the knitting chat - I'm a crochet fan and currently have a hat for my neighbours new baby on the go and also a longer term blanket for my latest niece although she's not arriving until March so I have time Smile

Enjoying being back in control of my food and the variety of salads / lunches.

I've got some chia seeds so have optimistically chucked 2 tblsp in a bowl with some unsweetened soya milk. But unsure what else to do?! I think im trying to create some kind of breakfast as I ate very early tonight so will be hungry earlier than usual tomorrow.

Any tips on using chia seeds??

Yes I'm a lurker but really enjoy reading what people eat and what they do day to day.
I like to read advise from the long term bootcampers who know how this works.

I put my xmas tree up today as my dd1 has her formal next week and wants it for photos but dd2 has caught covid19 which is a bit of an annoyance

I've tried to learn to crochet but as a left hander I've only managed to do foundation chains and not got any further Sad

I'm currently avoiding getting started on a Secret Santa knitting project Blush - I've lost my knit-jo for the moment Confused Really need to get it back as I want to knit two pairs of socks - one pair for my dad and one for ds. I might just get started on the wee Santa hat Christmas tree decoration that I'll be putting in with my Secret Santa project which I haven't decided yet Blush. These are the three that I made for the Woolly Hugs Christmas sale.

I would say you already have a bikini body , as in you have a body , so you can put a bikini on it ( maybe not outside this weekend if you’re in the U.K. ) and you’re taller ( and probably younger than me ) weigh less than me and I wore a bikini on holiday on a lovely holiday a couple of years ago

TMI warning ( though next time I’ll get a spray tan before I go )
I’m not crafty at all ,and really want to knit and crochet , and I’ve tried but it’s not pretty , I am good with plants though 👍

Did have a glass of wine , celebration as we had the accountant round to go through the end of year accounts and were worried ( furlough , gov grants , lack of trade ) but it was ok
