Anyone else starting to think about getting their arses back in gear?!
Mine for the next week
Tomorrow: baked Camembert with nice bread (not quite over Christmas yet!)
Saturday: Thai green veggie curry
Sunday: NYE - will be sitting in with a dog terrified of fire works, might just order a pizza
Monday: Tuscan bean stew and sourdough
Tuesday: west African peanut stew
Wednesday: some sort of pie with all the leftover veg
Thursday: gochujang tofu

Ooh - good thread! Some of these sound delicious. I'm following mainly for vegetarian inspiration. We aren't veggie, but are trying to reduce the amount of meat we eat. We went to a vegetarian café for lunch the other day and were bowled over by the flavours.

Tonight I'm making roast sweet potato, black bean and Mexican green rice burritos with green salsa. Also on the menu this week are peanut noodles and cod and chorizo stew.

Saturday: mushroom risotto
Sunday: lentil shepherds pie
Monday: dahl and naan
Tuesday: kung pao tofu
Wednesday: Out

It turns out we have about 4 bags of potatoes due to some very poor shopping management by me. And, to rub salt into the wound, I didn't have time to make wedges last night so we had our steak with flat breads instead, leaving the potato pile to grow!

So now I need to incorporate potatoes into every meal for at least a week! Fish tonight so potato with that, fine.

Maybe I'll do a jacket potato for my mushroom/spinach sauce instead of pasta?

Any brilliant thoughts? I'd do Tortilla but DS has been off them recently, I'll have to see if he will be open to it again. DH is usually happy to eat tortilla for lunch for a few days.

Tonight is halloumi flat breads with roasted vege and oregano, garlic and lemon wedges and tsatziki.

Beyond that, no idea.

Thanks, although I cannot bring myself to double carb. But we do like halloumi so perhaps wedges, halloumi and some kind of fajita style mix? That does remind me that we had a Hello Fresh meal with mince, wedges and a sort of sweet/spicey Asian sauce so maybe I'll track down that recipe and try it too.

\Luckly DS absolutely LOVES wedges. I see a lot of them in our future.

Can you freeze a bunch, as mash or cooked jackets?

Tonight's plan is simply, and chips, I need to go through the freezer and decide what to have.

We went away for a few days for New Year Self Catering and brought back loads of food so have been eating a mismatch of that to get rid -

tonight we are having sausage and mash with green veg
Tomorrow beef chilli topped nachos with sour cream and guac
Saturday lunch Tuna Quesadillas Dinner homemade burgers
Sunday Toad in the hole
Monday pasta and meatballs
Tuesday Pulled chicken topped cheesy homemade wedges.
got a Tesco delivery for Wednesday so will plan the following 5 days then
(I usually get a delivery every 5 days as find it easier to plan than every 7 and find we do fewer top up shops this way too)

Could you do aq couple of shepherds pies, one for now and one for the freezer?

A batch of leek and potato soup?

Shepherds pie is a good shout, thanks - could do over the weekend. As is the suggestion upthread to mash and freeze.

Leek and potato soup is a favourite of mine, so thanks - good call.

I have never made Bombay potatoes but maybe this is my moment to try.... !

@SpaceOP I would definitely do a cheese and potato pie and some loaded potato skins. I also love loaded baked potato soup or potato and corn chowder.

Potato and corn chowder sounds like an excellent suggestion.

Wedges are cooking as I type. Jackets are on track for tomorrow. Mash in multiple ways over the weekend....! Baby "roast" potatoes for DD and soup/chowder next week.

Just done an order, although not feeling very inspired about going back to work and starting a routine again.

Today - veggie lasagne with salad
Tomorrow - maybe out for lunch
Monday - mushroom omelettes with salad and nice bread

And then in no particular order -
sweet potatoes with mango salsa and Island Delight pasties
tofu and asparagus Thai green curry
a sort of pasta puttanesca thing with lots of capers and herbs and chilli

Tomorrow: out for a roast (carrot and tahini soup for tea if anyone’s hungry)
Monday: salmon, potatoes and green beans
Tuesday: butternut squash and fable mushroom mole enchiladas

Thursday: probably lasagne

Just planned a month's worth of meals to try to clear the fridge / freezer... let's see how well I manage to stick to it!

This week:

Sat - Bean chilli & flatbreads, slaw
Sun - Roast chicken dinner
Mon - Rainbow roast veg with pearl barley
Tue - Tuscan chicken pasta
Wed - Root & barley broth
Thu - chipotle salmon tacos & slaw
Fri - Pea potato & coconut curry
Sat - Sticky chicken drumsticks, wedges & slaw

Lunches:
Chorizo & manchego frittata
Cheese & tomato tart

Wednesday - a traybake thing with chicken, chorizo, tomatoes, spinach and cauliflower

Friday - brinner (full English)
Saturday - macaroni cheese

We did a freezer audit today and are going to try and clear it/only buy fresh food for the rest of the month.

i WFH on a Monday so have taken a container of sweet potato and butternut soup I made over Christmas out for lunch tomorrow. I’ll make up a batch of tuna pasta with spring onions, celery, sweetcorn and peppers for the rest of the week for me, and DP has been and got rolls, ham etc for him - there is still a lot of cheese in this house.

Mango salsa is one of my favourite things! I just do:
finely chopped red onion
red pepper
red chilli
mango
lime juice
coriander

I could eat it by the bucket full.

I love mango salsa and haven't made it for ages - my recipe is identical to RemusLupin's

My plan for this week is:

Today: Veg soup and scrambled egg roll
Tuesday: Veg soup, cheese and biscuits
Wednesday: Chicken escalope, sauteed potatoes, braised peaks and leeks
Thursday: Baked potato with veggie chilli
Friday: Mum & Dad's for dinner
Saturday: At a gig - will grab some food while out
Sunday: Jambalya

Still all out of routine at the moment and so much going on with work so it's a bit haphazard.

Monday: Pad Thai
Tuesday: Chicken & Bacon Pie (request from DD)
Wednesday: Crispy sea bass with veggies
Thursday: Baked potatoes (probably with tuna, cheese, jalapenos, hot sauce)
Friday: Freezer raid (we have so much party food left, so a beige buffet is on its way!)
