Usually do my meal planning on a Friday and starting to think ahead just now. I have two whole luxurious days in the house alone next week which means I can cook things that I love but DH won't eat.
Definitely going with salmon, which he hates and won't even be around me when I am eating it. I have two fillets in the freezer (also helps with a current plan to thin out our currently stuffed freezer). I'm torn though on the way to prepare these.
My heart wants something Asian-inspired - thick noodles coated in a rich and gragent dressing with soy, peanut butter, chilli etc. I also really fancy a salmon kedgeree.
Problem is that I really should be eating more heathily. I've recently changed jobs from one which was almost entirely home-based, to one which is not only office based but extremely busy with actual lunch breaks being a rarity. This means I'm pretty much eating sandwiches every day - can be eaten with hands, on the go, whereas I previously always tried to keep lunches low-carb and salad based. Our main meals are often carby and I'd be on a losing battle to change this so I feel better in myself if I limit bread, pasta, rice etc to once per day. Also no chance of making different things for myself - I don't have the willpower for that.
So that's making me think I should take the opportunity to have my salmon but do the sensible thing and forgo the noodles and rice. Maybe with roast fennel and tomatoes or a citrussy, herby quinoa salad?
It's a head vs heart thing - I'm salivating over the prospect of those noodles... Any other thoughts welcome while I start to plan the shopping list.
