Low Carb Bootcamp - Week 8 - the last three weeks!

BIWI · 08/03/2021 07:45

Morning all.

The Spreadsheet of Fabulousness

Hope it's been a good week - lots of challenges going on! I challenged myself to cook something different with cauliflower yesterday as I was getting bored of the same old same old, and so found a recipe for Bang Bang cauliflower, which I adapted slightly to make it more low carb friendly. I shall post that later.

In the meantime, I hope that the scales or the measuring tape have been kind to you!

Here's to a good next week. Remember we only have three left, so if things are slacking a bit, time to get stricter again.

The other thing is, @nowlook, so many sign up and then never start, or drop out really quickly - it would look a bit desperate of me to chase them up!

But I'm interested that you felt that you couldn't come back. What do you think gave you that impression? It always worries me that these threads may seem cliquey, simply because there are many regulars who post so frequently.

Definitely not the cliquey thing, but like you I imagine it could appear that way. It won't suit everyone and I'm guiltier than most in dragging the conversation into general chat/banter.

No, it was rather that I felt I'd let everyone down and that I wasn't part of the group that was still koko. You know what it's like- if you don't look at the thread for a week (out of guilt because you're necking a bottle of wine a night and mopping it up with pizza), it's moved on.

I admire the posters who come back after a wobble.

prettybird · 10/03/2021 14:17

We had a lovely "virtual" meal last night with friends around the corner. We coordinated who would cook what, so I was able to ensure that it was mostly low carb SmileDelivered our respective contributions in the afternoon, set the table (with computer/TV screen at one end of the table) and dressed up properly for the evening. It was a great success Smile

I'll post up the recipe in the appropriate recipe thread for the Julienne Darblay soup that I made (adapted from a Roux Brothers recipe ie omitted the small amount of finely diced potatoes ) which is finished off with loads of butter Grin

In the mean time, here are today's earrings. They were a 31st birthday present from my parents and were the first piece of CRM jewellery I owned. Mum had initially bought me a bright green velvet jacket in my defence, that was fashionable at the time from a fancy mail order company (can't remember its name) but it just wasn't right, so I returned it and Mum got me these instead. I was working in Beverley/Hull at the time and was staying in the nurses' accommodation in Beverley (as I was working for the health authority) - which is why I can remember which birthday it was Smile

I'm venturing out of my cheese obsession in a last attempt to lose some bloody weight!!! Feels a bit weird (and expensive)eating alot more meat but needs must.
So just wanted to check on today's food
B. 3 egg omelette with mushrooms spinach and feta
L. 2 chicken thighs marinaded in oil and lemon with a coleslaw with dressing made from oil, peanut butter, siracha and coriander
D. Lamb steak with sit fry green veg

So the peanut butter is 7.9g/100 carbs and it was 1 tblspn between 4 serving and the siracha was a tsp so although I know they are potentially high carb I felt the amount in the serving would be low

I haven't updated the spreadsheet yet as can only do that from computer but irritatingly last week my lowest weight was 159 on Fri but Monday back up to 163 where I've been stuck for weeks!
I'm learning loads from the thread and intend to consider what I'm eating far more to try and get a grip!

BIWI · 10/03/2021 14:27

@nowlook - never feel guilty about chat and banter! These threads would be very dull if all we talked about was food, carbs and our weight! Grin

**

Because I’m puerile.

But yeah, BIWI is the Energiser Bunny when it comes to Bootcamp (was tempted to use the phrase Bootcamp Tart but reined in my own sexist and misogynistic language Grin).

On a more pertinent note—and I know I bang on about this all the time—I’ve been focusing on the WATER! and it’s making a difference to how I feel. No idea what the scales will say come Monday, but that’s less important to me than how I feel.

The weight loss will come if we KOKO. It simply will. On the interim, I’m looking at other measures such as inches, body shape, energy levels, clothes that fit again.

Tonight is either burritos (burrito bowl for me), salmon + FLGV, or FEND (fend for yourself—ready meals/leftovers for them, soup for me). I am not a restaurant and have been cooking my arse off this past week. I’m tired of it!

StuntNun · 10/03/2021 16:23

Welcome Unicorn you can dive right in. We've had a couple of newbies join in the last week or two. The Bootcamps run for ten weeks at a time but the threads keep going in between so there's always support here. A lot of us eat this way for life and stick around. I started Bootcamp in June 2013 so I'm coming up for eight years this summer!

Ninkanink · 10/03/2021 16:23

Hey everyone!🌼🌷🌺

Taking a bit of time away just for a few days as have got such a lot on, but wanted to pop in and point you all toward a lovely thread in case anyone needs a bit of cheer:

Duncan and Egwina

ListenLinda · 10/03/2021 17:09

It may be my hangover talking but I can’t wait to dive my face straight into a plate of pork belly slices with tenderstem broccoli & sprouts! Mmm

Ninkanink · 10/03/2021 17:22

💐💐 to @ListenLinda and @AthelstaneTheUnready. Keep well, look after yourselves.

FusionChefGeoff · 10/03/2021 18:03

Hi @TubbyUnicorn I am new too - just on week 3. I was seriously intimidated at the start but the recipe threads are amazing plus the daily menus that everyone posts are a great way to learn how to adapt your normal meals.

I reckon I'm well on my way now and I feel great! The first few days were ropey so drink insane amounts of water and have the occasional salt water drink to keep electrolytes topped up.

When that feeling goes it's amazing and the food, oh the food is simply incredible!

