Week 3 - Jan '21 Low Carb Bootcamp - time for Light?

Well thanks to all the chat, I've had to start this week's thread earlier than usual Grin

Here's the Spreadsheet of Fabulousness for you to declare all

You now have a choice: you can move on to Bootcamp Light, which means you can re-introduce nuts and seeds, some fruit and alcohol - all in moderation.

However, also bear in mind that weeks 3 & 4 are notorious for little or not weight loss and this is nothing to do with moving on to Bootcamp Light. It's just something that seems to happen.

So it's up to you. You can stay on Bootcamp if you wish, or move on to Bootcamp Light, or a hybrid - so you do Bootcamp during the week but relax into Bootcamp Light at the weekend.

Whatever you decide - good luck! Here's to a good week ahead.

Also loving the cat photos and the ones in a bag are a class way of capturing black cats - my old gentleman is black and I just can’t get a good photo of him.

Dailyhandtowelwash · 06/02/2021 17:29

I’m back to my usual small appetite after a week or so of lunch and dinner. It does come and go though and if I’m hungry I do eat!

Today:
Coffee with almond milk
Lunch: was going to have sausages but ate some leftover roast pork and was full after that
Dinner: will be Nigella’s Meatzza for the first time! Quite excited to try it. Will be leaving out the breadcrumbs/oats - is that what others have done?

VeryLittleOwl · 06/02/2021 17:30

Loving all the cat pictures! DH is not a cat person, so after my elderly one died, 12 years ago, we never got another. We do however currently have 2 dogs, 3 horses and 18 sheep, so there are plenty of four-legged companions about.

Made another vat of broccoli soup for lunch and have leftovers for tomorrow and Monday. Cheeseburger pie for supper Grin

NSV - I had to video myself this morning for an online horse training course I'm doing and even bundled up in enough layers to cope with -8 when the wind chill was taken into account, I'm still looking noticeably slimmer than I was. Or maybe standing next to nearly 600kg of cob helps!!

1stMrsF · 06/02/2021 18:02

I really love all the cat pictures!

I'm sipping a drink recommended by @BIWI - Havana Club with ice, two lime wedges squeezed and dropped in and topped up with soda. It's yummy.

Interesting article in the paper today about how difficult it is to spend time alone in lockdown. I am craving social interaction most but I realised that in normal times I would have more alone time so I went for a walk (in the rain!) by myself this afternoon. I really enjoyed it.

Loving the animal pics, I could scroll through them all day.

@VeryLittleOwl I think you have the life I want lol. What training course are you doing?!

RagzReturnsRebooted · 06/02/2021 18:39

Dinner, not entirely sure its low carb enough so will list ingredients and see what the Powers that BIWI say about it.

Meatballs in sauce
Served 4.

Meatballs x 2 packs of a dozen
Passata (1 carton)
Red pesto (180g jar)
Soft cheese (half tub)
Garlic granules, Italian herbs, pinch smoked paprika, salt, pepper.

All sauce ingredients stirred together in a saucepan to melt the cheese while I cooked the Meatballs then baked it all together with torn up Mozzarella on top.

I cooked kale and thin sliced courgette in butter and EVOO to go with it. It was divine and I'm fully prepared to be told it was too carby!

Also @VeryLittleOwl if you fancy sharing a picture of your cob it would be much appreciated. I really, really miss my horses!

Well done on the NSV!

ChristMyArse · 06/02/2021 18:41

@RagzReturnsRebooted jealous!

VeryLittleOwl · 06/02/2021 18:45

@ChristMyArse make sure your version of this life comes with central heating!! It's Connection Training, Hannah Weston and Rachel Bedingfield. I read the book last year and have been playing around with it intermittently, but signed up to the club last month as a Christmas present to myself so I could see all the video lessons and am now joining in with the Foundation course study group. The horses absolutely love it, even the ancient one came and joined in today and he's usually very sniffy about doing anything that doesn't involve grazing or snoozing.

Back on topic - DH only told me AFTER I was hunting fruitlessly through the fridge that my Heinz Seriously Good mayo, which is only 3g of carbs per 100g, looked off so he'd thrown it out at lunchtime. Have had to put the Tesco one in the pie instead, which is 11g per 100g. However, I've also added gherkins into the mince mixture and laced the top with strips of bacon, so can't wait to see how this one turns out.

StuntNun · 06/02/2021 18:50

The cheeseburger pie went down a treat. DH remarked that it was a little like lasagne so I might add some tomatoes to the mince next time to see whether that works. I thought it was more like quiche on a burger base! Unfortunately the mince I used was particularly coarse ground which affected the texture but that's Lidl for you! I also reduced the amount of Worcestershire sauce because I usually find it tastes quite overpowering. Is the cheeseburger pie nice cold the next day or should I reheat it for tomorrow's lunch?

