Sorry about your audition @GreeboIsMySpiritAnimal.
Thanks for the duck recipe @StuntNun - I should have cooked that rather than the version I attempted. I avoided yours because of the combination of orange slices and flour, thinking it would end up being too carby. (Oh, and I didn't have any sherry!)
Instead, I made an orange and cranberry sauce. A packet of dried cranberries, gently simmered in the juice of an orange, with a generous wodge of butter, and then the juices from the duck. (There were a lot, as it was one of those 'roast in a bag' ducks, which preserves a lot of moisture).
What I failed to check, however, was that the pack of cranberries I'd bought - thinking it would be much lower in carbs, as well as quite sharp, turned out to be sweetened. A massive 76.7g carbs per 100g - which was the whole pack, which I'd used all of
I reckon that made enough sauce for at least four people, and (once I'd tasted it and realised just how sweet it was) I had much less than I served to DH/DS1, so hopefully reduced some of the damage.
Turns out Sainsbury don't sell unsweetened dried cranberries. Who knew?!
Lesson learnt - and a reminder to all of us - always check the packets! You'd think I'd know that by now
.
@1stMrsF I served it with griddled asparagus, and savoy cabbage with onions, which had been gently braised in butter and white wine for about half an hour.
Overall I enjoyed it very much. It was this duck which was on offer at £7 instead of their normal £9. There was plenty for the three of us, and some left over. I might make some kind of stir-fry/noodle soup with that (with Bare Naked noodles).
