A new thread as requested. For anyone who wants a boost to their general health. The suggested goals are:

EAT 10 PORTIONS OF FRUIT AND VEGETABLES EVERY DAY

(if you don't usually eat much fruit and veg I would build up gradually or you could upset your digestion)

DO (AT LEAST) 10 MINUTES OF EXERCISE EVERY DAY

(can be yoga, stretching or something more energetic. The plan is that the idea of doing 10 minutes is not too daunting, and having started you may well find you want to do more)

There are no restrictions on what you eat so long as you get your 10 fruit and veg as well. The focus is not on weight loss but on improving our energy levels and hopefully our general mood and well-being.

Sign up below and post here to tell us how you're getting on and how you are feeling.

Hi Overrun Sorry to hear kids are still feeling rough. Oil is not necessary, I only put in a dash.

Glad to hear I have convinced somebody to even try an onion remedy

Tatties · 12/12/2006 16:01

Hello to anyone still here

I am so busy atm, trying to get organised, not monitoring my f&v intake at all Think pilates will be on hold until after Christmas too.

Paps, glad you liked the curry. Poor ds though

StrangeTown · 12/12/2006 22:03

Hello my fruity friends, glad you posted on this Tatties! Everyone very busy coming up to Christmas, hope you have all finished nursing your sick LO's.

I am still only managing to get to about 7 portions atm - but this is a big improvment for me - so am still sticking to and trying to get to 10 eventually!

Hope you all enjoy the run up to Christmas with your families - pls keep posting the recipes, festive or otherwise!

Where is every one, we all seem to be dropping off this thread. Is this okay with people, or do you think we should try and resurrect it?
I am still eating loads of veg, lots of fruit and not doing enough exercise.
Does any one want a really yummy beetroot recipe. First dibs to you lot, if no response i will post in recipe section

StrangeTown · 14/12/2006 22:06

Yes Overrun - lets see what we can do with beetroot pls. I am not sure I like it so this might help change my mind.

Also, what are you having on Christmas Day - I need ideas for starters. Something light and veggie based? We had parsnip soup last year, lovely, but fancy a change.

Overrunderthemistletoe · 14/12/2006 22:18

Hi Strangetown.
My dh doesn't like beetroot either but enjoyed this. Mind you its not vegetarian, don't know if you are or not

Cook 500g beetroot (boil for 15 - 20 minutes depending on size) then cube, mix in a bowl with minced garlic (1/3 - 1/2 a clove) and some chopped flat leaf parsely. Then heat 4 tablespoons of olive oil and one of red wine vinegar and then mash in about 6 - 10 anchovies. Pour over beetroot and leave to marinade for 15 minutes.
As for xmas, its difficult isn't it, to do something different.
What about, baking some red onions (quartered) with creme fraiche and grate some nutmeg on top. About 20- 30 minutes in the oven. Also to make roast potatoes extra special, put some pinches of saffron in with them when you bash them about in the pan before putting in the oven

suzycreamcheese · 14/12/2006 22:19

overrunderthemistletoe - i'd love a yummy beetroot recipe; i've missed this (our broadband kaput for 2 weeks thank you talktalk) and F&Z and this friendly thread and she said she liked my name once! havve been managing about 7 a day mainly veg and only exercise is walking want to do t'ai chi class in new year though

Overrunderthemistletoe · 14/12/2006 22:23

Hi Suzy, I don't know where Franny has gone, we are missing her. Do you like the sound of the recipe, see below.
Well done for the 7, its the exercise bit I struggle with

Tatties · 14/12/2006 23:26

Evening ladies, just popping in to say hi

My head is too filled with stress about Christmas to try consciously to do my 10/10 atm, but I don't think I am doing too bad. Just not keeping track.

I think I may do the smashing pumpkin curry for Christmas dinner. We aren't having any visitors (afaik!) so we can just please ourselves and not be too traditional

StrangeTown, do you still want to do a soup starter? Or something completely different? I made a nice carrot & coriander soup a while back, it was really light.

suzycreamcheese · 15/12/2006 12:34

overunder...recipe looks fab but for first time in weeks our trusty veg stall had no beetroot today! will definatley keep it in handy and was veggie many years but now eat fish funnily enough, spell in japan and I couldn't resist sushi et al!

also liked your other ideas and definatley need this as hate getting into food rut!

I find the exercise the toughest bit and if only could do some sit ups, do walk alot though!

StrangeTown · 15/12/2006 17:06

Hello

Thanks for recipe Overrun. Anchovies are fav of DH, so will be very popular.
Re: Christmas lunch was thinking soup again as it can be made in advance. I don't have a carrot and coriander recipe, although I do love it, so any tried and tested ones would be good Tatties.
I have been pants today 2 portions so far and no excercise.

Tatties · 15/12/2006 18:48

StrangeTown here is the recipe I used:

Carrot and Coriander Soup
Serves 4
Preparation time less than 30 mins
Cooking time 10 to 30 mins

A flavoursome vegetarian soup with fresh and ground coriander. Serve with cheese and onion bread for a warming supper or lunch.

Ingredients
1 tbsp vegetable oil
1 onion, sliced
450g/1lb carrots, sliced
1 tsp ground coriander
1.2 litresl/2 pints vegetable stock
large bunch fresh coriander, roughly chopped
salt and freshly ground black pepper

Method

  1. Heat the oil in a large pan and add the onions and the carrots. Cook for 3-4 minutes until starting to soften.
  2. Stir in the ground coriander and season well. Cook for 1 minute.
  3. Add the vegetable stock and bring to the boil. Simmer until the vegetables are tender.
  4. Whizz with a hand blender or in a blender until smooth. Reheat in a clean pan, stir in the fresh coriander and serve.
StrangeTown · 15/12/2006 18:51

Lovely - thanks Tatties - will try it out this weekend.

`t you meant I had started a thread.

Erm, no change really, I'm afraid. But I think I am so used to this situation now I don't really see it as a problem any more

I am always happy to lend a sympathetic ear though if you fancy a moan. How are things with you?

Tatties · 15/12/2006 21:00

Don't know what happened there - that should read I thought you meant..
