Anyone else starting to think about getting their arses back in gear?!
Mine for the next week
Tomorrow: baked Camembert with nice bread (not quite over Christmas yet!)
Saturday: Thai green veggie curry
Sunday: NYE - will be sitting in with a dog terrified of fire works, might just order a pizza
Monday: Tuscan bean stew and sourdough
Tuesday: west African peanut stew
Wednesday: some sort of pie with all the leftover veg
Thursday: gochujang tofu

Monday: Salmon, greens stir fry, noodles
Tuesday: Roast lamb. I want the left overs but have time to cook so might do roast potatoes but probably just a bunch of regular steamed veg as sides
Wed: Left over roast lamb, flatbreads, hummus, salad, grilled aubergines
Thurs: jacket potatoes with tuna and salad
Friday: Spaghetti and meatballs
Sat: Chicken tray bake
Sun: Pepper and chickpea curry

Need to get on meal planning for this week but have some work travel which always discombobulates me. So far..

Sunday: We had roast lamb and all the trimmings
Monday: Chicken and bacon caesar salad
Tuesday: Freezer raid for the family

Actually feeling somewhat inspired this week.

Tomorrow: caprese paninis
Saturday: mushroom and lentil bolognese
Sunday: loaded nacho fries
Monday: Chana masala
Tuesday: jerk tofu with rice and peas
Wednesday: white bean stew and sourdough
Thursday: Thai noodle soup

Ooh, we haven't done a Thai noodle soup for a while and I have some tofu in the cupboard that I've been thinking we must eat! Thanks for that. Adding it to my mental "for next week" list!

Sunday - Spag bol
Monday - ham, egg and chips
Tuesday - Soup (courgette bean and pesto) and desert - specifically...pancakes!!!
Wednesday - baked spud & egg mayo
Thursday - Pasta creamy pesto and mushrooms
Friday - chilli bean enchiladas
Saturday - BBQ mixed grill and salad at parents house
Sunday - haggis, neeps and tatties (haggis been in freezer since before Burns night due to having to travel to ILs)

We're out/away a lot in the next week, but I do want to try to fit in cooking a white bean chilli (never had a white one before and like the idea of butter beans cooked in beer) and maybe a vegetable lasagne, as I don't usually get time to do the latter in a normal working week.

I think DP has some work dinner things next week so this might change, but provisionally we’ll do:

M - chicken satay curry with rice
T - spicy sausage tortellini with mascarpone sauce and garlic bread
W - chilli with rice
T - chilli and cheese jacket potatoes with salad
F - brinner - full English
S - some sort of risotto, maybe chorizo and red pepper, or pea and pancetta
Sun - going to chat up DP to do a roast I think. We share the cooking pretty equally (and also have lazy days that to say we “cook” is a stretch) but a roast is 100% his domain.

Hello do you use a recipe for the chorizo and red pepper risotto? Would love to try that- I might make it up but not sure it would be great 😀

I seem to be on track to finally sorting my weekly shop and meal plans for weekends. On that basis:

Sunday: Meatballs with spaghetti
M: Pancetta and leek tart, with salad
T: Thai noodle soup, tofu.
W: Lamb and aubergine rogan josh with rice hing from freezer if necessary. The other half will have somet
Fr: Tuna and fried rice
Sat: Paella

Saturday: pasta with sundried tomtato pesto (homemade)
Sunday: sweet potato satay curry
Monday: dahl and naan
Tuesday: teriyaki noodle stirfry
Wednesday: Carrot and corriander soup and sourdough
Thursday: chilli

All gone to pot this week with half term, overtime, a forgotten about birthday party!
The kids have fed themselves frozen left over meals from the freezer for dinner and we've had tinned soup and butties for tea most of the week.
Hoping to get back in track for the weekend.

Tonight - Chinese takeaway
Friday - Smoked salmon risotto
Saturday - Fry up Bruch, freezer/easy tea (a rare Sat avo we're all home together)
Sunday - Roast Lamb
Monday - Boy1's birthday tea choice, probably chicken nuggets 😂
Tuesday - Soup and Pud night - Easy Lentil soup and Key Lime Pie.
Weds - Boy2 cooking, not sure yet.
Thursday - Left over Lamb kebabs with salad and pomegranate couscous and the lovely mango salsa that was suggested in here, that's been a big hit!

The last week has born little resemblance to my meal plan. Sigh. Half term has disrupted us I guess.

So, trying again. Order to be decided and I might edit it slightly as feels a bit pork/beef heavy but:

Stuffed peppers. With couscous but probable need something on the side as well - I guess some kind of potato? Or maybe a fried rice?
Bavette steak, salsa verde/green sauce, with wedges and tomato salad.

Asian-style pork mince and veggie stir fry with noodles
Paella
Chicken tray bake, new potatoes, yorkshire, veggies
Ribs, onions, corn, fries/wedges
Creamy smoked salmon and leek pasta.

We've just had half term and have eaten out a lot, so next week needs to be healthy-ish and cheap.

Veggie lasagne (I froze one last time I cooked one) with salad

Spinach and paneer curry

Quiche (homemade - I put a layer of caramelised onion at the bottom, then grated cheese on top) and salad

Pasta with a spicy tomato/olive/caper sauce

Veggie shepherds pie

  • salmon or tofu steaks, broccoli and chips
  • chana masala, Bombay potatoes and rice
  • thai noodle soup with tofu
  • chorizo, white bean and cabbage stew

Wednesday and Thursday: lentil soup with cheese and onion "sausage rolls"
Friday: chilli bean enchiladas
Saturday: jambalaya
Sunday: Thai spiced roast chicken, roast potatoes and veg.

Just about to go shopping, need to get back to some normal meals after a fairly random selection of half term meals.

Plan for the week is:

  • One pot Thai salmon
  • Pea, tomato and prawn curry and rice
  • Lasagne and salad (probably not home made as it's sport club night)
  • Ginger, sesame and prawn stir fry
  • Kale pasta
  • Veggie sausage casserole and mash/veg

I'd love to take the credit but no, these were picked up at the farmers market.

That said, I made a ridiculous amount of mash with tonight's dinner so am tempted to give these a try with the leftovers.

I think they’d be easy - fried onions or leeks plus mash and cheese. I’m too lazy to make mash though, but good idea to cook extra when doing it anyway.
