Oh bloosy hell...even limiting it to 5 is hard, what about Parmesan, Goats cheese, Manchego, Gruyere....and all the rest....

A ripe and ready Camembert (tip: look for the cheese in the shop with the nearest expiry date.)
Roquefort
Brie de meaux (not the bland Brie they sell in supermarkets)

I think a good Brie de meaux is a better cheese than Camembert, but a strong Camembert is easier to find.

That's it really. Other cheeses I will have off a cheeseboard if they're there, but they aren't essential to life like those three.

found some fantastic cheese biscuits....nairns stem ginger crackers and there are also another 2 flavours which are equally as nice

Cheese poncery ... whatevs. Some of the ones I like best are a bit unusual, but that is because I worked in a cheese shop back in the student years and got constant posh-cheese access.

I wore a nice white apron but I did find that I was impermeated with the fragrance of ripe cheese at the end of every shift, meaning extra showers and hair-washing. Glamorous it was not.

Edam. Yawn
Stinky cheese - yes yes it's hilariously stinky, now get it out of my fridge
Really blue cheese - just can't quite get my head round eating mould
Any kind of low-fat/"health" cheese

there used to be a great cheddar cheese stall in Barnstaple's pannier market - mature, extra mature and "this one bites back". It did too! Had an extraordinary effect on the tastebuds, and then if you bit into an apple after - bliss.

Swallowing hard now so as not to dribble on the keyboard!

I positively refuse to list these in order - I wouldn't want to be without any of them but different days mean I crave different cheeses. Still, top 5 (equal) are:

Buffalo mozzarella (the real deal from Italy, not crap pizza cheese)
Boursin (garlic and herbs only, not the pepper one)
Port Salut
Brie
Red Leicester

Running not too far behind are Pecorino (sheep milk version), Grana Padano, Halloumi, Dolcelatte, soft sheep cheese from the specialist cheese shop near where I live in Australia, and pretty much every other type of cheese that isn't completely plastic and processed. Don't get me started on what passes for mozzarella in Aussie supermarkets - blech!
