Anyone else starting to think about getting their arses back in gear?!
Mine for the next week
Tomorrow: baked Camembert with nice bread (not quite over Christmas yet!)
Saturday: Thai green veggie curry
Sunday: NYE - will be sitting in with a dog terrified of fire works, might just order a pizza
Monday: Tuscan bean stew and sourdough
Tuesday: west African peanut stew
Wednesday: some sort of pie with all the leftover veg
Thursday: gochujang tofu

A really lazy week here - DP has a rotten cold and I am still not 100% recovered from Covid.

tonight - M&S lasagne with frozen peas
Monday - lemon chicken and rice
Tuesday - chicken Kiev, posh chips, broccoli
Wednesday - pea, pesto and feta gnocchi
Thursday - chorizo Mexican rice with fried egg
Friday - spaghetti carbonara
Saturday - brinner (full English)

Tonight: Baked potato with egg mayonnaise
Tomorrow: Crustless quiche lorraine with salad
Wednesday: Cheese and ham tortellini with roasted courgettes and pesto, with salad.
Thursday: Braised white beans with spring greens, topped with poached egg.
Friday: Spag bol from freezer
Saturday: Aubergine and tamarind curry
Sunday: Chicken and spring green casserole

Feels a bit heavy on the cheese, eggs and ham this week.

The house is still in chaos, so this week is a combination of attempts to cook and very lazy stuff.

Tonight - veggie chilli from the freezer with microwave rice
Then in no particular order:
vegan Mac and cheese
veggie burritos
bought pies with homemade wedges, frozen peas and gravy
penne alla vodka

A bit carb heavy, but it is what it is.

I have to do my shopping tonight but I've got no ideas. We're having salmon tonight but I think I'm going to have to do that thing where I buy a whole bunch of basics (vegetables, chicken, mince) and then just figure it out as I go in combination with whatever is in the cupboard. I hate it when I get into a food rut and even all the good ideas on this thread aren't inspiring me.

I do that sometimes, sometimes it's just that I can't be arsed to think about it.

This week we're having:

Tuesday (last night) was sausage ragu with penne
Wednesday: Chicken salad (crisy breaded chicken with buffalo sauce, blue cheese etc so not as healthy as it sounds!)
Thursday: Aubergine and tomato bake
Friday: Cashew chicken

Still need to work out the weekend.

Thanks @DocOck but actually, your post has reminded me that I've been meaning to do my favourite sausage pasta sauce so I'll put that on te list. Now I have TWO meals! And maybe I'll steal the chicken salad idea too..... Grin

So I did my shop and now we have:

Tuna and fried rice for me and DS tonight
Steak flatbreads with slaw and mushrooms
Aubergine/tomato/chilli pasta (probably)
Chicken salad with garlic bread
Sausage and fennel pasta

That will probably take us up to next shopping trip as I get back into routine but I also have some chicken thighs which I can do with cream cheese and parma ham in the airfryer and wedges and some pork for a stir fry if necessary.

Lack of planning means lack of vegetarian options though so must get back to proper meal planning next week.

Boringly place marking, in a manic state of getting ready to go on holiday and DH to move house while we’re away! I imagine mainly takeaways and whatever needs eating in the fridge and freezer - see you all mid April!

I’ve been struggling with meal planning as currently contending with lots of different allergies/dietary requirements so don’t have a single meal everyone will all eat the same 😩 even if it’s a meal everyone likes I have to make different versions to accommodate gluten free, dairy free etc etc. Trying a 4 week meal plan out and this is the first week 🤞🏻

Tonight was sundried tomato risotto (with smoked haddock for DP) with asparagus and broccoli. Kids had various pasta from the freezer stash with veg. Macaroni cheese for DS1, tomato and veg sauce pasta for DD, dairy free macaroni cheese for baby DS.
Tues - ham and cheese or cheese and tomato toasties, waffle fries, salad
Weds - beef/veg bolognaise, pasta, veg
Thurs - beef/veg lasagne for adults, leftover bolognaise for kids, garlic bread, veg
Fri - chicken/veggie burgers, chicken wings, spicy rice (smiley faces for kids), corn on the cob
Sat - homemade pizzas and chips
Sun - beef/veg stew, mash, veg

I did veggie enchiladas yesterday.

Today is sweetcorn chowder, nachos and a fresh tomato salsa

Tomorrow = no idea / might go out, or buy in some pizzas

Saturday = veggie sausage casserole and hassle back spuds

Sunday = broccoli and stilton soup, nice bread and a cheeseboard/picky stuff

Monday = some sort of pasta

And then we're away for a few days.

Have gone a bit off piste this week:

Monday: pasta with pesto and roast veg ✅
Tuesday: chicken escalope, spring greens and broccoli ❌Had fish (dusted basa fillets) but with the planned veg.
Wednesday: red lentil dhal ❌Chorizo broccoli pasta
Thursday: Bean and pesto soup + hot cross Buns ✅
Friday: chicken enchiladas ❌Still having enciladas but veggie now rather than chicken.

Forward planning is:
Tomorrow: Picnic tea (boiled ham, coleslaw, tomato salad, bread and cheese)
Sunday: Spiced leg of lamb, yoghurt and tumeric potato salad, spiced cabbage and roasted carrots.
Monday: lamb and aubergine curry
Tuesday: Chorizo, butter bean and kale casserole
Wednesday: Chilli chicken and cabbage noodles
Thursday: Pasta with creamy mushroom sauce
Friday: Veggie enchiladas.
