can we have a thread where we recommend recipes that we often re-visit?

You don't have to go to the trouble of copying and pasting or describing it all, but just recommend the recipe and the book and why it works for you/your family? Everyone else can google the links.

As an example, for me it would be the minestrone from Nigella's How To Eat. I've made it so often now that I don't really need to look at the book, but I love it because it is quirky (no garlic, no tomatoes - both of which I love but this recipe just totally works without either) and one way to get the children to eat dark greens. And also because it is lush and keeps well and can be a lunch for friends, or a proper main course dinner for family.

I want to expand my repertoire of fail-safe day to day stuff like this! Anyone want to contribute?

I love Jools' pasta too. Fennel seeds are absolutely key though!

I make this chicken and lentil dish quite a bit. I use puy lentils which don't need to be soaked/pre-cooked and I chuck in chopped carrots so the DC eat more veg. Takes 10mins to prep then bung in the oven.

Tomato and thyme cod ( or any white fish).
Olive oil, fry onions, then tinned tomatoes, thyme, 1 heaped tsp sugar, 2 tbsp soy sauce, simmer 5 mins, add fish simmer till cooked, done. Serve with rice/ potatoes.

That Guardian moussaka mentioned before is delicious. I cut down slightly on the cinnamon though and use veggie mince. The bechamel is divine.

I made Jo tomato mozzarella pasta suggests above tonight - purely because I had the ingredients and not much else. Very easy. Looks a longish recipe timewise but you do most of it together
Eg, heat oven , boil pasta, fry onions, deskin tomatoes. Very tasty. Thanks poster who posted. Thanks op too.

We have this at least every other week. Once you've made it a few times you don't need to measure it anymore as it's quite forgiving. And as long as you have the meat in, the rest is cupboard ingredients.

60 g plain flour
1 pinch salt
1 pinch black pepper, freshly ground
4 chicken breasts (I use the mini fillets) or pork steaks
60 g butter
2 tbsp olive oil
60 ml dry white wine
250 ml Kallo vegetable stock cube
2 tbsp flat-leaf parsley, chopped (I use the frozen parsley)
1 lime, cut into wedges, to serve (I don't use this)

Preheat the oven to its lowest setting.
Season the flour to taste with salt and pepper. Put the chicken/ pork between 2 sheets of greaseproof paper and pound them with a rolling pin until they are very thin. Coat both sides of the escalopes with the seasoned flour, then shake off the excess, and set aside.
Melt two–thirds of the butter with the oil in a large frying pan over a medium heat. Add 2 escalopes and fry for 1–2 minutes on each side, or until golden, pressing down firmly with a spatula to keep the meat as flat as possible. Transfer the escalopes to a plate and keep warm in the oven. Fry the second batch, then remove from the pan and keep warm.
Add the wine to the pan, increase the heat and bubble for 1 minute. Add the stock and the juices from the plate with the escalopes, and continue bubbling until all the liquid is reduced by half. Stir in the parsley, the remaining butter, and season to taste with salt and pepper.
Place the escalopes on serving plates and spoon over the pan juices. Serve at once with lime wedges for squeezing over.

I serve with sautéed cubed potatoes and green veg. The sauce is delicious so even if you use less meat, keep the sauce quantities the same.

One of our family favourite recipes , using leftover bits of cooked chicken , or gammon. Sorry its not a link, but so easy. Feeds 4 easily, just up the veg if not much meat. Takes about 10 minutes to prepare , 30 minutes all together to cook.

dice a carrot and onion small - fry gently/sweat in a good 50-75 gm of butter or ghee until the carrot is nearly soft - about 10 minutes. Stir in a big dessertspoon flour,getting it to soak up the butter to a make a thick paste, then gradually add in milk to make a smooth thickish white sauce. Season with salt pepper and herbs , garlic , a bit of crumbled stock cube ( i tend to use dried mixed herbs) . Simmer very gently, preferably with a lid on, stirring now and then for about 5 minutes Add the bits of meat ,cubed or shredded, frozen peas and sweetcorn ,( whatever you have )- adjust the sauce so still thick but runny. Check seasoning. Keep a simmer until sure the meat is piping hot . Serve with rice/pasta/couscous

Chicken with taleggio and crispy coconut chicken have been added to the menu this week.

Making a note of the chicken cakes and cider sausages for next week.

DH is a chef but doesn't cook at home and can be a bit Hmm about some of my meals! Tbh my attitude generally is that if he isn't cooking he can put up or shut up but even I will admit my repertoire has got a bit boring lately and am really looking forward to trying some new recipes.

OK, this isn't out of a book. I made it up myself so it's not exactly Cordon Bleu but it's quick and simple and delicious. I throw a tin of Ratatouille into a shallow ovenproof dish and lay chicken breasts on top of it that I have stuffed with Boursin (about 1/3 of a pack per breast) and wrapped in Pancetta. Cook for about 30mins at 180. Some of the Boursin leaks out but that's a good thing as it mixes with the Ratatouille and makes it creamy. It's surprisingly yummy for such a simple recipe. If you want to go to the trouble of making your own Ratatouille and your own version of Boursin, by my guest but I really don't think it's necessary.

Have bookmarked at least 10 of these recipes - have been in such a cooking rut lately, so thank you all!

A few of mine:

Nigella's shortcut sausage meatballs and spaghetti (although I don't use Italian sausage, as I find the meat a bit rubbery - a good quality herby sausage or caramelised red onion sausage works well)

Jamie's Veggie Chilli - uses roast sweet potato, really lovely, even better the next day.

Crispy chilli chicken strips BBC Good Food recipe - if you ever fancy the kind of crispy chilli chicken you get at the Chinese takeaway Grin

*Red Lentil Curry - richer and more flavoursome than any other recipe I've tried.

This is my go-to quick pasta (no link because I made it up):

Aldi German meatballs
Aldi spicy pepper pasta sauce
Pasta
Veg of choice - I use onion, garlic, mushrooms and courgettes for speed

While the pasta cooks, fry off the veg and quartered meatballs. Add sauce and heat.

Already planning to use some of the other recipes linked on more leisurely days.
