Week 4 - Low Carb Bootcamp - how much chatting?!

BIWI · 07/02/2021 21:30

So much chatting, I've had to start a new thread.

here's the Spreadsheet of Absolute Fabulousness

Remember, this week (like week 3) is notorious for seeing little or no weight gain, so please don't panic if the scales aren't moving for you - always assuming, of course, that you have been following the rules 100%!

Also, the Very Amazing @StuntNun has started a thread about fasting. Fasting isn't a regular part of Bootcamp, but it's a tool that you can use in your weight loss 'journey' (sorry for the cliché!)

have a look here, and think about if it's something you might want to incorporate into Bootcamp

I hope very much that things are going well for you, and that you're into the swing of things low carb by now; but as ever, post any questions/issue here and let's see if we can help.

RIP Captain von Trapp, I was genuinely sad about that the other day, he was one of my first crushes.

It looks like I'm going to be doing an awful lot of walking over the next five weeks. My sheep came in for their pregnancy scans, I wasn't expecting much as I'd borrowed a Shetland tup lamb and while he was enthusiastic enough, there was a fairly significant height difference between him and my 2-year-old North Country Cheviots, so I thought I'd just keep the few, if any, he managed to get in lamb in the fields to keep feeding and put the rest back out to the hill grazing to save the grass in the fields.

Well bugger me, the randy little sod has managed them all but one and two-thirds of them are expecting twins! If I keep them all in the fields, my grass is going to be wrecked come lambing time, so they're all going to have to go back out to the hill and I'm going to have to take several kilos of sheep feed out to them each day. They do, thankfully, settle in one area, as it's several thousand acres out there, but the track isn't great and when it's this cold it turns to sheet ice, so I can't get the quad bike out there and have to walk up to where they normally are, which is about an hour each way. This is either going to kill me or I'm going to be in the best shape of my life by the time they come back in for their annual vaccinations in mid-March!

The question I have is what should I be eating to fuel an extra 2 hours of hillwalking each day? More fat, I'm guessing?

Ninkanink · 10/02/2021 18:18

I use frozen spinach - fine for stews and soups, and cabbage - fine for frying with lots of butter and garlic, and also broccoli/cauliflower - good for roasting, and for curried dishes. I find it really useful to have a bag of frozen mirepoix as well so that I can easily make stock/soup/casseroles. But I haven’t found any the last few times I’ve been out. Frozen peppers and mushrooms work well in pasta sauces. And the all important sprouts, of course!

Welcome @Sulusu!

The BSD is very different from Bootcamp, because it's more about calorie counting and it's not really low carb. Here, on Bootcamp, it's all about the carbs - but absolutely no calorie counting!

Frozen chopped onions are great too, and frozen chopped leeks!

Ninkanink · 10/02/2021 18:22

Any of the above veg can be added frozento an omelette too, if you’re short of time or have ended up with no fresh veg left.

You said it!!

Maybe a little more veg, and of course good sources of protein. But mostly your body will happily burn your body’s fat reserves (yay!)

@purplebagladylovesgin posted a recipe for low carb muffins on the fasting thread. Can be either sweet or savoury. I made the savoury ones this afternoon and they are absolutely gorgeous!

Recipe here:

Low carb Muffins

1 cup ground almond (100g)
1 tbsp (30g) very cold solid fat such as butter or plant butter.
Three medium eggs chilled.
1 generous tsp baking powder

At this stage it can changed to be sweet muffins by adding in 2 tablespoons of sweetener with 1tsp vanilla extract

Or cheese muffins (my favourite)
60g or a large handful of cold grated mature cheddar and some Chopped chives.

Pre heat oven to 180. Prepare muffin tin with paper cups.
The next bit needs to be done swiftly so things don’t get to room temperature, it’s the shock of the oven that makes them rise well.

If you have a food processor, blitz the almond flour with the butter briefly until just mixed. Otherwise grate the butter into the almonds. Add all other ingredients and blitz until just mixed. Spoon into cases. This should do 4, but the cheese mix often makes 5 smaller ones.

It’s about 14 mins in the oven but might need a little longer.

They are best eaten cold as they don’t come out of the wrappers easily when warm. I have my sweet ones with butter and sugar free jam, and the cheese ones with cheese slices and pickles.

And photo too! (The recipe did make 5 - I haven't scoffed the last one!)

Hi everyone.

I've been a bit quiet - we have ructions in the Christ household and the teenage DD and OH aren't talking. Fair to say it's tearing me up a bit.. I think lockdown is getting to us all. On the plus side I've lost 4lb since Saturday! I've still been eating so presume it's a combo of WOE and bad adrenaline.

I've scanned the chat but will read properly when my head can concentrate on it. KOKO doesn't just apply to food atm, but life in general currently!!

AWryGiraffe · 10/02/2021 18:38

I only get a delivery once a week too, I tend to have things that last well towards the end of the week - cabbage, leeks, peppers, courgette all seem to last fine.

