Welcome to the third week of Low Carb Bootcamp. As always, log your weigh-in on the Spreadsheet of Fabulousness. If you're happy with Bootcamp then you can choose to stick with it. Or if you want to relax a little and incorporate some fruit, nuts/seeds and dark chocolate then check out the Bootcamp Light rule changes on this thread and in the next post. Or you can do a hybrid: Bootcamp during the week, and Bootcamp Light at the weekend.

It's really common for weight loss to stop briefly around weeks 3-5, some people even gain a little weight. Google "week 3 stall" and you will see post after post from people on Atkins, Fast800, keto, after bariatric surgery all asking why they haven't lost weight this week. The simple answer is that you are losing fat but retaining water. The stall will last a week or two and then your weight loss will resume its bumpy path downwards.

I've attached a typical weight loss graph which shows a brief stall at week 4. As you can see, weight loss is not linear; it varies from week to week but the overall trend (shown by the black line) is ever downwards hence our saying that "the trend is your friend." If you follow the rules you can expect an average weight loss of 0.5 to 2lb per week.

I'd buy a boat load if my Tesco did frozen shallots. I hate the fiddly little feckers. Even the large ones.

Dinner was a quick but lovely mix. A peppered mackerel fillet, ham slice, lump of cheese, small spoon of coleslaw, celery, gherkin (2.1g per 100g), a couple of picked onions (6.1 per 100g) and a bit of mayo

Yes, Kale, Caesar!! Haha shag you do make me laugh on this group! It was very good. However, the sensible part of me was cringing as the male was raw (kale is really difficult to wash/sanitise and therefore often microbially filthy - hasn’t been a problem historically as it’s usually cooked but more and more people are eating it raw / putting it in smoothies so the food industry is concerned). I work in food safety / produce decontamination (hence being in a strawberry field in Florida) and don’t eat kale raw for this reason! Kale and coriander have had the highest microbial counts of anything I’ve ever tested...

This evening I will be dining on salmon and bok Choi. It’s a monster, I’ve never seen one this big in the UK! I’ve only got a microwave and a single hob so I’m going to microwave the salmon fillet (it has no skin and the hob is a bit all or nothing so I don’t want to destroy the fish). Any advice on how long salmon fillets take in the microwave? I don’t cook with one much at home.

No advice about nuked salmon but...

don’t eat kale raw for this reason! Kale and coriander have had the highest microbial counts of anything I’ve ever tested...

I’ll not be having the Kale, Caesar! after all. Yikes.

I’m going to make it with cooked and cooked kale :-)

The problem with kale is that it has quite a long growing period so biofilms grow on the leaf surface and trap bacteria. Also it’s really light and hydrophobic so when it’s washed prior to packing it floats and the chlorinated water designed to kill the bugs doesn’t get great contact because it just seems to repel it. But it’s really good for you and it’s very tasty ... and lots of people do eat it raw.

I have a great food day today, planning is paying off unlike the weekend when I was an arsehole.

B - spinach, egg, tomatoes
L - smoked salmon salad
D - chicken fajitas minus the carby bits

One lite of water down already.

And I have caught up on sleep and I have time for the gym today. My back is still in agony so I'm going to try some stretching and posture stuff.

Thank you for all the laughs today, i think that Shag’s slut drop will become my preferred method of emptying the dishwasher 😀

As for the kale I made Kale crisps yesterday, obviously cooked, but will definitely avoid raw , I quite dislike the stuff but it is often in my odd box, so have been trying to be virtuous and use it, best way is mixed in with cabbage, then smothered in butter.

Anyway I was up a lb on yesterday, which I think was due to the salt on the kale.

I've got a complicated week ahead: Wednesday, Thursday, Friday I'm running a training programme and staying with friends. Friend is very understanding but her dh who is the enthusiastic cook will be pushing the boat out... Plus choices at the training location tend to be hearty vegetarian / vegan. Will load up with low carb high fat treats and take a secret stash of butter! Plus when I get back on Friday night we've got a family dinner at a very nice restaurant - tasting menu, so no choices there (except to say no to bread and pudding).

However, for me, this is a way of eating for life and sometimes life throws in a week like this. I just have to do the best I can. The good thing is that after eating like this for a long time I'm not really tempted to throw caution to the wind. Deserts seem sickly sweet so I'm happy to avoid them. I can eat two chips and notice that they're not really worth it. I can even pretend to ignore the glorious smell of toast. My downfall is crisps and similar snacks (which I'm pretty certain will be on offer at my friends'). I'm going to take some wasabi seaweed thins and smoked almonds so at least there's a better option. I know the smoked almonds are a bit carby, but I can eat a few and it avoids the 'snack envy'.

So today:
B - fasting till lunchtime so just water and herbal tea
L - egg mayonnaise, salad, avocado
D - salmon wrapped in thin pancetta with FLGV (whatever arrives in the veg box).

To microwave salmon, place in a bowl, drizzle with olive oil and some lemon juice, season and then cover. Nuke on high for 2 minutes. That's for one fillet - increase the time slightly for more. Always better to undercook than over.

Searching for the recipe I used last night (smokey roast chicken with chorizo and potato celeriac), I couldn't find it, probably because it's in the latest edition of Olive magazine, and they'd rather that people buy the magazine rather than nick the recipes for free from the internet!

But I did come across this - 43 recipes for cauliflower

They're not all low carb, of course, but there are some lovely sounding/looking recipes there - I especially like the idea of cauliflower rarebit.

Ooh, cooking advice! I have a bag of cauliflower rice lurking in the freezer since last time I did this. Can you stir fry it from frozen, anyone? I have never actually cooked with it.

I haven't tried doing it frozen, but I think it might get a bit soggy? Takes not very long to defrost though - tip it into a sieve and leave in the sink for a bit, then break up the clumps with a fork.

I used it last week to make a sort-of pilau rice - sweated some shallots, ginger and garlic in a saute pan, in plenty of oil, along with turmeric and ground cumin, then turned the heat up when I added the cauli rice, gave it a good stirring for about 3-4 minutes, and it was done. I think I also squeezed some lemon into it.
