Anyone else starting to think about getting their arses back in gear?!
Mine for the next week
Tomorrow: baked Camembert with nice bread (not quite over Christmas yet!)
Saturday: Thai green veggie curry
Sunday: NYE - will be sitting in with a dog terrified of fire works, might just order a pizza
Monday: Tuscan bean stew and sourdough
Tuesday: west African peanut stew
Wednesday: some sort of pie with all the leftover veg
Thursday: gochujang tofu

@SpaceOP it’s in Anna Jones’ One Pot, Pan Planet book - this is the closest online version I can find. I’ve not done it before but we’re big aubergine lovers too so I hope it’s good!

I’ve finally gone back to doing an online shop instead of in person and shockingly spent £100 less last month than normal!!!! Now to get my meal plan done a few days before the old one runs out so I can get my shop in soonee

I've got a few meals out this week, so plans are looking like this:

Thursday: Budin Azteca with corn on the cob
Friday: Out for dinner
Saturday: Going out for fish & chips at lunch time, so soup or something else light for dinner.
Sunday: Rib of beef, peppercorn sauce, potato wedges and a radish salad.
Monday: Out for dinner
Tuesday: Chicken & basil burgers with sweet potato wedges and tomato salad
Wednesday: Cypriot antinaxto krasato with tenderstem broccoli

Tomorrow: Dh and DD having steak and mash, DS and I going to Ping Pong
Sat: big fat mezze as we have friends over: burnt aubergine and tahini, crshed garlicky chickpeas, bharat roast beef for the omni's), hm flatbreads, pear and fennel salad followed by ginger and apple cake
Sun: roast

The not sure the order of the following days but next 5 meals will be courtesy of One Pot, Pan, Planet:

  • bean burritos
  • crispy caper and slow roasted tomato parpadelle
  • celeriac and red wine stew with cheddar dumplings
  • quick squash lasagne
  • saag aloo shepherds pie

Pork mince stir fry with noodles
Cheese and mushroom burgers (probably Sunday as SIL appears to have invited her self over and I don't feel like a big meal prep)
Aubergine, pepper and chickpea curry with rice
Roasted cauliflower satay with rice
Sausages and mash, peas
Butternut and chicken risotto

I realised I didn't actually plan for 7 full meals. But there always seems to be some last minute change so I think it's probably fine. I have some bacon that needs eating so maybe we'll have a bacon based pasta, or breakfast-for-dinner or similar one day.

Moved a few things around over the last few days as got invited to BiLs on Thursday evening so this week is now planned as follows:

Tonight: Spanish chicken and rice
Tomorrow: Fishcakes, carrot mash, kale and peas
Wednesday: Salmon with braised fennel (DH away so making the most of things he doesn't like)
Thursday: Baked potatoes with spanish style chickpeas and spinach
Friday: Chilli
Saturday: Spaghetti carbonara

I'm already off my planned meal plan from the weekend but as I hadn't put it down here, does it count!? Grin So, going forward:

Spaghetti and meatballs
Aubergine, pepper and chickpea curry with rice
Cauliflower satay with rice

Yesterday I did a veggie chilli and froze a few portions for next week. I put lots of dark chocolate in, so it was really lovely and rich.

Today = Itsu gyoza, Tilda jasmine rice and an asparagus/mange tout stir fy.

Tomorrow = roasted cauliflower and paneer curry with bought samosas

Weds - I've got a really long work day and DP is out for dinner, so I'll probably end up with eggs on toast or a takeaway bought on the way home

Thurs - the shepherds pies I froze a few weeks ago, with vege and gravy - I've bought some baby parsnips and will roast those, then probably just do some peas

Friday or Saturday - pasta with olives, spinach, capers, chillis and parsley

I’m home alone this week as DP’s working abroad. This makes me very lazy. I’m not long post Covid and not got much taste still which doesn’t help.

tonight - Tesco Finest lasagne with frozen peas
tomorrow - chilli (home made at least, from the freezer) and rice
Wednesday - going out for lunch so dinner will be something like scrambled eggs on toast
Thursday - Tesco Finest macaroni cheese and peas
Friday - not sure when DP gets back so may be a takeaway, if he’s back early evening I may do chicken fajitas
Saturday - it’s a week of carbs - spaghetti carbonara or with Parma ham and leeks. At least this will be cooked and not just shoved in the oven
Sunday - chicken satay curry

I've been struggling thinking of new recipes as getting bored of the same old on rotation and not a very creative person either. We're having work done on the house next week, including in the kitchen, so we're aiming for easy and also to use up some freezer stuff.

So far I've got:

vegan sausage baguettes with salad and roasted corn on the cob

bought veggie pies with roasted new potatoes, bought red cabbage and frozen vege

pasta with bought fresh pesto, baby spinach and pine nuts

stuff on toast - probably eggs and mushrooms. I don't eat baked beans but dp might have them too.

We have family arriving this week and various events and activities so it's a bit vague and I'm thinking beyond just this week:

M: flatbreads with steak, mushrooms, and a slaw
T: paella
W: schnitzel, wedges, cheese sauce, veg
Th: spaghetti bolognaise
Fr: Baked chicken thighs, mash, veg (easy to bulk up and generally DC friendly for all ages)
Sat: burgers/sausages etc post party.
Sun: take out
Mon: Possibly curry. I'd like it to be vegetarian as we haven't had veggie food this week.

Meant to say for the vegetarians on this thread - I've recently come across someone on insta @ sovegan. Some really great looking recipes on there. I think I'm going to try a few after we get through this crazy week. There's a Moroccan style squash and chickpea stew that has my name written all over it.
