Evening everyone. I hope you're all ready, prepared and raring to go!

Have a good look at the tabs at the bottom, as there you will find the rules, the list of allowed veg and lots of other really useful information.

I've also started the questions thread , so if you have anything you need to ask, that's the best place to ask it. The chat threads move really quickly in the first weeks, so this thread is the best place to ask your questions.

And this time around, I thought it might be useful to have a thread to post about good/interesting low carb products that you come across:

B: Three hb eggs with mayo
L: Chicken breast, avocado, cucumber and mayo, two little cheese sticks
D: Gammon in the slow cooker (OMG so good), courgette baked with cream and Brie, swede mashed with butter

I weighed myself yesterday and had lost another pound. We went out for dinner last night and I had the rack of lamb with vegetables, forgoing the dauphinois potatoes. However, it came covered in a delicious sauce, which was so thick and glossy it just must have contained some cornstarch. I'm hoping it won't have a disastrous effect when I weigh tomorrow.

I love mashed swede. It needs a good dose of pepper in it...?

My luninner (like brunch Grin ) was courtesy of ruby tuesdays. Salmon pangasius fillets and garlic butter prawns, with broccoli and courgette.

Today's food.

B- scrambled egg with spinach.
L- tuna salad with olives
D- homemade meatballs, cauli rice
S- Greek yogurt, cream and mixed spice.

I'm really struggling today. My temper is uber short and I just want a bloody drink. I am never doing dryuary again.

It's not goodies that make me want to cave, it's alcohol. It is definitely my go to stress reliever. With 3 kids under 5, I need something!

Someone send me strength. Sad

I just made the best dish EVER... i suggest you all run out and buy the ingredients tomorrow- its that good.

Chicken thighs in a lemon grass and ginger sauce

2 stalks of lemon grass ( i used the tube stuff, 3 supermarkets with none in)
2 garlic cloves
5 sp onion
knob of ginger
1 tbsp soy sauce
i veg stock cube
1 tin coconut milk
1 green chilli
8 chicken thighs

Roast the bone in chicken thighs in the oven until done. Drain off excess fat but leave brown chicken - ey bits in the bottom of tin.

Cook the ginger, garlic,chilli, sp onions and lemon grass in a little groundnut oil for 2-3 mins. Add the coconut milk, stock cube and soy sauce, bring to boil. Pour over chicken and scrape bits from bottom of the pan.
Put back in oven for 10-15 mins.

I served this with coriander cauli rice and roasted broccoli ( a revelation!)

Possibly my new favourite dish.

I posted this tip earlier - put the neep/swede whole in the microwave! Micro for 7/8 minutes, turn over, nuke for another 7/8 minutes. It comes out perfectly cooked, just scoop it out and add butter. SOOOO easy. No chopping, no peeling, no mashing, no boiling.

I think I'd like a little of it with a meal, but not lots pretending to be potato with my sausages. SmileSmile

L- scrambled duck egg, bacon and mushroom, a tidgy bit of cheese.
D- sausage and "mash"

E- 7 mile run. Grin

B: leerdamer and salami rolls and half an avacado
L: half a large ball of mozzarella, guacamole and chorizo
D: roast chicken, broccoli
W 2 ltr
E: housework!
Not so good on water over weekend and feel there's a bit of water retention kicking about but still been a good first week

Sassandfaff be strong! I hear you! Also having dry Jan - hideous. Our boys' birthday party today and I had no fizz, v little party food, and only a teeny tiny lick of my home-made salted caramel butter icing on their birthday cake! That was tough. I did have some lovely carbless cheese and a couple of low carb chipolatas with crudités though. Well done everyone on a week of hardcore Boot Camp!

Do you know my celeriac chips (cooked forever) don't look half bad. Just waiting for broccoli to cook and then I'm having duck leg, aforementioned chips, broccoli and buttery leeks.

blueberry Hideous is a very good word.

I did it last year and it was hideous then too, I don't know what possessed me to do it again! The year before that I caved on day 16, so really I've experienced this for 3 years. I should have learned by now.

Well done on resisting all the temptations. Positively saintly. Grin

I've been back for more Greek yogurt since I last posted. Hmm

I've never had swede mash. Might give it a go.

Well, it is just gone eight and I have gone to bed for the night. I have got everything to get ready for tomorrow, but too much going on and I am worn out. Indigestion playing up again, may be stress because I have stayed away from windy veg.

Food wise a bit meh -
B - literally about two cubes of cheese and a bit of Parma ham whilst I was going out the door

L - 3 x hard boiled eggs, cucumber, salami and a bit more cheese

D - did not feel hungry but ate some pak choi and spinach with pesto. That was actually lovely. The pesto was 3 g per 100, and I had a small teaspoon, but it made the veg taste lovely
At least three litres of water, herbal tea, two coffees with soya milk (unsweetened)

B - bacon & cream cheese pancakes (did not like these!)
L - tuna malt on lettuce wraps
S - 2 tablespoons haggis, heap of buttery mashed neep

I am at college all day tomorrow, so have made a whole feast to take with me - whoops!
Salad, crayfish tails in mayo, 2 gherkins, 2 hard boiled eggs, emmental & ham slices and a wee pack of salted almonds for emergencies. Oh and a big flask of homemade veg soup!

swede mash is amazing, i boil it to death then add loads of butter, a splash of cream (if i have any in) and tonnes of freshly milled black pepper. Yum

I felt really ratty today. Resisted some home made birthday cake and some roast potatoes
Had a delicious breakfast of grilled halloumi, olives and hard boiled egg
Lunch was chicken salad
Dinner roast beef, broccoli and cabbage (DH made it and I didn't check carb content of cabbage! will do so now)
Snacks, a bit of blue cheese, couple slices ham, BPC

Haven't felt that hungry, but not that full either, often a bit empty

Lovely meal out with DP:

antipasti-just hold the bruschetta
salmon steak, with broccoli, green beans, pepper and onion. Waitress was a bit Hmm, when she saw the sauteed potatoes and carrots left in the dish

It's my birthday tomorrow, and have asked to go to the cinema. Will fill up on LC stuff just before we go, so that don't even think about any evil cinema carbs.

Dreading weight in tomorrow, it's been Dd's birthday party and my folks are staying. I've stuck to BC light, but may have had a bit too much of the extras (wine and dark chocolate ) in a bid to stear clear of the cake, popcorn and other general party stuff.
Pleased I've not completely trashed it though. First go at cauliflower rice when faced with a takeaway curry was a success though and I think that my curry choices were ok too (butter chicken, lamb saag and brinjal bhahari).

I can't have breakfast before a run, just can't. A BPC is all I can manage. You're right about the veg though. Other days are usually much better as I have some sort of salad with most things.
