Jan '20 - Week 3 Low Carb Bootcamp - Ready for Bootcamp Light?

Welcome to the third week of Low Carb Bootcamp. As always, log your weigh-in on the Spreadsheet of Fabulousness. If you're happy with Bootcamp then you can choose to stick with it. Or if you want to relax a little and incorporate some fruit, nuts/seeds and dark chocolate then check out the Bootcamp Light rule changes on this thread and in the next post. Or you can do a hybrid: Bootcamp during the week, and Bootcamp Light at the weekend.

It's really common for weight loss to stop briefly around weeks 3-5, some people even gain a little weight. Google "week 3 stall" and you will see post after post from people on Atkins, Fast800, keto, after bariatric surgery all asking why they haven't lost weight this week. The simple answer is that you are losing fat but retaining water. The stall will last a week or two and then your weight loss will resume its bumpy path downwards.

I've attached a typical weight loss graph which shows a brief stall at week 4. As you can see, weight loss is not linear; it varies from week to week but the overall trend (shown by the black line) is ever downwards hence our saying that "the trend is your friend." If you follow the rules you can expect an average weight loss of 0.5 to 2lb per week.

Yesterday seems to have been a challenge for a few people! Me too - spent a good hour of the drive home mithering on about whether to stop and buy a bottle of wine after all. Would have been a stupid decision for me, but the pull was strong...

Anyway, didn't, but had far too much cream/cheese in a leek&broccoli&cauliflower cheese dinner instead. Feeling a bit round today.

B: creamy coffee
L: no idea yet
D: slow roast lamb shoulder with plain leeks and some of StuntBun's fabulous roast broccoli stalks

AthelstaneTheUnready · 02/02/2020 07:27

Ah, love a good game of Freezer Roulette, waspfig Grin

HouseTornado · 02/02/2020 07:30

Chips, all I could think about were chips yesterday!

Athelstane I've given up the lovely wine, as I know I can not do this and moderate the drinking, I'm too weak...and I have 4 stone to loose...

I'm still on BC so probably shouldn't have had Braizil nuts but just fancied a bit of texture.

I'm going to make chicken and mushroom stroganoff later, with lots of cabbage as well.

Fingers crossed for a loss tomorrow to keep me motivated.

Rayna37 · 02/02/2020 07:31

I've got a great recipe for chicken Kiev which uses Parmesan and ground flaxseed as the coating and it worked very well, fried easily without sticking to the pan or falling off the chicken; should work on scotch eggs too. I'll post it later on the recipe thread.

Fell wildly off the wagon at my conference after a dull start and difficult half hour dying for a wee but at the wrong end of an enormous room to creep out. However, Lots of water drank, good proper dinner of steak, celeriac chips with kale and fried courgettes and a small glass of red to end the day.

venusandmars · 02/02/2020 08:52

Breakfast was M&S Greek salad - so much better than the hospital carb fest of porridge, White bread roll, jam!

Yes, I'm still incarcerated here. Nothing too serious, just stuck in the loop of a hospital protocol that can't let me go until X, Y, Z has happened.

Bless dh though, who brought me M&S food, prawn cocktail and salad yesterday, avocado for lunch today. And fingers crossed that this evening I'll be home with a glorious plate of creamy scrambled eggs and smoked salmon.

Have to say that all the NHS staff I have encountered on this mini-adventure have been amazing. They are cheerful, helpful, Dr's were happy to give detailed explanation and I can hear nurses and care staff being so kind and gentle with a confused elderly woman (not a description of me). Flowers and 🙏 to everyone who works in the NHS 😷🤕😇

MrsBertBibby · 02/02/2020 09:35

Crap yesterday, we had domestic disharmony of the highest order and I ended up not eating at all, really.

How bad is it not eating? My appetite is tiny generally now, I read the meals you lot are putting away and my mind boggles. Most days I manage some lunch, but eating in the evening is a real struggle.

Notwatchingtvtoday · 02/02/2020 09:48

Have had a lovely weekend, but not sure how the scales will be on Monday. Food has been best choices as eating out, not the home cooked that is so much easier for this woe but I really enjoyed eating out somewhere new. The scales are showing 2lbs on overnight and I wonder if it is water retention.

Going to have a good day today and keep fingers crossed for better weight tomorrow.