B: nothing as I fast 16:8.
L: fried garlic mushrooms on low carb bread and then some pate on a second slice because I was still hungry. Also some kimchi, glass of kefir and a small piece of unpasteurised cheese. I have these most days to maximise my intake of fat-soluble vitamins.
D: cheeseburger pie and side salad with vinaigrette.

I'm bucking the lamb trend tomorrow by having roast shoulder of pork. DH makes the best crackling and then the family all fight over it.

Difficult to say without knowing all the carb counts of those things - what was in the meatballs if they were not home-made? Did they contain filler/rusk/breadcrumbs? That could make them carby. Equally, without knowing the carb count of the pesto etc.

Can you calculate the carbs and then work out how many you would have had in a portion?

I love the crackling, @StuntNun - but now that DS1 is back home, we fight for it! DH doesn't like it, so usually I know it's mine, and I have a stash of it in the fridge after we've had roast pork. I'm thinking I'm going to have to hide it next time, as DS1 had nicked the lot!

Hopeislost · 06/02/2021 19:00

Am planning our meals for next week - crackling and garlic mushrooms sounds lovely Stuntnun! I'm not fussed by roast pork but love crackling!

Might go and get a Valentine's M&S meal deal as a treat for upcoming V day. It looks like there are a few bc-friendly options: smoked salmon/sirloin steaks with butter/asparagus/cheese selection would make a nice menu! Maybe with some homemade celeriac dauphinois!

VeryLittleOwl · 06/02/2021 19:05

@ChristMyArse - having problems getting a pic to upload, think they're all too big! Let me try again with a smaller one. He's an 11-year-old 15.1hh Welsh x Highland.

prettybird · 06/02/2021 19:10

I'm waiting impatiently for the leg of lamb to finish roasting. I've done some celeriac chips for me to have while dh and my dad have roast potatoes.

I've made a low carb coffee creme brûlée (adapted from a recipe on Nigella's site but using erythritol in the custard and I'll use inulin for the caramel layer). If it's as good as the scrapings suggest, I'll post it up on the recipe thread.

Oneborneverydecade · 06/02/2021 19:12

Our black cat is also called Betty @BIWI

L: pulled pork with mayo in lettuce cups, plus some Leon chicken pieces with mayo
D: steak, braised sprouts and celeriac chips

Had a small taste of Sainsburys coronation chicken that DH bought for DS2. It tasted nice but v sweet, further evidence my tastes have changed

My amazingly talented mum is knitting me a chunky Wool and the Gang cardigan. I'll share a photo when it's finished. She can turn her hand to almost any craft but excels at sewing, knitting and quilting. I wish I'd inherited her skills

RagzReturnsRebooted · 06/02/2021 19:12

@BIWI OK so not that bad I don't think.
Passata 5g carb per 100g, so 6.25g
Pesto 6.5g carb per 100g, 3.25g
Soft cheese 3g per 100g and mozzarella is 1.3g per 100g so just under 1g for those.
The meatballs are from Morrisons and made with peak flakes instead of wheat stuff. 2.2g carb per 100g or 1.4g for 3 and I had 6 so 2.8g for those.
Adds up to 13.3g carbs.

RagzReturnsRebooted · 06/02/2021 19:13

Pea flakes, not peak! They're gluten free.

ChristMyArse · 06/02/2021 19:26

@VeryLittleOwl thank you!! He is lovely!!! I do love a dapple. I had a 16.3 full ID youngster who was full dapple. Gorgeous to look at arsehole of a horse only had him about a year. He had huge issues being turned out.. he would spin and attempt to double barrel you every opportunity he got.. not playful but absolutely meant. I also had a 16.3 chestnuts ID X TB for years. Fabulous boy. He got grass sickness at 14. Cried for weeks and still makes me sad to this day. I miss the smell of a yard and the warmth of a cuddle.

Sorry for the derail.. I will stop now 😁

BustleInYourHedgerow · 06/02/2021 19:45

B : Scrambled eggs and buttery spinach
L: Celeriac, leek and celery soup with some parmesan curls on top. I had two bowls, was hungry.
D: Ham done in slow cooker with a wedge of roasted cabbage on the side. Also some broccoli. Made a parsley and mustard sauce with some cream and sautéed shallots and stock from the ham. It was nice but sauce was a bit thin, wonder what we can use to thicken sauces?

Much water (over 3l), such weeing.
Green tea
1 creamy coffee.

Obligatory cat tax attached. All rescues, all very much loved.
