It sounds odd but I love grated carrot, very finely cut red cabbage (both raw) with a hot topping - usually Mexican beans & sour cream. Yum!
Any veg steamed, I use a steamer in a huge pan, carrots at the bottom, courgettes next, then broccoli, when they're done massive handfuls of spinach/bok choy/anything that wilts! Second pan, massive amounts of mushrooms & broccoli stem sliced & cooked in a bit of butter.
Double cream, grated cheese, black pepper & mustard powder.
Tip out any left over steaming water, combine all three - try not to eat it all out of the pan before anyone else gets a look in! Any left overs reheat amazingly well and if I'm on my own I can just keep adding a fresh ingredient each night (such as a red pepper) and it lasts a few nights! I hate cooking, so it's perfect...
I cook lasagne in loads of different ways... Tomato, green, root, mushroom...they're all really different.
