Week 5 Pre-Christmas Low Carb Bootcamp

Evening/morning all (depending on what time you’re reading this!)

As ever, here’s the link to The Spreadsheet of Fabulousness.

We now enter week 5. Hopefully we’re through the doldrums of weeks 3 & 4, and you should start to see the scales moving for you again. Remember that we’re still doing strict Bootcamp during the week (you are, aren’t you? Hmm), only relaxing things a little at the weekend.

I’m also hopeful that by now this WOE is becoming more of a habit for you – if you’re new to low carbing – and that you’re enjoying it, rather than feeling that you’re on a deprivation diet. (If ever you’re wondering about this, just pop over to any of the low calorie threads in the weight loss section, and see just how different the posts/themes are on those – very rarely are they about enjoying delicious food!).

If you haven’t already done so, please go and check out the recipe threads, which are stickied at the top of the Low Carb Bootcamp topic. There are some fantastic recipes there, and even if you don’t choose any of them, they should give you some inspiration for your own cooking.

For this week’s recipe, I’ve chosen something very comforting. I’ve been reading various weather forecasts which say we’re in for some cold weather over the next couple of weeks, so this seemed appropriate:

Low Carb Shepherd's Pie

serves 6

3 large/5 small leeks (about the number you will get in a pack from Sainsbury) sliced
1/2 head of celery, sliced
500g beef mince (not lean - go for a high fat mince)
1 OXO cube
1 whole celeriac, peeled and chopped into chunks
2 banana/echalion shallots (Sainsbury's sell these - long and thin rather than round - but I guess ordinary shallots would be fine - you need around 75g)
Grated cheese

  • Fry your beef first, in olive oil in a large frying pan, and season with salt, pepper and when browned, crumble in the OXO cube
  • In a large saucepan, fry the leeks and celery in butter with a splash of olive oil (Adding the oil helps to prevent the butter from burning)
  • When softened, add the mince and then cover with water and simmer for 30 minutes, with the pan lid on
  • After 30 minutes, take the lid off and reduce the amount of liquid (it needs to be reasonably dry - but do this to your own taste)
  • While the meat is cooking, boil your celeriac in a large pan of salted water, till tender - this will take 20-25 minutes
  • Drain and mash - either by hand or with a stick blender.
  • Thinly slice the shallots and fry gently till nicely browned, in butter with a splash of oil, then mix into the mash
  • Put the meat into an oven-proof dish and spread the mash on top of it. Top with the grated cheese and bake for around 20 minutes in a hot oven until the cheese is browned.

32g for the whole thing; 5.4g carbs per portion if serving 6 people.

The specific weights of the veg I used, if you want to be really anal about carb counts (!) were:

leeks - 427g
celery 213g
celeriac - 596g
shallots - 78g

and an OXO cube is 1.8g carbs.

One final thing

I always make a plea, at the start of each Bootcamp, that posters read all the posts on the thread. Not only is it poor thread etiquette not to, but it’s also very frustrating when people post or ask about things that have been written about, or linked to, earlier in the thread.

I’m not going to name any names (yet!) but it’s very obvious when this happens. And also, by not reading all the posts you miss out on so much key information!

Well, @Jollyholibobs, it turned out I’d forgotten to put it in the freezer on returning home. So it crumbled on contact with the pan. Which I hadn’t turned on, instead turning the chili back on very high.

DS said it was the best cornbread he’d ever tasted, which didn’t help! But I resisted.

Great post @venusandmars. In fact you make many inspirational posts. I am on a different part of the journey too but took to bootcamp to reduce my blood pressure and get to a healthy bmi. That was the easy part 😀. I have been maintaining reasonably well. I need the support of the threads to do that. In the last few weeks I have put on 5lbs. I have experienced most of the thing @biwi mentioned. A bereavement, a celebration, a few days 5 star recuperation and now extreme work pressure. I know I will get that 5lbs off. The rest of you will keep me at it.
I am really happy with how I look. I won’t make the cover of Vogue but my skin looks great after a year and a half of low carbing. HRT and the contents of the Liberty advent calendar probably help.blood pressure is normal. BMI 25.6.
I don’t post very often. I certainly don’t want to derail anyone who is at a different stage. I do it to keep me accountable. I don’t think a separate thread would get enough traffic .
Weight loss is not a short term thing. It has to be long term or else you will end up where you started.

Anyhoo, good morning everyone, hope we are all well today.

