Week 5 Pre-Christmas Low Carb Bootcamp

Evening/morning all (depending on what time you’re reading this!)

As ever, here’s the link to The Spreadsheet of Fabulousness.

We now enter week 5. Hopefully we’re through the doldrums of weeks 3 & 4, and you should start to see the scales moving for you again. Remember that we’re still doing strict Bootcamp during the week (you are, aren’t you? Hmm), only relaxing things a little at the weekend.

I’m also hopeful that by now this WOE is becoming more of a habit for you – if you’re new to low carbing – and that you’re enjoying it, rather than feeling that you’re on a deprivation diet. (If ever you’re wondering about this, just pop over to any of the low calorie threads in the weight loss section, and see just how different the posts/themes are on those – very rarely are they about enjoying delicious food!).

If you haven’t already done so, please go and check out the recipe threads, which are stickied at the top of the Low Carb Bootcamp topic. There are some fantastic recipes there, and even if you don’t choose any of them, they should give you some inspiration for your own cooking.

For this week’s recipe, I’ve chosen something very comforting. I’ve been reading various weather forecasts which say we’re in for some cold weather over the next couple of weeks, so this seemed appropriate:

Low Carb Shepherd's Pie

serves 6

3 large/5 small leeks (about the number you will get in a pack from Sainsbury) sliced
1/2 head of celery, sliced
500g beef mince (not lean - go for a high fat mince)
1 OXO cube
1 whole celeriac, peeled and chopped into chunks
2 banana/echalion shallots (Sainsbury's sell these - long and thin rather than round - but I guess ordinary shallots would be fine - you need around 75g)
Grated cheese

  • Fry your beef first, in olive oil in a large frying pan, and season with salt, pepper and when browned, crumble in the OXO cube
  • In a large saucepan, fry the leeks and celery in butter with a splash of olive oil (Adding the oil helps to prevent the butter from burning)
  • When softened, add the mince and then cover with water and simmer for 30 minutes, with the pan lid on
  • After 30 minutes, take the lid off and reduce the amount of liquid (it needs to be reasonably dry - but do this to your own taste)
  • While the meat is cooking, boil your celeriac in a large pan of salted water, till tender - this will take 20-25 minutes
  • Drain and mash - either by hand or with a stick blender.
  • Thinly slice the shallots and fry gently till nicely browned, in butter with a splash of oil, then mix into the mash
  • Put the meat into an oven-proof dish and spread the mash on top of it. Top with the grated cheese and bake for around 20 minutes in a hot oven until the cheese is browned.

32g for the whole thing; 5.4g carbs per portion if serving 6 people.

The specific weights of the veg I used, if you want to be really anal about carb counts (!) were:

leeks - 427g
celery 213g
celeriac - 596g
shallots - 78g

and an OXO cube is 1.8g carbs.

One final thing

I always make a plea, at the start of each Bootcamp, that posters read all the posts on the thread. Not only is it poor thread etiquette not to, but it’s also very frustrating when people post or ask about things that have been written about, or linked to, earlier in the thread.

I’m not going to name any names (yet!) but it’s very obvious when this happens. And also, by not reading all the posts you miss out on so much key information!

Wow. I didn’t want to post while last nights business was going on but wanted to add my thoughts because a stone is an amazing amount to lose in what? 4 weeks. I’d be lucky to lose that in 10 weeks. I’ve been doing LCHF since April 13 and have slipped up only twice - admittedly once during this boot camp - and I estimate I’ve ‘only’ lost around 2 stones.
Some of us do lose weight slower than others for what ever reason, metabolism, post menopause, whatever, and it’s important to acknowledge that and not berate people. It’s not a competition, I’m bloody chuffed tbh and I’ve just erased the rest of my post before I regret what I say.

Anyway, a lovely lunch out today with my two oldest friends, hadn’t seen one of them for 20 years. Had a lovely dish with avocado, halloumi, bacon, tomatoes and poached eggs, a really lovely day.

Omg @Wildheartsease they look amazing. I wish I had such talent but even my kindhearted and ever-generous Sunday school teacher despaired of my knitting ability when we were knitting squares for a blanket and mine were very decidedly wonky.

People come to these threads again and again because some of us had quite a lot of weight to lose. Over the course of this year I've lost 48lbs, which is in a great part thanks to the support of these threads. Something I never thought was possible. I am no longer trying to lose but I like the support for maintenance and like to think I can offer people newer to this way of eating some support to pay back for the support I have received.
Anyway basically I hope everyone is ok.

ditavonteesed 48lb loss this year, just wanted to say well done, I think that’s extraordinary. I like having old hands on the thread, it’s helpful. I think the person who has left was just having a bad day.

At a swanky restaurant, Angela Hartnett (probably not actually in the kitchen) so Italian menu but lots of options so I can definitely work with it. DH swears he can hear her voice 😂. He has had a g&t.

