We filled up the last thread and we still have 3 weeks to go until the next official BC so here is our new inbetween BC thread.

Link to previous thread

So, I was good yesterday and now all of my confessions are lost on the previous thread Grin but I am going to carry on with daily weighing and food recording so this morning I weighed 225 lbs.

Does anyone have a low carb thai green curry recipe?

DarkEvilMoon · 25/04/2015 12:47

I fitted in a pair of trousers that have been too tight for a while this morning. Only thing is i am not sure if it is cos I have shrunk or if the lower pain levels means I can tollerate things sitting more fitted. Although i am not sure it matters as both means I win Grin

Wombat22 · 25/04/2015 14:20

Hello everyone
I got weighed this morning and 5lbs down since Monday. V pleased. KOKO Smile

DramaAlpaca · 25/04/2015 15:10

Down 2lb on the scales today Smile

B: 2 fried eggs and some grilled pancetta. Yummy. Was a late breakfast & haven't felt like having lunch yet.

Heman I used to get the shakes from not eating as well & would need a sit down & some chocolate to sort me out. Haven't had that since starting low carbing. I can easily go 6 hours plus without getting wobbly which I could never do before.

BerylStreep · 25/04/2015 15:51

Well done Wombat and Drama - it's great when you start seeing results.

Nappy have you found the bootcamp recipe thread? Just search for thai and I'm sure there will be a recipe. There is also the recipe section on MN which you can search for LC recipes on.

TheHappyCamper · 25/04/2015 16:52

nappy I made a thai green curry this week with just a tiny jar of paste, tin coconut, half an onion, half packet of green beans, a bit of chopped green pepper and garlic. Added cooked chicken at the end. It was nice.

I have survived my lunch out. We went to Morrisons in the end. I had a half roast chicken with salad and coleslaw. I ate the skin and about half the coleslaw because it tasted like low fat type stuff! There was no dressing for the salad unfortunately. Quite good overall I think Smile.

Well done on the losses ladies!

BIWI · 25/04/2015 17:06

Oh! Blush I hadn't realised there was a new thread. I thought you were all a bit quiet! Grin

I have people coming over to dinner tonight, and am doing a sort-of low carb meal.

Starter is home-made vegetable and tomato soup, made with onion, carrot, celery, leek, tomatoes and chorizo. Will be served with a swoosh of cream, some very finely diced, fried chorizo and deep fried leek shreds.

Main is slow roasted leg of lamb, with celeriac fondant and griddle asparagus

Dessert is what I hope will be a lovely, but low carb thing.

I made 'pastry' shells out of almond pastry (the pastry used for the shallot and gruyere tart, on the recipe thread), to which I added a teaspoon of cocoa powder. Baked them blind and left them to cool in the oven, so that they dried out even more.

Filled them with whipped double cream, into which I added some full fat Total yoghurt, vanilla bean paste (1 dessert spoon), half a tube of freeze-dried raspberries (only 1.5g carbs!) and one square, very finely grated, of Lindt 90% cocoa chocolate.

I'm going to serve them with fresh raspberries, which I have been macerating in Chambord (raspberry liqueur) all afternoon, and a drizzle of cream.

TheHappyCamper · 25/04/2015 17:19

Sounds great - can I come?!? (especially the pudding) Grin

I meant to say, while I was in Morrisons I found a really good low carb 'ready meal' if it helps anyone. It's called "M Signature creamy pesto & cherry tomato chicken. Basically it's a foil tin with 2 chicken fillets coated in cream cheese, grated cheese and pine nuts, with spinach and 4 cherry tomatoes underneath. 2 portions in the tray - each has 4.9g carbs (3g/100g). Sounds ok I thought for a whole meal?

nappyaddict · 25/04/2015 19:03

TheHappyCamper how many carbs was the jar of paste per 100g and what was the size of the jar? what brand was it?

BIWI The jar of paste I've got is 100g in size and it is 7.2g per 100g is that too high?

Have discovered that Bart Infusions Thai Green Curry Paste is only 4.7g carbs per 100g so am going to get some of that for next time.

DramaAlpaca · 25/04/2015 19:05

Ooh dinner chez BIWI sounds delish! That pudding looks amazing.