On that thought, @ShagMeRiggins talk to me about burrito bowls?? Fancied fajita type dinner soon but how do you turn it into a bowl meal?

Doilooklikeatourist · 10/03/2021 18:40

Well I have faceplanted into a glass of wine as our property sale has fallen through , 3 weeks before we expected to complete
Hey Ho , and I’ll stop after 2 glasses ( or 3 )

B smoked salmon and cream cheese ( millionaire breakfast )
L bacon and mushroom omlette
D 2 sausages , celariac mash , cabbage and mushrooms
@Ninkanink I love that story about the ducks , I ❤️ Ducks but our pond is only there when it’s really wet ( like now really ) and the ruddy foxes had all our chickens

Justcallmecaptainobvious · 10/03/2021 18:40

@FusionChefGeoff fajita bowls are a bit hit here! I shred lettuce (maybe cucumber etc too) and fill the bottom of the bowl, then add chicken strips, shallots and peppers fried in a fajita spice mix (cumin, chilli, garlic, oregano, paprika), a generous handful of grated cheese, then whatever combo of salsa/sour cream/guacamole takes my fancy! Pretty quick to prepare, really tasty, and the leftovers make a good lunch too. Alternatively, you could look at using something like little gem lettuce or blanched cabbage leaves if you really want to be able to wrap them up.

kilojules · 10/03/2021 18:43

Sorry for your losses @AthelstaneTheUnready @ListenLinda! What a tough year it's been!

Had leftover Cauliflower soup from yesterday and it was even better today!
So rich, creamy and tasty! The combo of cauliflower, cream cheese, pecans, tons of butter and crispy pancetta had me licking the bowl clean thinking how is this a diet?!
Will be making it again and again!

Dinner was extra yummy- spinach with Boursin, "shoogled veg" Grin (wanted to get with the crowd) And buttered garlic prawns

Now sat with my feet up after a long day watching with much entertainment my hubby and 10year old bickering over their first Hello Fresh meal prepGrin I'll have them cooking in no time paha!

FusionChefGeoff · 10/03/2021 18:43

Thanks @Justcallmecaptainobvious but I have to admit I'm sceptical about lettuce with hot food! I've never been a fan of eg lasagne with salad so I will give it a go but if there are any other ideas for Mexican based food I'm all ears..

Dailyhandtowelwash · 10/03/2021 18:46

Oh arses, @Doilooklikeatourist. How awful. Is there any remedy at all?

I've not been good enough at water the last couple of days as I keep forgetting. Probably 2l though, not totally failing. But food is OK I think. I'm at least having lunch but they are very grab and run.

Yesterday:
Lunch: tuna mayonnaise, cream cheese and mushroom toastie with SLC bread
Dinner: homemade lamb koftas, stir fried cabbage, baked aubergines in yoghurt and spices

Today:
Lunch: BLT with SLC bread
Dinner: Tom Kerridge's Cherry Tomato Stew, Duck Eggs and Crispy Beef, plus FLGV

Ninkanink · 10/03/2021 18:55

Fajitas - and any other tex mex style meal - wrapped in lettuce leaves is really good. As is crispy duck. Actually better than wraps/pancakes, IMO, because you get more of the flavour of the meat/veg/spices. Only one way to find that out though and that’s to try it...it’s probably worth having a go!

In fact lots of foods are delicious wrapped in lettuce leaves - those who are looking to try Korean, Ssambap is another great option for LC (obviously without the ‘bap’ - rice). Lots of variations on the theme to be had. My favourite is with bulgogi. And don’t forget the Ssamjang sauce!

nowlook · 10/03/2021 18:56

That's disappointing @Doilooklikeatourist Sad
Is there a reason or is it just a change of heart? Had you exchanged?

Hope you hadn't yet found anywhere else and that it doesn't throw you off your stride for too long Flowers

Ninkanink · 10/03/2021 18:58

You could try it wrapped in cabbage leaves instead I guess - if you steamed them whole.

AthelstaneTheUnready · 10/03/2021 19:02

what an arse, @Doilooklikeatourist. Is it potentially fixable, or is that it?

Jellycatspyjamas · 10/03/2021 19:03

@FusionChefGeoff I just do the fajitas as normal with opinions, peppers and the meat of your choice and pop it in a bowl with sour cream and cheese. I’ll either eat it like that or wrap in little gems, I’d usually have lettuce in fajitas anyway so it’s not that much of a departure for me, and very tasty.

Doilooklikeatourist · 10/03/2021 19:13

@Dailyhandtowelwash and @nowlook the buyer has suddenly realised that Covid has ruined sales ( selling a business / house and land ) and he needs to reduce his offer by over 12%
Luckily
A we hadn’t found anywhere to move to
B hadn’t booked a rental and furniture storage
We’re taking the weekend to mull it over , and make plans
We like living here in the summer anyway ( heads over to Sutton’s and plans what to plant in the greenhouse )

Doilooklikeatourist · 10/03/2021 19:22

@AthelstaneTheUnready no , not fixable , sadly

FusionChefGeoff · 10/03/2021 19:52

Thanks all - without the wrap and rice to bulk them out I'm going to need to cook much more of the meat mix!

nowlook · 10/03/2021 19:53

Booo @Doilooklikeatourist
Will he/ you accept an element of deferred consideration to reflect the fact that the revenue will take time to restablish? (10% of the purchase price payable in a year's time)?

Is this just a negotiating point?