B Total Greek yogurt, Tsp cream, raspberry crumbed and tsp Linwood flax seed mix
L buttery scrambled egg and avocado
D roast chicken, celaric mash and broccoli

3 litres water

Notwatchingtvtoday · 02/02/2020 09:48

venus hope your okay and home soon

BrassicaBabe · 02/02/2020 10:05

venus hope you are better, signed off and on your way soon. You are right, NHS care is good. But NHS food is beyond Envy in my experience too.

I've seen a 4! 10.4.6. Claiming that for tomorrow's SoF. Technically that's only half a lb off this week and I was alcohol free for 6 of those days! Something is wrong. Just last year that long without wine would have equalled a serious whoosh! I'm nearly 47. I feel my metabolism is seriously slowing. So Sad but Smile to see the 4. And even more Sad when I look at my diary and compare weight from jan 18 and 19. Ok. Kick up the area and onwards!

Mimosa1 · 02/02/2020 10:32

@venus wishing you better

@mrsbertbibby I too have seemingly put on 2lbs overnight after a meal out, but mainlining water hoping for a better weigh in on Monday!

I forget who was doing C25k but I've just done run 1 of week 3 after a 2 week break and boy! I set up at what I thought was a normal jogging pace but felt awful on the first run so I shuffled along for all the others. You could have passed me at a brisk wash but I finished though! Would love to hear how others who are doing it or have done in the past have found it.

Food yesterday:

  • b - LC toast with dairylea
  • l - lamb rump with cabbage and kale and sauce vierge (capers and herbs finely chopped into a paste, oil and vinegar - yum). I was till hungry so ordered a side of green salad and buttered Brussels and chestnuts
  • s - 2 sq dark chocolate
  • d- spanakopita but I mostly picked at the inside, and dinner was aubergine parm! I was at friends for dinner and felt quite lucky it was mostly LC. I had 1 glass of red and turned down the chocolate desert.

Looking back it was day of lots of food but it was all delicious and satisfying.

Mimosa1 · 02/02/2020 10:37

Brisk walk

BrassicaBabe · 02/02/2020 10:59

Dossing in bed watching The Magic Pill on Netflix. Half way through but cheering along with it

MrsBertBibby · 02/02/2020 11:14

mimosa dairylea is quite a bit carbier than proper cheese, (cheese generally is just a trace, whereas dairylea is nearly 5g. I'd ditch it in favour of gouda, or cream cheese. They're less processed too.

Mimosa1 · 02/02/2020 11:31

Gaah thanks for that @MrsBertBibby I never checked ! We always have it in the house as the kids like it but I'll replace it with cheddar or cream cheese.

MrsBertBibby · 02/02/2020 11:53

Gouda is lovely for that softer, creamer, meltier texture than cheddar, I find. It's actually cheaper to buy it sliced (well it was last time I looked). I love it on toast for breakfast, (obviously not now!) And it's very nice rolled up with coleslaw as an emergency lunch.

prettybird · 02/02/2020 12:53

I'll post these in the low-carb products thread but they are lush Smile Unfortunately Dh also likes them so I have to share Hmm

90p a bag in Sainsbury's - but difficult to find (at least in my branch) as they don't have them with the rest of the pork scratchings type products but have them hung in random strips on the edge of the shelves down random aisles Confused

Survived the fondue—what a great night we had! I bloody well love entertaining, especially as with experience I’ve learned how to do it on my terms so I’m not exhausted and stresszilla about how things are done.

Wanna help run things out to the table? Yes, please! Clear the table? Why yes, everybody jump up if you like! We didn’t think to offer beer, oops, but sure Guest Neighbour Man, pop over to yours and come back with 8 cans rather than have us nip to the shop? Fab! It helps that we know each other well but it’s just nice to accept a teeny bit of help from everyone. Love our friends.

Anyway, BrassicaBabe here’s a link to the Beef Broth Fondue recipe and I can not recommend it enough. The compliments were many and one of the male guests asked me for the recipe, which doesn’t happen often, if ever. Hmm

Worth noting that instead of worrying about making a beef broth I used 2 x 400g can of Baxter’s Beef Consommé, which is 100g less than the recipe requires but didn’t make a bit of difference.

Also worth noting I put in a bit of extra Bay leaf and that I did bother to grind the pepper because that does make a difference.

Finally, I covered and let it simmer for an hour or two rather than serving immediately. I reckon it would make an amazing marinade for steak or chicken, so plan to try that with the leftovers.

The recipe doesn’t call for straining the bay or garlic head so I didn’t, which was funny when our Fondue Virgin guest was retrieving his steak slice skewer from the pot, noticed the half head of garlic, and mistook it for someone’s food, asking around who it belonged to. Grin

ShagMeRiggins · 02/02/2020 14:19

Here’s a photo of the consommé I used. It’s 1.2g per 100g, and only 4.8g per can.

