Anyone else starting to think about getting their arses back in gear?!
Mine for the next week
Tomorrow: baked Camembert with nice bread (not quite over Christmas yet!)
Saturday: Thai green veggie curry
Sunday: NYE - will be sitting in with a dog terrified of fire works, might just order a pizza
Monday: Tuscan bean stew and sourdough
Tuesday: west African peanut stew
Wednesday: some sort of pie with all the leftover veg
Thursday: gochujang tofu

We’re doing a Christmas type roast on NYE so I can mke curry and pies for the first week of 2024. Mostly because we didn’t host Xmas day and we love a proper Xmas dinner!
then I’m going to try doing healthier, less expensive dinners. It’s hard though. I have expensive tastebuds 🤣

I'm doing a paneer and chickpea curry tonight, with samosas, naan bread and maybe some quick pickled carrots if I cba to do them.

Tomorrow dd and her bf are coming for dinner and she's requested dauphinoise potatoes. I'm going to do a veggie sausage and Puy lentil casserole plus sprouts roasted in honey and balsamic vinegar to go alongside.

Beyond that, no idea. We're eating with friends on Saturday night, so probably a takeaway. It's just me and DP on NYE, so probably cheese!

Probably won't get back into proper meal planning until at least the 4th.

Definitely need to sort my meal planning life out!

Tonight: meat and potato pie (something my granny from Lancashire used to make) with homemade pastry (which I'm v proud of) and green veg
Friday: salmon, potatoes and veg
Saturday: curry (either homemade or takeaway depending on how we feel)
Sunday: fajitas and all the chips and dips! We're doing a family movie night in

@Lastqueenofscotland2 i was gifted a cheese advent calendar… didn’t manage to get through it all.. so I guess cheese will be a staple for me a little longer 🤣

Today - beetroot falafel and hummus with salad
Friday - tikka salmon with rice and salad
Saturday - Huel and coffee (on-call) - everyone else Moroccan eggs
Sunday - we're having pizza delivered to work (on-call) so hopefully I'll get some of that
Monday - lamb kheema
Tuesday - veggie pasta
Wednesday - baked and stuffed sweet potato
Thursday - coconut and sweet potato dahl

Really need to get back into meal planning.

Tonight: Mushroom pie, sprouts in balsamic and honey, roasted new potatoes and whatever veg I dig out of the freezer.
Tomorrow: Something simple and probably with chips, whatever I have in the freezer.
Sunday: quick meal of frozen pizza.

Monday - Lamb Tagine
Tursday - Winter vegetable soup
Wednesday- prawn spaghetti
Thursday - spicy salmon noodles
Friday - Sausage Casserole
Saturday - pizzas

Hoping to cut down on UPF's and drop a couple of pounds in the process so am definitely meal planning into 2024! We are a mix of veggie/ non veggies. For next week

Mon - Beef stew/ lentil stew and dumplings with soda bread
Tues - Leftover beef / lentil stew with mashed potato
Wed - Cheesy stuffed aubergines with salad
Thur - Lentil bolognese and spaghetti
Fri - Red peppers stuffed with quinoa
Sat - Garlic mushrooms with salad or rice
Sun - Chicken / tofu cashew nut stir fry

So far this week we’ve only got as far as party food/cheese/cold meats/other snacky bits for tomorrow night and a steak pie for New Year’s Day.

I’ve had a chat with both girls today about how we need to try and start eating a bit of a more varied diet with more vegetables and protein. I’m going to try to work out a bit of a meal plan over the next couple of days.

Tuesday: fajitas - chicken for the carnivores, roasted sprout and leek with feta for the others.
Wednesday: Bengali mustard fish, aloo saag, rice.
Thursday: shakshuka, homemade flatbread.
Friday: some kind of pasta tbc

We've had family visiting so lots of trips into town/out to do things and random meals. We're out for dinner tonight and then tomorrow it's a bit ad hoc but I'll need to get back into it from Tuesday. I do have a chicken and some steak in the freezer and quite a few veggies so I suspect I'll have to use up what's there once I've had a look to see what the options are.

Hopefully properly back into it from the end of the week!

Monday - sweet potato & spinach Dahl &
Tuesday - Rose Pasta
Wednesday - halloumi burger & sweet potato fries
Thursday- quorn butter masala & rice
Friday - some kind of veggie tart & potato & veg

then plan for the next week!

Here you are! I am EXCITED to get back on the meal planning train. On our way home from friends (with leftovers from last night in a coolbox for tonight!) so need to go through the fridge and freezer but def on the plan this week will be:

  • leftover curry
  • fable mushroom tacos
  • lentil and veggie Richmond sausage stew
  • salmon and cabbage ramen using stock from Christmas salmon turned into dashi

I’m roasting a gammon so we will have that with egg, chips and beans tonight.

Tue. Spaghetti bolognaise from the freezer
Wed. Fajitas
Thur. teriyaki chicken, broccoli and rice
Fri. Toad in the hole with sweetcorn
Sat. I’ll make a curry and batch cook for the next 2 weeks

looking forward to getting back on track!

Very irritatingly, I have to do physical shopping today as forgot to do an online order and even Amazon can't sort me out. That's my early evening destroyed then. Sigh.

Still thinking about specifics but I'm leaning towards:

Steak, wedges, salsa and rocket (to use up peppers/rocket in the fridge)
Pork mince, veggie and noodle stir fry (ditto - bits of random veg to use up)
Spinach and mushroom sauce with penne
Fish of some sort - depending on what's at the supermarket.

We're working our way through what we have in at the moment. I am craving soup/brothy type things.

Tonight was spicy misestrone soup with cheesy garlic toasts.

Tomorrow will be Avgolemono using up leftover chicken and stock (Greek lemon chicken and rice soup)

Thursday very boring jacket potatoes with beans and cheese as I've been craving it.

Friday Enchiladas with salad and guacamole/pico and a few tortilla chips.

Saturday - Spicy chicken curry and rice.

Sunday - Cottage pie with sprouts, cabbage and broccoli. Topping made of. A mix of potato and Cauliflower

Monday - Spicy ramen with goyza

Tuesday - Omelette/frittata.

Not the most exciting so hoping for some ideas 😊

I've been looking for the 2024 thread - so lovely to find you all here! Happy New Year to all.

I don't yet have a full meal plan for the week but using up leftovers for the next few days and then will start a new planning cycle at the weekend:

Today: Pork chops, bubble and squeak, braised leeks.
Tomorrow: Turkey broth with butter beans and kale, cheese and biscuits
Friday: Tagliatelle, kale, walnuts and chilli
Saturday: White bean stew with spring greens, lemon and parmesan, topped with poached egg.
Sunday: Sauage and mushroom pasta bake

Mon: Beef dinner
Tues: chicken burgers with festive toppings
Weds: beef curry (using leftovers)
Thu: marry me chicken orzo
Fri: bolognese (batch cooking for the freezer)
Sat: fajitas or tacos
Sun: marmite chicken

Going to try and get a few more things batch cooked for the freezer before I go back to work as well. Made up a few pies with all the Christmas leftovers, planning to cook up some chicken shawarma and leek carbonara as well.
