two suggestions for you. yes you can make your own nut bars. i used to make my own bars and granola out of whole nuts.
Just use a nut butter as a base and add what you want. i used to use, ground almonds, coconut for sweetness, whole hazelnuts and some beted butter to bind it all together. you will need to experiment with the consistance and it maybe a bit crumbly but its delicious!
For savory. i developed a phyllum husk wrap what is very versitile. you can use it as a traditional wrap or cut it up into a salad instead of pasta. its very very high fibre so you will need to drink lots of water with it.
Each wrap is two table spoons of egg whites (i buy the packs in saisburies to avoid having to use all the yolks) one table spoon phyllum husk and two tbs milk/water
make sure you buy the phylum husks that still look like seed husks not the powdered stuff.
quickly add these together (the phylum will start to gel very quickly)
once it starts to thicken slightly pour into a hot oiled pan and cook pancake style. you will probably need to smooth it out using the back of a spoon. flip a few times until cooked to your liking.
they are about 4/5g fibre per wrap. they freeze ok too. making them is quite a pain as the phylum mixture sticks to everything and is annoying to clean so i will usually make a load at once and freeze them in a stack with greese proof paper between.
I also came up with a decent phyllum husk quick bread if anyone is interested for week 2 (contains ground almonds) but this is really best warm so may not be practical for your walk unless you want to experiment. I always try to make recipes as simple as possible so usually modify them to reduce ingredients and make them faster to make.
I use it for when im craving garlic bread, pizza or need something bready to dip into eggs, the texture is similar to a foccacia. Im planning to make this today to help things....move along so to speak :)