For those asking previously about good soups for LCHF, I started thinking this could be a soup on its own or the basis of a Fondue Soup if you wanted to heat it then add in some thinly sliced mushrooms and courgettes or whatever is leftover for an extra few minutes. Just a thought.

Brassica, for the cheese fondue itself. Well, see photo attached.

In the past I’ve faffed and fiddled and grated emmenthal and purchased kirsch that I use for nothing else. Then I strolled by the cheese section in Waitrose and saw this, one pack serves two people.

It’s literally open it, dump it in a sauce pan, heat it, eat it.

It’s 4.8g per 100g, it’s delicious, and I’ve never looked back.

Final fondue post—I think— with apologies to the non-fonduers amongst us. That’s kind of how I feel about the running talk, sorry, but I do read them so I can genuinely say well done and “yay the runners!” Grin

Anyway, inspired by the hilarious Condiments Thread from this week, I thought “Why in the world have I never tasted Truffle Mayonnaise? How have I missed this middle class phenomenon?”

Sent husband off to Waitrose and, behold!, a whole new love has awakened in me.

Served it as a potential accompaniment to fondue beef, fondue seafood, fondue veg...

Happy to report it worked with everything.

It’s quite rich and I wouldn’t use an otherwise beautiful meal as a Truffle Mayonnaise Delivery System for the sake of it, but I’m loving it.

Not cheap at £4+ for a 181g jar, but only 1g carbs per 100g. Decadent.

I’m loving all the fondue chat, am seriously tempted to do one. I think dd would love it, she polished off an entire warmed Camembert Christmas. Those waitrose pack look ideal.

ShagMeRiggins · 02/02/2020 15:11

“StuntBun”

venusandmars get well soon. Lovely that your husband supported you with delicious LCHF food. Mine would do the same. He’s not a bastard, y’all!

MrsBert domestic disorder of the highest order sucks and I can relate to loss of appetite. For which I once congratulated myself when I noticed that I had—finally!—become someone who does not eat when she’s upset, rather than being someone who ate everything in sight on such occasions. I don’t think either is particularly healthy, by the way, but one of those responses does make us fatter. Confused Hope all gets ironed out soon.

waspfig I love that you’re having your Christmas ham now Grin

So tired of scrolling up on phone but a big shout out to the sauce vierge mentioned—reminded me of my deep love of capers and I’ll be making it with the next fish dish instead of just butter or whatever.

Also a big shout out to the dairylea info—I had no idea it was carbtastic, I guess because I don’t eat it—but now I know Gouda is creamier than cheddar I’ll be mixing up a few things when cooking. My mother loved Gouda and we happened to have it with the Raclette last night.

(Erm, have I mentioned we had a last minute Raclette decision in addition to three fucking fondues, four if you count the chocolate fountain? Anyway, we did, and it was also great fun and yes we had Gouda hanging around because my husband bought it at Aldi when I had asked a few weeks ago for Gruyere for lasagne but never mind.)

Anyway, yay the Gouda! Do y’all pronounce it to rhyme with cow or to rhyme with soup here in the UK?

Someone last night pronounced it to rhyme with cow—Gowduh—and I thought, eh? That’s not what I call it, but wonder if that’s due to French heritage. (Okay, okay, it was the Fondue Virgin who pronounced it that way and he is also lovely Get Beer from My House Next Door Man.)

WATER!!! #stoptalkingaboutfondue

ShagMeRiggins · 02/02/2020 15:14

Rshard go for it, and don’t forget the chocolate fountain. Like children have.

We purchased ours at a Scouts’’ jumble sale for about a quid. Adults are delighted to be presented with a chocolate fountain.

BrassicaBabe · 02/02/2020 15:14

Great fondue chat shag Grin Mu closest Waitrose is miles away. But Amazon sell those cheese packets! Winning! And love the idea of the beef one. I've saved that recipe and bunged a consomee into my Tesco basket. I take it you kind of boil the meat/prawns as you dip them in? The only fondue I've done other than cheese has been oil. So you fry stuff. But generally adults booze and boiling oil is a bad combo! Shock

Rshard · 02/02/2020 15:19

Ah amazon for the fondue kit! Thanks brassica.

I’ve lost count of how much water I’ve drank, would it hurt to have an extra one so I’m covered.
No such thing as too much water surely? Would be an extra half litre so not masses