I am having a very hungry day today so have cooked myself breakfast. Scrambled eggs on a portabello mushroom with a side of peashoots (run out of spinach). Having an at home day with the smalls today so loads of dancing and yoga planned with them. I am also on day 4 of 30 day planking challenge and ran last night. I expect my gold star in the post 😁

I'm making lasagna for tea tonight which is v cheese heavy (the lasagne sheets are basically cheese and egg whizzed up and baked) so avoiding dairy until then. Period is due in a couple of days so starting to get the hormone hunger. Lunch will probably be a tuna salad with olive oil dressing or an omelette.

V happy with 1lb off so far this week, so once again i will be drinking all the water. With the double benefit of an increased step count because of all the toilet trips!

Lovely breakfast @Glenthebattleostrich.

Busy day ahead just chill first with a black coffee and a purring cat. And a tricky bit of knitting first sock completed last night. I find it sort of meditative and as I am not exercising til at least the end of the week it helps to avoid boredom eating and is comforting.

L big salad and nice cheese. 2nd last Avocado.

Well I for one am confused - she followed the advice, lost a stone (amazing!!!) and then.... is cross because other people aren't losing as fast?!! So is leaving the thread in protest of others not being as successful as she was?!

That's a very good summary. TBH I'm still somewhat confused as to why Noavocado posted like she did yesterday.

I know she posted last week (or possibly the week before) about feeling intimidated by longstanding/regular posters, and also didn't want to feel smug about her weight loss - despite the fact that several posters (including me) were quick to point out that it was fantastic - and inspiring - to hear about such a significant loss, and in no way should she feel smug.

However, clearly she does feel smug about her weight loss, given her attempt to take down those who have done less well! Showing absolutely no insight into or understanding of how difficult the weight loss process can be for many people.

Frankly, if losing weight were easy then none of us would be overweight and there would be no need for the myriad weight loss threads on Mumsnet, or clubs like Slimming World and Weight Watchers.

I suspect this is the first time she has had to diet. She's also obviously somebody who likes rules and who prefers to follow them (although there was a Haribo incident, which I did have to wave my Big Stick about!), and I suspect her preferred way of thinking is very black and white. Personally I wish the first time I needed to diet I'd found something like Bootcamp which is - let's face it - probably one of the most pleasant ways to lose weight. Lovely food and very little (true) deprivation.

I do, however, understand the issue of perceived cliqueyness, and it is something that has concerned me (as many of you will know). But there's little I can do about that, other than to keep encouraging those who are Lurking in the Shadows to come forward and post. However, Noavocado's posts seem to have achieved that anyway Grin

I really don't want longer term Bootcampers to stop posting. If that happened, then we wouldn't benefit from posts like the one up thread made by @venusandmars. Nor would have @ShagMeRiggins humour. Don't, whatever you do, stop being funny!

One final thing I will say is that despite the unpleasant (and quite unnecessary) aggression, @Noavocado has highlighted the key fact that it is important to follow Bootcamp rules!

But let's draw a line under yesterday and carry on, in solidarity, sharing tips and recipes and Life Stuff.

Fab sock @Jollyholibobs v envious of your knitting ability. I’ve tried many times and I’m not a natural. I’ve somehow managed crochet...but I think that’s more forgiving Grin

Anyway, I got 9 hours kip straight last night and I do t know what to do with myself. I’m going to do my kettlebell reps and then finish my reading for uni. I have a lovely dog walk over with with a friend, so will have an eggy breakfast to fill up.

I think I’ll freeze the left over chilli and have a bash at the cardemon chicken dish @BIWI posted instead.

Glad we’re back on track now.

@Jollyholibobs this is the recipe i use for the sheets. I make my own low carb Bolognese sauce to go in it cos i like mine!

I will say whizz the ingredients until they are liquid to get nice thin sheets and i love ricotta or mascaponi for the 'white sauce' bit. It is basically a big old Bolognese cheese fest 😁

I love your socks by the way! Love a good pair of socks.

1.5l of water down. Really feeling it this week, especially after another one of my clients has just complimented me on my weight loss and glowy skin! 3rd compliment this week!!

I'm going to visit my friend's Mum today. She just messaged me to say she's made macaroni cheese for our lunch 😱 I think I'll pretend I didn't see her text and take some salmon with me. Or pretend I got confused and ate before I went... If I recall correctly from visits years ago, this lady's macaroni doesn't even have much cheese in it. At least there's no temptation, I just need to find the most gracious of excuses.

