Morning campers!

Here's the Spreadsheet of Fabulousness for you to confess all

We're half way through now. Hopefully by now we should all be getting used to a low carb way of eating, which will mean we should be fat-adapted.

I hope you've enjoyed the recipe challenges, and I really look forward to reading more recipes.

I especially hope that the challenge has lured the lurkers out! Please post your recipes!

And, of course, here's hoping that we all have a good week ahead

Well done everyone there is some epic loses this week!

I shall KOKO. 0.4 down this week for me. I've had 4 glasses of red wine and a little bit of dark choc (2 glasses of wine over 2 nights and chocolate, a square a day for 3 days) so am knocking it on the head. My cream intake has also increased.. feeling the need for "normal" tea and coffees more currently. Herbal tea tastes.. well every watery! Just need to get back in to the zone 100%

I'm down 1.2lbs despite my guzzling a bottle of wine on Friday so I'm very happy with that!

Hallo sts but am okay with that. It's week 7 for me and I've also fallen prey to carb creep.

I had a bit of a revelation last night when I realised that although I thought I was drinking lots of water I definitely haven't hit 2.5 litres a day. That's 10 big glasses. I'm on my third of the day now. So I am optimistic that with lots of water, 10 000 steps a day and no dark choc/booze/almond butter, I should see a bit of a loss this week.

2lbs down for me, nice and steady.

I hope everyone enjoys the milder weather. It's made a huge difference to my mood and I've been spending a lot of time outdoors.

Ah damn! I fell back asleep after DS did his little nighttime waking... woke up at 6.50, mad rush to get both dressed and to nursery on time and back home to start work. Then had a coffee and greek yog before realising I hadn’t weighed in! Whoops.
Will do so tomorrow.
Congrats to all those who have lost & Flowers to those who haven’t
Hopefully we are all over the stalling period and we should all see some great losses this week!

@Iamnotacerealkiller have you tried the lowcarb almond muffins (with or without cheese? They are a lot simpler than faffing around with psyllium husk for low carb bread, and have a nice sort-of-bread texture to go with a bowl of soup.

@Dailyhandtowelwash if you've been eating according to the rules then that 2lb bounce back sounds like normal fluctuation. Don't let it dishearten you. I have meticulously been recording my Monday weight on BIWI's spreadsheet (including last week's increase), but on my phone graph I only ever record the lowest weight I have achieved. When my weight drops I add that to the chart (daily weigh-er here), if it goes up I ignore that until the next time there is something lower. It's the psychology that works for ME, and we all have to find our own way through.

I've had a 4lb whoosh! I've been feeling thinner all week and it's finally showed up on the scales!

Cup of ground almonds
30g cold butter (I grated it)
3 cold eggs
60g grated cheese (cold)
half tsp baking powder

Mix, put in muffin tin or paper cake cases, and bake in pre-heated oven, 180, for 12-20 minutes. I made 14 mini-muffins, cooked for 12 minutes. Larger ones would take longer.

I think that's right 🤞 recipe was on previous thread.

Forgot to take picture of the chocolate mousses that I made from @StuntNun 's recipe but this is evidence that they were well received Grin

We did muse whether adding finely grated orange zest might be a nice variation.

Weighed in 1 lb less on Frifay than I did this morning. Going to put this week as a STS and hope for a bigger loss next week. It's week 3 for me so was not expecting a big loss.

Would someone be kind enough to mark that on the spreadsheet please?

i'm loving this WOE, still following the rules and drinking more water than I've ever done on my life. I've given up alcohol for lent so hope that has a positive effect.

I think that would be lovely! If you like rose you could add that and make it reminiscent of a Turkish delight, which was what I had planned to do for our anniversary dinner but in the end I made quite a labour intensive meal so decided to skip them (should have made them the day before, or morning of!). We had a small serving of vanilla ice cream instead.

Here's the recipe in full - note that it's really important that all the ingredients are cold.

Re baking powder, I buy the sachets and one of those was just the right quantity

Low carb Muffins

1 cup ground almond (100g)
1 tbsp (30g) very cold solid fat such as butter or plant butter.
Three medium eggs chilled.
1 generous tsp baking powder

At this stage it can changed to be sweet muffins by adding in 2 tablespoons of sweetener with 1tsp vanilla extract

Or cheese muffins:
60g or a large handful of cold grated mature cheddar and some Chopped chives.

Pre heat oven to 180. Prepare muffin tin with paper cups.
The next bit needs to be done swiftly so things don’t get to room temperature, it’s the shock of the oven that makes them rise well.

If you have a food processor, blitz the almond flour with the butter briefly until just mixed. Otherwise grate the butter into the almonds. Add all other ingredients and blitz until just mixed. Spoon into cases. This should do 4, but the cheese mix often makes 5 smaller ones.

I reckon I could have stretched this mixture, with cheese, into 6

It’s about 14 mins in the oven but might need a little longer.

They are best eaten cold as they don’t come out of the wrappers easily when warm.

Next time I make them, I'm going to use Parmesan instead of cheddar, for more of a 'bite', and add some crumbled crispy streaky bacon.

Afternoon!

Haven't looked at the thread for three days because.... life.

Spent all my free time catching up. Thanks to the bereaved, and Gin to the non-sleepers. (One of mine was a non-sleeper - it was HELL).

I have new, posh scales (Renpho ones), as my old WW ones finally bit the dust. DH could get them to work if he jumped on them, but he is a lot heavier than me, and they stubbornly insisted I weighed 0lbs.

Anyway, DH established that the new scales consistently read 3lbs heavier than the old ones, so I've updated all my data on the spreadsheet to show my real loss.

STS this week, but was fully expecting it. Usually I gain a pound or two at half term, so this is an NSV for me.

I’m having a bath right now, trying to soak away angry/sad/self loathing feelings. Sometimes I just want to be an entirely different person. I don’t really feel like i want my particular set of strengths.

I want to be the type of person I admire and would aspire to be if it was realistic, but life and my particular set of cards has made that impossible.

I miss my daughters, who are far away.

Oh shit I misunderstood about the scales! See...couldn’t even get that right.😔 in any case a pound (or more) of fat lost is still a pound!🌷

Oh @ninkanink. I'm sorry you are feeling this way. You seem like such a kind and thoughtful person on these threads. I'm sure you have a lot of strengths that people admire that you don't see yourself. The pandemic and lock downs are hitting us all very hard. I hope you get to see your daughters soon xx

I think that all new scales make you heavier. Which begs the question: if I buy new scales every week, will I just keep getting heavier?
