Anyone else starting to think about getting their arses back in gear?!
Mine for the next week
Tomorrow: baked Camembert with nice bread (not quite over Christmas yet!)
Saturday: Thai green veggie curry
Sunday: NYE - will be sitting in with a dog terrified of fire works, might just order a pizza
Monday: Tuscan bean stew and sourdough
Tuesday: west African peanut stew
Wednesday: some sort of pie with all the leftover veg
Thursday: gochujang tofu

Any mums over 50 who have always cooked for their family but now are cooking for one? Ideas for healthy and tasty recipes?

Now cooking for two, rather than one, but have also found it a bit tricky to adjust.

If cooking just for myself, I'd be thinking things like:

  • omelette and salad
  • a really simple mushroom or chickpea curry (onion, spices, chickpeas or mushrooms, yoghurt or a chopped tomato)
  • bowl of Greek salad with a pitta bread and a jar of gigantes beans
  • mushrooms on sourdough bread with rocket or spinach stirred into them
  • baby veggie chilli - onions/peppers/kidney beans/spices
  • peppers stuffed with cous cous
  • lazy biriani using a packet of Tilda rice plus some vege roasted with spices, served with minty yoghurt
  • easy stir fry -my perfect one would be asparagus and pak choy with garlic, ginger and soy, plus cashew nuts

Having some dental pain this week so a very boring but comforting week.
Tonight - Creamy corn chowder
Tuesday - Spicy gyoza ramen
Wednesday - Cheese & potato pie with baked beans.
Thursday - One pot creamy chicken and rice thing.
Friday - Mince & tatties with green veg.
Saturday - Garlic chilli chicken curry with rice and Naan.
Sunday- Chimichurri chicken salad bowls.

Just done mine for the next week feeling a bit more inspired than last.

Friday: falafel and hallumi burgers
Saturday: pasta with beetroot, walnut and goats cheese
Sunday: pie, chips and mushy peas Grin
Monday: mushroom stroganoff
Tuesday: Gochuchang tofu
Wednesday: ratatouille with crusty bread
Thursday: veggie pad Thai

I continue to feel uninspired, so trying to be a little flexible.

So plan is

Large whole roasted chicken for the proverbial - 3 meals! Grin. Roast chicken, Thai chicken soup/curry, chicken Ala king/ risotto - tbc

Fishcakes, wedges, vegetables
Spaghetti bolognaise
Tuna potatoes with salad

That's only 6 meals, but I think I'll make a final decision on 7th later.

I had a bit of a stressful day at work and DP is cooking veggie shepherds pie as I lounge in the bath. It smells so good!

Haven’t really thought much about next week yet.

We haven’t had mushroom pasta for ages though, so I might do that, cooking the mushrooms in white wine and cream and adding spinach at the end.

Also fancy some sort of veggie burger, as we haven’t had them for months.

Fri: Sesame chicken, pickled red cabbage & sushi rice salad
Sat: Dinner out
Sun: Dinner out
Mon: Lamb zigni with basmati rice and green beans
Tues: BBQ'd lamb steaks with lentil, chickpea, rocket & feta salad
Wed: Jamaican chicken, grilled pineapple, rice & peas

completely winged… but I roast some beetroot and garlic. Then blend with a glug of half decent olive oil and the walnuts, add to cooked pasta and keep on a low head while I stir through an (un)healthy amount of goats cheese ans serve with lots of Parmesan

I love beetroot but can't cope with the idea of blending it as a sauce, but @Lastqueenofscotland2 you've got me thinking about how wonderful a beetroot and goats cheese pizza might be. Does anybody know if I could do this with the vacuum packed beetroot (not in vinegar)?

Yes, it would be fine on pizza with goats cheese and the little bit of.cooking in the oven would make it nicer. I agree though - slice thinly or cut into scatter cubes as the flavour could be overwhelming?

I have some in my fridge. Perhaps I should try this.

Tonight was cheese and biscuits after working late.

Rest of the week and into next looks like:

Tomorrow: stuffed peppers and salad
Wednesday: pasta pesto and salad
Thursday: Spanish chicken and rice
Friday: out at a gig
Saturday: spaghetti carbonara
Sunday: Tom Kerridge's pollock (more likely cod) with chickpeas and chorizo
Monday: fishcakes, carrot mash, kale and peas
Tuesday: tagliatelle, kale and walnuts.