@BIWI 1 cup is about 200g. I bought a set of cup measures ages ago from asda I think because i was baking loads and using some American recipes (post disney carb fest!)

It is absolutely delicious and the sheets can apparently be used to make a kind of caneloni type dish with spinach and ricotta.

Had an email from The Low Carb Food Company this morning, with their Christmas selection (as well as links to their shop). I've only ever tried their bread, which was good, but it looks like they've expanded their range significantly - now includes fresh meat as well as drinks and snacks and other interesting ingredients.

Their stuff isn't cheap, but could be worth a look.

I’ve had their chocolate brownies - utterly delicious. They are coconutty and very chocolatey without being dense or claggy. I ate about 6 in one go, which defeated the purpose of buying them, which is why I haven’t bought them again!

Afternoon everyone. Nice socks @Jollyholibobs very impressed with your skills. @venusandmars, hope you manage to swerve the macaroni cheese.

Had left over ricotta fritters for lunch, with a couple of pieces of artichokes in oil. For dinner I'm trying the chicken breast stuffed with mascarpone and garlic on the recipe thread. With FLGV obviously.

Can I ask a question about tofu? (not a sentence I thought I would ever write Grin ) Much as I am loving the high meat content of this woe, I am a bit mindful of the environmental impact of lots of animal products and have previously tried to have a couple of days plant based/ vegan a week. I'm choosing local, responsibly sourced animal products where I can, so that helps - but would like to try and have a couple of vegan days a week if poss.

Tofu seems relatively low carb so thought might be the answer occasionally (it's not exactly delicious and I've not cooked with it much before - usually gone chickpeas or lentils when doing a plant based meal), but I don't see much mention of it on the thread - wondering if there is something about it that doesn't suit this woe. Is it too processed? Any advice appreciated!

Thanks for the foil tray advice up-thread. (disassembled-kitchen V planet problems) It has helped and we have had a few (almost sawdust/plaster-free) hot meals. Back on the supermarket hot chicken with Greek salad this pm but feeling strong.

BIWI and all regular posters - thank you for your encouragement and humour and advice. I'm still here (slowly) losing and much happier in life because of you.

This is the warmest, most friendly and inclusive 'clique' we are ever likely to meet. :)

@Frenchpoodle I'm not really bothered about tofu - it's not massively processed compared to something like Quorn, which I really do object to! Just beware, though, that it will be adding carbs to your day, and check the back of pack as different brands do vary quite considerably.

@FusionChefGeoff - good luck with BWRT. I also started BWRT after @StuntNun's recommendation in the last Bootcamp (which was the first one I'd joined, and reversed my pre-diabetes!!). I've had 6 or 7 sessions (can't remember exactly) and that's a lot longer than most people with fewer "issues" than me would need. I sought therapy for anxiety, childhood abuse issues, new parent OCD amongst other things (and we kept finding more issues as we went on with the therapy sessions!). Honestly, as massively grateful as I am to this Bootcamp for reversing my pre-diabetes, I can never be more grateful to anything I get out of Bootcamp than I am for that one random recommendation for BWRT. I am not even slightly exaggerating when I say that BWRT has utterly changed my life.

Also to FusionChefGeoff - I'm similar to you in that I'm not very good at "deliberate" exercise (I go through phases of doing a fitness class once a week and now haven't been in over a month!). One thing I have done is to refuse to allow myself to use the car to get anywhere that will take me less than 30 mins to walk (such as the local shops). I also don't have a parking permit for work, which is a 40 min walk each way. I figure I have more luck working with my laziness rather than against it. If I have a parking permit then I have to fight my laziness to force myself to drive to work. Not having a permit means that even if I do decide to drive, I have to park a minimum of 10 mins walk away. Can you make a plan to park XXX distance from work, or anywhere else you go to on a regular basis? I got into a good habit of going for a walk after work on days I WFH but have got out of the habit with winter coming. Can you make a pack up lunch that you can take out with you to eat while having a walking lunch? I try to make walking my default method of transport so that I don't have to deliberately decide to do exercise.

On a different note, on a Gestational Diabetes group that I'm still a member of, I came across mention of people using lactose free milk rather than normal cows milk due to the lower carb content. Is this something that is recommended for bootcamp (or way of eating post-bootcamp), or is the carb content still not great?

@Frenchpoodle you could try adapting a recipe for agedashi tofu (you'd need a low carb flour) if you want to make something tasty with it.
