Any interesting veggie meals?

Looking to expand my veggie menu ability! So looking for veggie meals that don't use a meat substitute, with fairly 'normal' / cheaper veg. Any and all ideas/ recipes welcome! :)

Pixie - Its the Prince George on Trafalgar St - lovely place.

Go shopping in the maze of Laines then go to pub and scoff decent veggie food with pint of cider.
Wish I was in Brighton now.

Marking for inspiration. Im going to try going veggie. In also on slimming world and i dont eat much cheese or pastry as it just disagrees with me.

I go to Brighton about 5 times a year (family) and we always eat there.
Great for kids, decent cider on tap.
Where I live there are NO vegetarian restaurants for about 20 miles, and the decent food pubs seem to think one veggie option and no vegan dishes is perfectly ok....so I really make the most of it greedy Grin
If only they had a loyalty scheme......

I made his pea and mint risotto the other day with crème fraiche. Delicious

I'm from and area of Essex where fish is considered a vegetable originally, so moving to Brighton was like a kid in a candy shop scenario Grin

You can get veggie haggis from Waitrose, it's about £3 and delicious.

Can I dive in with a question? I usually take a salad to work for lunch, with pasta or potatoes and I used to put sliced up ham in it. I don't like quorn, well I do but it gives me allergies! Any suggestions as to what to replace the ham with?

Too old - there's more than just Quorn "ham." Try Holland and Barrett. Also: halloumi, grated chedder, veggie bacon if you can eat it?

I press it, then dip slices in oil, soy sauce and five spice powder and roast it until crunchy. Lovely - and we are having it for dinner tonight, in a Thai curry.

I'm just defrosting a ton of minestrone soup I made.
Onions, leeks, garlic, carrots, parsnips, potatoes, all sauted with Italian herbs. Add wine, Tomato purée, tin of chopped toms, veggie stock and water and leave for an hour. Add cooked pasta (or throw in raw before leaving for an hour) and Parmesan (loads) when it's done. Not mushy but so the veg has a bite and the pasta is soft. Mines got ham in but easy enough to leave out.

Ooh haggis hash: proper veggie haggis mixed with cooked potatoes, fried onions and baked in the oven for a bit, served with an entire bottle of brown sauce.

Toooldforglitter: Have you tried different types? Smoked tofu is good in carbonara, for example, (and has a flavour already) and 'soy cake' (found in Chinese supermarkets) tends to be slightly spicy and has a more interesting texture.

Has anyone got a cheap curry recipe using tinned chickpeas?
Also, simple christmas main recipes that are easy to cook single portions of.
