Any interesting veggie meals?

Looking to expand my veggie menu ability! So looking for veggie meals that don't use a meat substitute, with fairly 'normal' / cheaper veg. Any and all ideas/ recipes welcome! :)

Do you like mushrooms? Fry some, with some onion and garlic. Part bake a sheet of puff pastry which you've pricked with a fork. Smear garlic and herb cream cheese over the part baked pastry. Shove the oniony mushrooms on top and put lumps of camembert on top of them. Bake until all gooey and oozy.

Pasta with mushrooms, pesto & creme fraiche - lots of Parmesan when you're serving it too.

Halloumi & pepper kebabs, served with pitta, houmous & chilli sauce.

Leek & butter bean gratin.

Puff pastry topped with roasted cherry tomatoes, feta & pine nuts.

Large mushrooms filled with pesto & mozzarella - bake & serve on a bed of rocket with balsamic dressing.

In summer, tomato tart: crumble feta, add a little olive oil and lemon zest and spread over a puff pastry sheet, then get loads of tomatoes, thinly slice then lay on top of the feta so it looks all pretty. Drizzle with olive oil and some herbs, roast.

Veggie mushroom 'burgers'. Roast big field mushrooms with some garlic, butter, herbs then serve on rolls with some mustard and salad. So good that one and dead easy.

Beanburgers

Roast veg tart (readymade puff pastry spread with pesto, topped with roast veg, cheese, olives and capers if you like)

Pasta with broccoli and cashews - fry some peeled, chopped broccoli for about 10mins, chuck in some chopped red onion and fry till soft, then mix with cooked pasta shapes and toasted cashews, dress with a mix of mayo/white wine vinegar/mustard.

Veg risotto

Mixed bean chilli

Pies and tarts are always good to use up whatever veg you have. I made a nice tart the other day with roasted squash and beetroot with greek yoghurt/egg. Another good pie is potato/spinach/leek/cheese.
I tend to do them with a cheese shortcrust pastry. Very easy and cheap.

I'm currently making pearl barley and bertolli been one pot. It is on the ocado website in the recipe section. It is v easy and delicious

Cauliflower cheese and spinach pasta bake. I believe I got the recipe from the bbc I'm sure it'll come up if you Google it . It was lovely!

Another v easy pie =

fry a load of mushrooms and onions then add a massive slug of red wine or port and cook down. Add some crumbled stilton, shove into pie dish and top with puff pastry. Bake.

And another:
cook some leeks and onions. Chop a load of baby spinach. Mash some feta. Lots of black pepper. Cover half a sheet of puff pastry with your mixture, fold over and primp the edges. Stab it/slash it a few times and bake.

Sweet potato curry

Chop and fry an onion (poss with a bit of cumin, ginger and chilli depending on audience). chop up and add a sweet potato and/or butternut squash. Pour on a tin of coconut milk and simmer. Stir in some curry paste. Add any/ all of - frozen peas, sweet corn (tinned or mini cobs), red pepper, chopped green beans, cashews... And cook til soft.

My FiL will eat this and not notice there's no meat.

Broccoli pasta: I lived on this when I was a student (prob just outed myself Wink). Haven't eaten it since I first did weight watchers and pointed it up. It is not calorie free. But totally lovely - especially if you heat a bowlful up in the micro post-pub....

Cook pasta
4/5 mins before the end, throw a good amount of chopped broccoli in with the pasta.
Drain well
Return to the hot pan with a good wedge of butter and tons of grated cheese. Season liberally with black pepper (I used to buy the sort of coarse ground pepper especially for this purpose, if you grind it yourself it's too strong).

Mix the lot together over a gentle heat till all melted. Eat. Grow nice comfy spare tyre...

I'm a vegetarian but still marking my place Grin

DP and I eat a lot of risotto, love the stuff. Four cheese is a favourite Blush but I love leek and chestnut or squash and corn with mozzarella.

We have casseroles often. Curry is good too. I love lentil cottage pies but cannot make them for the life of me!

I used to make an awesome roasted sweet vegetable pie. I'd roast up root veggies with a little maple syrup, make a white sauce with emmental, put both in a pastry case (with more emmental in the pastry) and throw it in the oven. I'm gluten free now and struggling to find a pastry recipe that works for it these days :(

Mac and cheese it always a winner for me too.

All brilliant recipes.... almost all of my favourites have already been covered,
but here's an easy one that you can easily adjust to suit meat lovers, veggies and vegans! Nice and basic- proper pub grub!
Veggie fish and chips -
Beer battered Halloumi (replace with good quality tofu for vegans or fish if preferred)

Mix of plain and cornflour (I do 65g plain to about 20g cornflour- this does one block of halloumi) pinch salt and a really good ale or fizzy cider - my favourite is Theakstons Old Peculiar, gives it a lovely flavour and colour.

I serve with sweet potato wedges and minty peas, with lemon to drizzle.

So many lovely recipes on here.

I use a sautee pan about 2 inch deep in oil then cut the halloumi into half inch thick slices. Not as scary as proper deep fat frying.

Pixie I stole the idea from a lovely veggie pub in Brighton!!

It is truly lovely, the beer you use makes it though, cheap cans don't cut it, needs to be a good cider for a lighter batter or an ale for a darker one.

My last tip - sorry for being a bore, but it took a few tries to get it perfect so I want to share my knowledge before I get cholesterol poisoning

dip the halloumi into cornflour before battering, helps the batter stick better.
Fry straight after battering, shove on some kitchen roll, squeeze lemon and scoff!

Which pub? I used to have the deep fried halloumi at the pub in Woodingdean, haven't been in there for ages now. It's not veggie by any means though!

It's the only plae I've had anything in batter and deep fried though, been a veggie since I was 5 and before moving to Brighton had never truly experienced veggie food!

I'm currently loving spicy sweet potato mash as a side.

Or as a base for 'cheese' (I'm a vegan), rocket and tomato sauce. I am not sure what I'd call it as a 'thing'. A sweet potato pizza?

Darksideofthemoon88 is right, it is not strictly Parmesan if it's not made with rennet so this what I use for Parmesan www.tesco.com/groceries/product/details/?id=276091819
