Oh bloosy hell...even limiting it to 5 is hard, what about Parmesan, Goats cheese, Manchego, Gruyere....and all the rest....

pushmepullyou, is that Inglewhite as in Lancs? Never heard of that one.
Dunsyre blue is yum.

Currently unable to eat any of my favourites which are:

Caws Cenarth Welsh Brie
Montgomery's Cheddar
Lanark Blue
Chaource
Harbourne Blue Goats

The best cheese ever is Burrata, it's fresh mozzarella filled with cream cheese. I'm salivating just thinking about it.

Also love Edam for cheese on toast, it goes really chewy and salty when it's melted.

Colston Bassett Stilton (the best IMO)
Very Mature Cheddar
Cheshire (yummy grilled with crusty granary bread)
Brie (If it is properly ripe)
Mozzarella

Gruyere for cooking, and Brie for eating - although I am partial to a bit of Port Salut, which my mum always used to buy when we were little so brings back childhood memories... who knew cheese could be so emotional

speedy fondue:

rub bowl withhalf a garlic clove
hack lumps of cheddar into bowl
nuke (no one says that anymore do they) in microwave for 30 secs
slurp some white wine and spoon up the liquid cheese
repeat till all gone then make some more

ideal as midnight feast, yum.

This is a terrible thread. I am in a country where it is really hard to get decent cheese. Snot fair!

However I think:

A really good, strong farmhouse cheddar
Goats cheese - probably hard just wins out to soft
Manchego
Something blue - like Cambazola
And something like a Gouda for balance.

My sister in law used to work at the Fine Cheese Company in Bath, she does a great cheese board.

And we went to the cheese festival in Cheltenham a couple of times, boy was THAT a great festival!

seriously, it's amazing!!!!

I live in preston, and buy it from bambers, but it's worth googleing about, i'm sure you can get it other places too, it's amazing!
At christmas they had a chocolate orange cream cheese roll, it was like cheese cake minus the base, totally amazing, but sadly a xmas only thing

IN the fall and winter, I want rich and strong:
Vacherin Mont d'Or
Epoisse
Roquefort
Stinking Bishop
Montgomery Cheddar

I spend summers in the States where cheeses are not good, so I don't really eat them then.