Today was a bit of a rushed day, had slices of Gouda with cucumber and Mayo as a sandwich for lunch, and some soya tikka strips with fried cabbage, and roast peppers and courgettes for dinner. Feel full though!

StuntNun · 10/02/2021 18:51

Can confirm the low carb cheese muffins are the bomb. I made them in a silicone muffin tray so they came out easily when hot. DH and I had one each fresh from the oven, split in half and buttered, and they were lovely - just like cheese scones.

Ninkanink · 10/02/2021 18:51

Until recently we were only doing the one monthly shop and then the veg delivery, which I was getting every three weeks or so (so I could get the larger boxes with more variety). I generally use the leaves/salad veg/more perishable things first, then root veg and things like courgette/aubergine/peppers/squash/celeriac easily last 2 or even 3 weeks, then when they’re all done I use frozen veg to tide us over. But now I’m going to get the veg boxes either weekly or fortnightly.

ShagMeRiggins · 10/02/2021 18:59

An omelette with 7 children scans fine Shag

Actually, a very good point, nowlook. Plus, it’s funnier.

prettybird · 10/02/2021 19:04

Oooh - I have some silicone muffin tray that I have rarely used Grin I think I might rustle up a batch of cheese muffins Smile

Ninkanink · 10/02/2021 19:09

@ChristMyArse it is a challenging time in so many ways. Flowers Hope peace is restored to household soon!

I’ve felt antsy and frustrated most of the day today. Went out for a walk in the (proper, deep, wintery!) snow with DH this evening and it did me the world of good. Now I’m going to have a coffee (don’t even care if it keeps me up) and do some wish list shopping. I’ve had a terrible shopping habit in the past which I am trying very hard to beat once and for all and to that end I am not really supposed to spend on fripperies for the next 4 or 5 weeks (as I went slightly overboard and got lovely things in the Georg Jensen sales). I keep wanting to buy lipsticks, for some reason. Even though I have nowhere to go or be atm, and I don’t even wear lipstick unless I’m in the office. So I’m not going to get a new one until I actually have an occasion for which to use it!

Lyrata · 10/02/2021 19:10

Hahaha @ShagMeRiggins - that would be a cool mix. My mother is Scottish yes, but my dad is half Jamaican (on his father’s side). I always joke that my mum made sensible breeding choices, because her side are terribly pale and burn fast. My sister and I don’t have that problem but we’re relatively fair.

Unfortunately, nobody ever cooked me anything resembling Jamaican food - and both my grandparents on my mum’s side moved down to London when they were quite young so I wasn’t exposed to much Scottish food either (vibrant as, errr, that food culture is...). So culturally I may as well be English and my meals are more inspired by BBC Good Food than anything else!

nowlook · 10/02/2021 19:13

I bought some new Lisa Eldridge lipsticks last week Nink for no reason at all Confused

Ninkanink · 10/02/2021 19:15

Omg I love her lipsticks. I’ll have to have a look now...which ones did you get?

nowlook · 10/02/2021 19:25

pure excess Nink

cheeseisthebest · 10/02/2021 19:31

I have experienced a NSV. Just saw that lindt advert, you know the one with a beautiful woman in a jumper eating a chocolate and it just makes you absolutely crave a box of lindt, every time!

I just thought nah, no thanks. First time!! Grin

RagzReturnsRebooted · 10/02/2021 19:36

@StuntNun

Instead of a flounce how about we have a fight? I'll start... Avocados are nasty, slimy and tasteless, and celeriac chips are rubbish.
I agree with you about Avocados, but until you've tried my dirty fries I will fight you on the celeriac chips! I used to think think they were a bit meh, but having done them in the air fryer in a nice coating and then dirtied then up, I almost couldn't tell they were celeriac.
nowlook · 10/02/2021 19:36

Excellent cheese!

Ninkanink · 10/02/2021 19:36

😍😍😍 I’m so glad the warmer coloured collection is sold out! Lucky you, that’s a fabulous treat!

RagzReturnsRebooted · 10/02/2021 19:53

@ShagMeRiggins no I haven't added my recipes to the recipe threads. I kind of assumed that happened by magic (goblins?) Blush
I will do. I'm not sure which thread the fries will go on though, as they aren't vegetarian when you put bacon on them, but aren't exactly a meat dish either.
I froze two portions of celeriac fries so I can make them again at the weekend. Bleached, tossed in oil, froze 'open' then bagged up. Got 3 portions from one celeriac, at 250g per portion.

StuntNun · 10/02/2021 19:59

Ragz I can't peel celeriac without risk of serious injury to myself so I'm probably just jealous!

Pic of the low carb cheese muffins to convince everybody to make them. purplebagladylovesgin recommends one per day to improve blood glucose management so they're medicinal as well as delicious!