Just back from a bike ride with DH. He's a keen cyclist and very fit. I am not fit. DH planned the route so it wasn't too hilly for me, and it was along a quietish road which has cycle lanes. The plan was we'd each do our own thing, both cycle as far as we could for 15 minutes, then turn round and meet up back at the car. So he got a decent run & I didn't hold him up at all. It was fun, I'll do it again. Came home and munched on a cold sausage & a bit of cold roast chicken out of the fridge. Knackered now.

nappyaddict · 25/04/2015 19:05

It's this one The only place I've seen it is Waitrose though.

nappyaddict · 25/04/2015 19:19

Also Delouis Garlic Mayonnaise is on 3 for 2 until 12th May in Waitrose and it is only 0.5g per 100g. LexLoofah Have you tried the Delouis mayo as I know you said you weren't keen on shop bought mayo.

BIWI · 25/04/2015 19:22

nappy it all depends on how much of it you're going to eat. I'd imagine that with pesto you're really only consuming about a teaspoon/tablespoon? Which won't weigh much, so won't be very carby. But if you're worried, weight it and work it out.

nappyaddict · 25/04/2015 20:02

It's thai green curry paste, not pesto :)

Does this recipe look OK?

Apart from the sugar is there anything else I need to omit?

lbnblbnb · 25/04/2015 20:18

I have been looking at this spiralizer, does anyone have one or another one they would recommend?

lbnblbnb · 25/04/2015 20:19

Sorry, can't seem to do links.

Gcalgske · 25/04/2015 20:46

Nappy the curry is fine if you leave out the sugar but it is quite a bit of veg, I have to stay super low (less than 20g carbs per day) so I'd probably have to have not much else in the way of carbs the rest of the day but if your tolerance is higher it'll be fine and I bet it'll taste yum! The beef one would be good if you omitted sugar and oyster sauce too!

Romeyroo · 25/04/2015 21:06

Have spent day clearing out garage and going back and forth to the dump - all sorted for recycling there, so conscience not too bad about landfill

B was two egg omelette with courgette and smoked salmon
L missed really due to being busy, had some cold chicken and cucumber sticks with mayo about 3pm
D was tuna salad with black olives and two hard boiled eggs then had a square of 90 % dark chocolate

Lots of herbal tea and water. Tomorrow will be egg heavy as not been shopping and got more clearing to do.

Preminstreltension · 25/04/2015 22:24

Had friends round for dinner last night and we ate the best part of a jar of that Delouis mayonnaise with a rotisserie chicken and salad. Delicious.

Just went out for dinner to Strada and had chargrilled chicken with cream and mushroom sauce which actually seemed v low carb. Sauce didn't seem gloopy as if it had flour in it. Plus green beans. Lovely.

Had a success as well with a courgette pasta and asparagus with smoked trout, cream and Parmesan sauce. Yum.

Definitely looking trimmer though can't face weighing yet as I don't want to know how far I've still got to go until I am well on my way iyswim.

The only low for me so far is breakfast which I normally don't have. Slightly struggle with intensely savoury things so early and eggs are not ok at that hour. Ff Greek yogurt ok but pretty bland. Would normally add nuts, dates and a drizzle of honey. But am not doing that obviously. But overall happy with progress (despite massive shopping bills -eek)

Gcalgske · 25/04/2015 22:46

Food today:
BPC
2 eggs scrambled with coconut oil (unflavoured), smoked salmon, tomato, shallot
Smoked mackerel, roast celeriac and a tiny bit of butternut, cream & mustard sauce
Square of dark choc
Loads of water

DramaAlpaca · 25/04/2015 22:48

Gcalgske I love eggs scrambled with coconut oil, it makes them so light & fluffy.

We had Thai meatballs tonight. They are fast becoming a family favourite.

Gcalgske · 25/04/2015 23:44

I know drama, they are a revelation! My lg is allergic to dairy and has toddler dioreah when her diet is too low fat so I melt the coconut oil and whisk it into the egg. It's like the lushest creamy eggs of your dreams but with no cream in sight.

Gcalgske · 25/04/2015 23:48

Mustard sauce was made in a hurry but was v easy and v nice.

60ml double cream in a ramekin with a tsp of whatever mustard you like stirred in (I had a mix of Dijon and grainy) salt and lots of pepper and bung in microwave for 30 seconds. Was delicious with the mackerel!

LexLoofah · 25/04/2015 23:50

b - to placate family made pancakes from almond flour and eggs, pretty good, very filling, topped one with butter and one with coconut butter, one strawberry, cuppa
S - cheese stick with marmite on, cuppa
l - leftover sirloin steak, watercress, horseradish salad cream dressing
D - DH cooking crab cakes and lobster, claims he can do it without mash or braedcrumbs in the cakes so we will see

readyforno2 · 26/04/2015 00:29

BIWI, your menu sounds delicious!
Managed pretty well at the Italian apart from the cocktails no garlic bread, pizza or pasta! Had a overly night so hopefully won't derail me too much!
