Morning all!

Here, for the last time this Bootcamp is the Spreadsheet of Fabulousness

Hopefully the scales will be kind to you for our last weigh-in!

For those of you that are still here - even you lurking at the back! - it would be great to hear how much you've lost this Bootcamp.

And also, we'll keep this thread going for chat - when it fills up I'll start another general low carb chat thread.

Just checking in to do food, this week is strict as I'm on bridesmaid duty on saturday and off to Brittany for the rest of the month on monday (seafood, meat, french cheese, beautiful market veg, super coffee machine so will be sticking to bc with a moderate consumption of wine/g&t)

B: super size coffee with cream and almond milk
L: cauliflower, cheddar and cherry tom (3) bake with butter
S: courgetti carbonara made with pancetta, egg, cream, parmesan and mushrooms
Will probably have a tablespoon of organic natural peanut butter

All that is around 16g carbs so space for a little strawberries and cream if i want.

Here is a recipe for homemade Coyo, it costs about a third of the price if you make it yourself. I have posted it on the recipe thread too.

Coconut milk yoghurt in the slow cooker (homemade Coyo)

Ingredients
4 x 400ml cans coconut milk (look for one without xanthan gum, stabilisers, sodium metasulphite etc.)
2 x 125g pots Coyo OR 250g saved from previous batch OR 6 probiotics capsules
1 tbsp good quality vanilla extract
1 sachet gelatine (or 2 sachets if you want a thicker 'set' yoghurt)

Method
Put the coconut milk in the slow cooker for 2.5 hours on low.
Turn the slow cooker off and leave it off for 3 hours.
Add the Coyo / saved yoghurt / probiotics, the vanilla extract and the gelatine.
Mix thoroughly, preferably using an electric whisk.
Wrap the slow cooker in a couple of bath towels and leave for at least 12 hours (switched off).
Stir thoroughly. If you have lumpy bits of gelatine you can put the yoghurt through a sieve.
Refrigerate to complete the thickening process.

Nutrition
192 kcal per 100g
Less than 2.5g carbs per 100g (some will be broken down by the yoghurt-making process)
20g fat per 100g

Cost
At £1.99 for a 125g tub, Coyo works out at £1.60 per 100g
Making this with a Coyo starter works out at 55p per 100g
Making this using 250g saved from the previous batch works out at 39p per 100g (including saving 250g for the next batch)

Oh just a quick thought, if you aren't avoiding dairy then you can use any live yoghurt as a starter, it doesn't have to be Coyo. That would save a few pennies.

Thanks BIWI,

Gluten-free almond meal crust
2 cups ground almonds
1 garlic cloves, pressed
1 tablespoon minced fresh thyme
½ teaspoon salt
¼ teaspoon freshly ground pepper
? cup olive oil or butter
1 tablespoon and 1 teaspoon water

Bake till starting to brown lightly then fill.

I filled it with feta, cream, egg and asparagus but I've also made it with purple sprouting broccoli and smoked salmon or goats cheese and rocket. I want to try with gruyere and mushroom next. I've made it both with butter and olive oil, both are great. With regards to amount of filling, it's a bit made up so have a play!

I've made coconut yoghurt before but bought a specific starter bacteria. I seem to remember people saying that using a non coconut starter wasn't so effective as the bacteria were looking for milk sugar to feed off of and coconut milk has none, think I'll give it a bash though. Can't hurt. Thanks Flowers

Gcalgske the Coyo worked fine as a starter so I'm going to start each batch with 250g saved from the previous batch. That's what I do with the dairy yoghurt I make and I just get a new starter every six batches or so. A smaller quantity of starter would probably work too but I haven't experimented much as it took me quite a few tries to find a method that worked and the failed attempts were quite expensive.

I'm very happy today as the scales have dipped below 10 stone so I no longer have a stone still to lose! 13 lb and 15oz to lose sounds soooo much better!

So lovely new for the BIWI family.

First, my dad is slowly improving, and will be moved into some kind of interim care/convalescent facility. He's been in hospital since Father's Day, and the doctors evidently didn't expect him to survive at all, so that's really good news. A long time till he'll get home (which hopefully he will), but much more positive news.

And - we're off to Australia for Christmas/New Year to see DH's nieces and family - along with SIL and BIL. And because we're all going to be together, one of his nieces and her partner have decided to get married while we're there! Grin Grin Grin

Which has thrown a rather sharper focus on my weight. I have 20 weeks until we fly out, so will be doing my own personal Bootcamp from now.

Started yesterday, with:

B - nothing (am trying out intermittent fasting, meaning that I skip breakfast wherever I can/I'm not hungry)
L - M&S nibbles (on a train) - sun blush tomato and mozzarella, one mini cheddar stick, two hard-boiled eggs and spinach
D - roasted Toulouse-style sausages (2) with roasted cauliflower, shallot, red and yellow peppers, chilli and garlic

2 squares of high cocoa chocolate - the last pieces in the cupboard, so it's gone now!

Forgot to think about how much water, but drank at least 2 litres yesterday - along with a bucketful of coffee (too much)

Am not weighing until Monday, as I've had a horribly carby last few weeks (on and off).

That's wonderful news sbout your father, so glad he has been improving you must be over the moon. And a lovely wedding to look foward to, I've got one on saturday and they had to take my bridesmaid dress in

Food today will be when i can be bothered to move from my bed:

B: huge double coffee with cream and almond milk
L: m&s chilli squid and tandoori prawns with yogurt dipping sauce pot (new obsession check it out) + m&s protien pot eggs and spinach

For supper i am making spinach and ricotta lasagne with aubergine and courgette in place of pasta

Just got back from my "you need to come and see us asap, there is something wrong with your bloods" panic stations GP appt (side note, why do this to someone with chronic anxiety?!) My cholesterol (general, no hdl/ldl split, i forgot to ask) is up to 8.4. Cue my crap explanation as i'm awful put on the spot about anything, and dh (who doesnt get lchf) 'telling tales' on me to the gp Hmm

Got the expected 'usual advice is 1-2 eggs a week, grill meat, steam veg', though she did say she would read up on ketogenic/autoimmune research and to do what i find best for me, while dh pulled 'i told you so' faces at me.

Meh.

Beyond don't they drive you nearly to murder! I got a similar call last year only it was kidney function. It was one of the docs who rang and insisted that he couldn't discuss it anyway but face to face and couldn't give me an apt earlier than a fortnight away! I spent a fortnight planning how I'd manage dialysis and costing out funerals only to get there and see my usual doc who basically called him a pillock and said that if he'd looked back he would see that my bloods did this! Seems it was due to my FMS. She said that it goes up if I have my bloods done in a flare and it goes back down. So long as it goes up and down and not up and up shes fine with it"! The other chap had scared me so much I think that I'd have gone down and punched him if he'd been on duty that day!

I stopped my statins some months ago and my cholesterol had gone up to an all time high of 8. I couldn't get the doc to discuss the ratios and had a sneaky suspicion that he wasn't too sure himself but I let myself be badgered into going back on them. With having the cognitive probs that come with FMS I don't do well in any sort of debate and it was easier to agree to try them for 2mths. To give the bloke his due, he did say that diet had bugger all to do with cholesterol and to eat whatever suited me as I looked great and everything else was fine. Grin

I was away on holiday last week and also, sadly, had a miscarriage, so boot camp went out the window. Sad Returned home early from holiday as our hearts weren't in it any longer, and determined to get back on with boot camp and see it as looking after myself. Looking at the recipe thread for inspiration as I make shopping list up.