Just checking in. Today I am beat, Too much work & decorating, must take it easy for a bit.
I had a flat white with almond milk yesterday. My first take away drink of any kind for two weeks. I note that unsweetened almond milk has only 1g carbs per 8 Oz. Not sure this was unsweetened, but I checked later in the day &I was still in ketosis. I promise not to make a habit of this, I find it best to stay in the guardrails of BC

Re: yesterday’s drama, having looked at a couple of threads that the person is on, I’m taking the claim of a 1st weight loss in 4 weeks with a large pinch of salt.

Onto to today, I had to keep hitching my jeans up all day as they are a lot looser now, which made me happy. It’s the small things…

Which is why I kept my head down last night

Can confirm that Cauli , chicken Alfredo is complete delicious , but doesn’t be like me and Chuck the cauli in raw , a bit late

After my post up thread re almond milk, I started getting all these adverts for almond milk on the right side of the thread-creepy!
Super appreciate this thread & all posters. So many recipes to try! And all hail BIWI!
I am here because I vowed to never hand over another penny to the weight loss industry. Besides following low carb, I use a positive imaging technique whereby I imagine how I will feel when I do get to target, the focus is very much on feeling those feelings, & not berating myself or indulging in self-loathing.
I am spending the evening in bed with a book & herb tea.

@Moanranger is your positive imaging technique self taught or did you learn it from somewhere. Sounds really helpful.

Oh my goodness...just catching up with the DRAMA!! It. Was DD's birthday yesterday and mine today so I've been a bit AWOL.

I read almost every post and really appreciate everyone's input, especially @BIWI, @StuntNun, @ShagMeRiggins, @venusandmars and @prettybird. It's not me being sycophantic, but me learning from previous bootcampers who have experience in what works and what doesn't.

Really appreciate these threads so thank you.

JolliB I think I picked it up from reading about “Manifesting” on line. You sort of meditate and focus on three answers, like: “ I will feel so excited when [ insert goal];” I will feel very [ insert appropriate adjective] when I am [ insert goal]” etc. The key is to focus on the positive feelings you can project. Do this regularly, and I particularly like to do it as a way to stop negative thinking.
I saw a photo of me a few weeks ago when I was last at my goal weight, & I use that in my imagery too.

They are lovely socks - really colourful warm and cosy. However my output is small. (A pair a year... if I have a summer holiday.) I love that they are easy to carry about in a pocket size knitting bag.

Perhaps you should have a go. My guide-leader would have bet a year's 'subs' on my never knitting anything.-due to a few memorable knotted muddles and some stabby accidents. (A bit of my finger-tip is missing after a moment's absence-of-mind led to a very bloody incident with the sewing sissors too.)

So impressed with the socks. I used to do quite a bit of knitting. Probably haven’t held a pair of needles in 20 years. If I can knit a jumper could I knit socks? Delighted the scales are showing 2lbs less this morning. This is how maintenance should work.

Another lovely morning here with low light on gorgeous autumnal clouds. Busy work day ahead. Just having a black coffee before I start.

L green soup, big salad, avocado and Roquefort.
D cauliflower cheese with something from the freezer and FLGV.

@Pleaseandthankyou yes you could knit socks. Lots of free patterns on the internet. I started with Winwick Mum. Also you only need one 100g ball of wool. But once you start browsing it gets a bit too tempting. Lots of beautiful self striping yarns specifically for socks. They make a great gift too. Good luck.

D: Staying in a Premier Inn tonight, so hoping to get a chicken fajita takeaway bowl (no wrap) with lots of sour cream, guacamole and jalapeños

Feeling a bit demotivated today, not sure why. My daily steps and water have dropped off, so I think I’m kicking myself a bit. I’ve got 3 big bottles of water in front of me and have promised myself they will be gone by 10am, so that should get me back on track.

Just idly browsing sites for ideas for Christmas food, when I came across this recipe, which looks perfect for us low carbers - and I'm sure other family members would appreciate!

Bacon bomb stuffed with mozzarella and pepper

(Obviously would need to be made with the best quality bacon and sausage meat!)

I make "turkey bites" at Christmas ("all the taste of Christmas in a single bite"): essentially flattened turkey steaks topped with (this bit is not Boot Camp compatible) a "stuffing of breadcrumbs, parsley, thyme and a beaten egg and fresh cranberries, rolled up and then wrapped in bacon before baking it and slicing it (also freezes well).

I'm inspired to adapt this recipe along those lines. Maybe add some fresh cranberries rather than the peppers.

But as a template for a recipe it sounds great - and would look fabulous.

Years and years ago, when I was still eating pasta, I had a recipe which I made for a fancy dinner party that involved weaving white and green tagliatelle, and making parcels around mozzarella and tomato sauce. It was lovely but also looked amazing. (Very fiddly though, weaving all that pasta!)
